Entering through the stained glass window front doors, I discover a pleasant tiled entryway. I move to my right and enter the family room. The feeling of a ski cabin is provided by the beautiful natural woodwork on the trim, oor and most of the ceilings. A gas replace is the centerpiece of the room. The built-in cabinets are the same natural wood. I notice that the TV, usually so dominate, blends in well with the rest of the room. The kitchen is a chef’s delight; besides generous counter space, there is a clever work island on wheels, allowing it to be positioned anywhere it’s needed. Driving up Greer Hill Road, I pass by a chairlift at the HoliMont ski area, and as I round the corner I see at the end of the road is another HoliMont chairlift. The houses in this neighborhood seem surrounded by the ski area. This makes me consider just how completely the two ski areas, HoliMont and Holiday Valley, are integrated into our community. So, it

only stands to reason that a town with two world-class ski areas should have some equally world-class ski cabins. Did I say ski cabins? Well, ski house is more like it, and the house at 41 Greer Hill takes the concept of a ski cabin to a whole new level. Approaching from the outside, the fi rst thing I notice is the large, steeply pitched green roof. A brick façade along the front of the house pulls the eye away from the brown wood garage.

But the exterior of the house belies its actual size. There is a lower level that descends down the hillside in back, adding a third fl oor to what appears to be a two-story house. Entering through the stained glass window front doors, I discover a pleasant tiled entryway. I move to my right and enter the family room. We’ve all had reasons to exhale at the close of 2009. Hardly a news story comes on that does not remind us of a fl ogging that few of us have escaped, but we look ahead to what we all hope are new trends that refl ect positive changes - even in the cruise world. In a nutshell (or should we say clam shell?) 2009 was the year of the deal. Cruise lines scrambled to fi ll cabins and rather than the usual early part of the year offering lower prices, these deals continued well into the spring with lowest prices ever seen for itineraries to Alaska and Mexico, although we must credit H1N1 for part of Mexico’s availability. In addition, the luxury market offered freebies like airfare, onboard credits, excursions, and gratuities. In 2010, the most obvious

trend will be pricing. Despite the dozen new ships that came on the market last year during an extremely diffi cult fi nancial year, the cruise industry actually sailed at over 100% capacity. What that means is that every room was fi lled with at least 2 people or more. Records show that 13.01 million people took a cruise in 2008, 13.44 million sailed in 2009, and 14.3 million are projected to sail in 2010. Ships were kept full by discounting prices, but with the results of last year and projections for this year, prices are already going up, partly due to another trend. Instead of the average booking window of 4 months prior to departure, it

is already up to 5 months out. When ships fi ll up early, prices will go up. Last minute deals and/or availability may become sparse. Best advice: book 6 months to a year ahead and if prices go down, cruise lines will honor it. Another trend (which will be long term) is the attractions and programs onboard. Because of the huge increase in family groups that include parents, kids, and grandchildren, the average age of cruisers has dropped from 57 to 47 years old in only the last 10 years. What’s bringing these families onboard? Fabulous kids’ and teens’ programs and water parks galore. Kids of all ages and kids at heart can hardly resist onboard the water slide, lazy river, squirt park, “beach on board,” surfi ng, scuba lessons, and adult only zones. Coming in Jan. 2011, Disney’s new Dream will have a 765 ft. long water coaster that will wrap around the perimeter of the ship’s top deck - 150 ft. above water. While some of the group is having fun getting wet, others are enjoying spa-oriented whirlpools, Ralph Lauren decorated suites, enrichment seminars, professional cooking seminars, wine tastings, stargazing, art & history lectures, and even glass blowing demos. Entertainment onboard is taking a turn after too many “Salutes to Broadway” shows. The Oasis of the Seas features diving and aqua shows in the innovative aqua theatre and also a complete production of “Hairspray.” The soon-to-be-launched Norwegian Epic will

feature Blue Man Group and Second City improv shows. Another long overdue trend offered on Norwegian Epic that will surely catch on is studio cabins designed for single travelers. These cabins open to a lounge area where solo travelers can mingle. In the past, single travelers had to pay as much as twice the fare or be assigned to an unknown roommate. While theme cruises such as Elvis, bikers, and Star Trek will always be popular, look for new theme cruises emerging - such as Beatles, Barenaked Ladies, and the hottest focus being a “Twilight” cruise in August 2010 that capitulates on the current teen obsession with the vampire books and movies. The fun will start after the sun goes down on this cruise! Cruises like this will sell out far in advance - if not instantly. The 2009 New Kids On The Block cruise sold out in minutes. The tipping policy has been controversial for quite some time. Does pre-paying tips discourage personal service? Possibly, but the convenience of not dolling out tips at the end of the cruise is huge. In the unusual event of truly poor service, the automatic tip can be adjusted accordingly. There are valid reasons why the trend of auto-tipping is growing. Some guests are not aware, or in some cases ignore the fact that cruise service staff depends solely on these tips for their income. Also, the European market is growing, but there is confusion by these guests due to their custom of not tipping at all. High-end cruise lines are incorporating the “no-tipping” as part of their all inclusive policies. It is easy to see that the trends we will be seeing will only make the cruise experience even more enjoyable. So, if you’re here in town reading this on Valentine’s Day Weekend, it’s too late to be on a cruise sailing this weekend, but it’s a great time to start planning a romantic cruise get-away for next year … before the prices go up! Maple producers across Chautauqua County are getting ready for this year’s edition of the Maple Weekend. The event actually takes place on the two consecutive weekends of March 20-21 and March 27-28. The goal is to showcase real maple syrup and how it is made, according to the New York State Maple Producers Association. Local producers intend to do just that.

Among those anticipating the maple season is George Gustafson of Maple Country USA in Falconer. He’s been involved with the Maple Weekend for about ten years. The weekend originated in Wyoming County and grew throughout Western New York and the rest of the state. Gustafson believes the original idea came from Maine, and is

now being copied in Vermont. Gustafson believes having two weekends instead of one helps producers cope with uncertain weather, especially in the Adirondacks. He offers visitors demonstrations on the making of maple products, boiling maple syrup, or showing how byproducts like maple sugar and cream are made. “We personally do all of that,” and take people for horse-drawn wagon rides through the sugar bush. And visitors won’t go away hungry. “We make our own pancake mix, and we make a big deal out of our pancakes.” The event seems to have grown every year. “All of this costs a lot of money,” and at fi rst Gustafson expected to just break even. “When we fi rst did this, it was more promotional (of maple) than a money maker.” The goal remains the same, but more people have become interested. “Last year we had

about six hundred people, which is about all we can handle.” Larger maple producers may get thousands of visitors. Over in Westfi eld at Vinewood Acres Sugar Shack, Gail Black offers a mouth-watering breakfast during Maple Weekend. They serve pancakes from March until the end of October, on Sundays from 9am-2pm. “They’re as big as hub caps on your car.” They’ll also serve Belgian waffl es, French toast, bacon, sausage, and eggs “any style.” They also make 27 kinds of fruit syrups from the fruit that grows on their farm, which Black believes are more popular than her maple syrup because they are unique and unusual. “We greet about twenty thousand people a year.” And they are booked full on Maple Weekend. Black and Gustafson agree that making maple products is diffi cult work. Black says they tap about 2,000 trees and make about 400-500 gallons of maple syrup. “It’s not huge, and we are all tubing,” using state-of-the-art equipment. “We still use the old fashioned process with time and temperature, not reverse osmosis.” Douglas and Linda Fairbanks at Forest Maple in Forestville are also gearing up for Maple Weekend. Visitors can expect to see three or four draft horse teams giving rides at no charge. They’re also trying to get a 4-H group to sell hot dogs and hamburgers to raise some money for themselves. A few steps bring me into the living room, and here the charm of the house really revels itself. A second stone fi replace is the focal point here as well, but my eye is drawn up through the open ceiling to the view of the second story. The wood balustrade and trim around the fi replace echo the rustic charm that suffuses the house. Down the hallway there is a separate entrance from the two-car garage with a laundry room, half bath and a closet for storing all the ski gear. A climb up the steps brings me to the second story. First I discover the master bedroom; it’s a spacious room with closets aplenty: one walk-in, another large closet and a separate sweater closet. The master bath, while not exactly huge, is decorated in warm natural tiles. Another bedroom is down the hallway and next to a full bath. Just down from here is a bedroom that seems almost out of a James Bond movie. The vaulted ceiling rises to a high peak over the center of the room while two double windows let in a generous amount of sunlight. Double built-in drawers and closets fl ank both sides of a study alcove, making this the perfect teenage boy’s room. The stairway to the third fl oor brings me to two partially fi nished rooms that could serve as a home offi ce or project room. Taking the steps down to the basement, the size of this house really becomes clear. There is a huge game room on the lowest level rivaled only by the large bedroom and full bath. A good sized storage area is down here as well, and part of it could be used for a workshop. As I take my leave of the house I consider that not only does it make the perfect and spectacular ski cabin, but would also make a world-class full-time home for an active family. After all, it doesn’t snow all year.

The kitchen is a chef’s delight; besides generous counter space, there is a clever work island on wheels, allowing it to be positioned anywhere it’s needed. The handsome cabinets in the kitchen are cherry and slightly darker than the rest of the wood in the house. Double ovens, a double sink, and a gas-fi red range make this an effi cient workspace.

As a child growing up and even to this day, I was pretty predictable. If you happened to come into the kitchen in the middle of the night and found me standing at the counter, motionless saying nothing, just chewing and making weird noises, odds were that I was wolfi ng down a huge slice of banana bread. I loved it, and I still do. Banana bread. The fi rst was

always lovely, the second and third - well, by that time I was speechless, each bite a surge of bliss. Whether you’re munching down on a classic loaf or something a bit fancier like infused bread with luscious fruits, rich dark chocolate and toasted walnuts, you’re sure to be satisfi ed, as it never disappoints. With an impeccable down-to-earth fl avor, and a texture that keeps you going in for bite after bite, this dessert bread can fi ll you up and keep you coming back for more.
