Happy birthday, America! And a warm, Fourth of July welcome to all our friends, locals and visitors alike.

There’s no place on this green earth I would rather be than right here and right now. You could just feel the excitement building as our little village prepared itself this past week for three days of red, white and blue festivities and unbelievable sensory delights. Food, music, arts and crafts, parades, fireworks – you name it, we got it! It all seems so appropriate to me, as we are celebrating “life, liberty and the pursuit of happiness” – this is what our nation is all about, isn’t it? Although the majority of Americans (with a sprinkling of our northerly cousins!)

associate July 4th with the independence of the United States from Great Britain, for many it also represents quality time with loved ones, cookouts, summer sports and vacations. While fireworks explode against the distant night sky, and the bratwursts sizzle on the grill, take a moment to appreciate all things good in your life. I’ve said it before and I’ll say it again – there’s no better place to be than right here, right now! So, dear readers, keep your fingers crossed for great weather, great food, and great fun this weekend. Happy Independence Day! Until next week… JZ

Inside Business TrackPremier Lakewood Dining at the Scallion Bistro

BY ANJANETTE NICOLAZZO

With menu creations from executive chef David Bollman unlike those of any other in the locale, the Scallion Bistro continues to be one of the premier fi ne dining establishments in Lakewood, New York. According to Dining Room Manager and proprietor’s son Ryan Thayer, “We offer a comfortable atmosphere, friendly servers, very unique products and a highly trained chef, which is rare for the area.” The Scallion Bistro, which has only been open now for approximately 3 years on July 10, 2010, seats about 90 people comfortably. They also offer a full-service bar with a lounge that offers a number of tables for two. “Everyone working in the front of the house is local, and is very knowledgeable about the area. For the most part, we have had the same staff since day one, which ensures consistency. They believe in what we’re doing and help us succeed and move forward,” says Thayer. Executive Chef David Bollman began his career in the food and beverage industry at the age of 14 – washing dishes. He has over 17 years of experience cooking, and has been professionally cooking since 1998. “The most popular item on the menu may very well be the Bar Harbor, which are pan-roasted sea scallops over lobster risotto with

a lime scallion vinaigrette,” says Bollman. Some of chef Bollman’s additional favorites is the Lobster and Artichoke Stuffed Chicken Breast, which is breaded, then pan fried and served with a pepper cream sauce over grilled asparagus. Their signature pasta includes the Pasta Laragosta, which is a garlic roasted lobster tail, chopped and sautéed with thin spaghetti and topped with a coral sauce. The lobster is coldwater lobster, making it superior in fl avor. Thayer’s favorite menu item is the Fox Chapel, which is a three-time grilled salmon fi let over ginger fruit salsa, topped with fried parsnips. “Our salmon is very high quality and not very fi shy, which makes this a

refreshing summer dish,” says Thayer. “When you come to the Scallion Bistro, you come to people who really care about you and care about the service they’re giving you. You’ll get a dining room experience you won’t get anywhere else in this area. We really try to guarantee you’ll have a wonderful evening,” says Bollman. The hours of operation at the Scallion Bistro are Tuesday through Thursday from 5 p.m. to 9 p.m., Friday and Saturday from 5 p.m. to 10 p.m., and closed Sunday and Monday. They are located at 60 Chataqua Avenue in Lakewood, NY. Reach them at 716-763-0051, or via internet at http://www.scallionbistro.com/Home_Page.php.

In the fall of 2009, Marian Aranyos was approached by several business people of Bemus Point to start up an art show in the park after having an absence of art displayed here for 10 years. Aranyos met with the village council in November 2009, and after listening to Aranyos’ request, Mayor Brian Dahlberg granted permission for artists to gather together in the Village Park for 2 weekends

in July and August. Regional artists were contacted from southwestern New York and northwestern PA. As word of the show got around, the anticipation of this new event actually coming to fruition stirred up the regional artists to prepare for this event. As a result, Jamestown watercolor artist Steve Surgeon gave the show the name, “A Stir of Artists” On these two weekends, July 17/18 and Aug 7/8, a fi ne artists’ show featuring over 20 artists from Western Pennsylvania and Southwestern NY will come together in the Village Park, Bemus Point, NY. The hours are Saturday and Sunday 11am to 6 pm rain or shine. Admission is free and parking is available along Lakeside Drive between the Hotel Lenhart and the Village Casino. Displays will be featured by New York artists Alex Flansburg, Rochester (clock sculpture and abstract) Barney Kuzara, Dunkirk (oil), Kristina Faulkner and Daniel Marchini (Mixed Media), Steve Surgeon and Barb Lissfelt (watercolor) all of Jamestown; John Muka, Westfi eld, (hand dug primitive wood fi red clay) and Pennsylvania artists Marian Aranyos, Warren; Jacque Hodges, Corry; and Dee Ellen Smith, Bradford (collage, paintings, watercolors); Dennis Galvin, Kane (wood and

liturgical furniture), Ed Hodges, Corry (pottery); Debbie Moyer, Warren (jewelry), and from Tidioute, Terri Stec (jewelry and silk scarves) and Karen Cortese (rustic art). On August 7 and 8, additional artists featured will include southwestern New York artists Suzette Puadano, Panama, (painting); Patrick DelMonte (wood art and vessels) and photographers Barbara DeMonte, Forestville, Butch Poole, Jerry Puadano, Panama, and Bill Smith, Cherry Creek; and northwestern Pennsylvania artists Patty Prechtl, Kane, (watercolor and acrylic), Linda Mason, Warren ( glass, fi ber, porcelain) and Betsy Wile, Kane (Jewelry). Art work will be for sale. There are still openings for exhibiting artists. Call (814) 726-2044 to still register. Since our last art shows, live music is now featured on the Floating Stage next to the Italian Fisherman. On Saturday July 17 at 7:30 P.M., a tribute to Frankie Valli and the Four Seasons will be featured along with a Bee Gees tribute on Sunday, July 18 from 2:30 to 5 P.M. On the second artists’ show weekend, Saturday, Aug. 7 an Elvis show at 7:30 P.M. and on Sunday, Aug 8, from Noon -5 P.M. an Irish Festival will converge on the Village. Come out and spend an afternoon meeting these talented artists and viewing their displays.

On these two weekends, July 17 & August 7, a fi ne artists’ show featuring over 20 art-ists from Western Pennsyl-vania and Southwestern NY will come together in the Vil-lage Park, Bemus Point, NY. Take a tour around the county this Fourth of July weekend; there’s something to do around every corner!

Pulitzer Prize winning, You Can’t Take It With You, a rollicking comedy about how a madcap family teaches a Wall Street tycoon what’s really important in life. Stuart Margolin will be making his sixth Chautauqua appearance in the show. “One of the unique things about Chautauqua is that often the professional actors take a supporting role in the play, and one of our conservatory actors will take the lead,” Maureen tells me. An example of this will be their production of Amadeus on July 22nd. Michael Stuhlbarg will be playing Antonio Salieri opposite one of the conservatory players as Mozart. The Chautauqua

Symphony Orchestra will virtually be another character in the play as they bring Mozart’s incredible music to life. “It’s an unusual year for the CTC, we are taking on an ambassadorial role.” Amadeus will be taken on the road as the fi rst Chautauqua production to perform away from the institution. On July 24 the show will be performed at Art Park with the Buffalo Philharmonic Orchestra providing the music. On August 13th Shakespeare’s dark classic Macbeth opens. Two of the company’s most seasoned actors will be playing the main roles. Brett Dalton, entering his third year at the Yale school of drama,

will be taking on the evil king. Megan Keller, in her third year at NYU’s Graduate Acting Program will be portraying his equally evil wife. Given the number of Shakespearian rolls on both actors’ resumes, their performances are sure to be memorable. Now in its 27th season, the Chautauqua Theater Company is the resident professional theater and Conservatory of the Chautauqua Institution. Internationally known actors, directors, designers and writers join 18 emerging artists drawn from the nation’s top training programs to form a unique company that produces a vibrant summer of work in the historic Bratton Theater.

all the boats. Reynolds says that many of the boat owners will be present to answer any questions spectators might have about boats, whether it is about owning a boat, the restoration process or acquiring an antique boat in general. There are also fun activities for the kids to enjoy, Reynolds points out. “There is a vendor coming to teach kids how to tie fl ies for fl y fi shing and I’m not sure about this year but there may be judging opportunities for kids to learn what’s important to look at when they are judging … and there is also a big play ground and swing set there in the park for kids.” Seeing these old boats also can bring back nostalgia for people who have memories with these types of boats. Most of the boats are ones that in their prime were used for commerce, recreation, racing, collectability or just to live on. The boat show also features

historical, antique, classic, runabouts, utilities, cruisers, non-powered boats and sailboats. These boats will be at the Village Casino and opened for public viewing; there is no admission fee. Another major part to the show is the judging. All boats will be judged by Twin Tier Chapter members or other chapter members who have experience judging. Each boat will be judged based on the type of boat, age, condition, rarity, restoration and remodeling. On Sunday morning, around 9:30 a.m., the Boat show will have a “Boat Parade,” which is for those who still have their boats in the docks on Sunday morning. Reynolds also points out that any members of the public who are still around could get a ride along the lake if they ask. However, if people would like to have a boat ride before Sunday, there will private boat rides available. Prices are dependent on

business. The Chautauqua Lake Twin Tier Chapter represents Southwestern N.Y. andNorthwestern P.A. and hasbeen in operation for the pastfour and a half years. INGREDIENTS:2 Qt water1 Tbs. sea salt2 c. broccoli fl orets½ lb. farfalle pasta 3 Tbs. extra virgin olive oil½ stick butter

5 garlic cloves (coarsely chopped)½ c. grated Parmesan cheese.

PREPARATION:On medium high heat, bring 2 quarts of water to a boil. Add salt together with broccoli fl orets. Cook for 2 minutes, then with a slotted ladle, transfer them to a platter. Immediately, add farfalle pasta to the boiling pot. Stir and cook for 8 minutes. Remove pot from the stove, and drain off 95% of the cooking water. Set aside. In a large non-stick frying pan, on medium heat, add

olive oil, butter and garlic. Stir and cook for 2 minutes. Then add the cooked farfalle with the remaining cooking water together with the precooked broccoli fl orets. Mix well and cook for another 2 minutes. Serve hot topped with fresh grated parmesan cheese. (Farfalle with Broccoli is also perfect for a summer picnic, served warm or cold.) Note: This recipe goes well with “My brother Alfredo’s sauce” shown on page 46 of my 2nd cookbook in the series Gino’s Natural Italian Cooking: Pasta
