WEDNESDAY, JANUARY 17, 2018 – 6:00PM – 8:00PM

Dishes from the Lost Continent An introduction to African cuisine. Fusion recipes from the lost continent. First-generation Canadian Chef Deji Oduwole will take you on a journey through Nigeria but with a Mediterranean twist. After trying variations of classics like peanut soup and gumbo, your taste buds will thank you! Learn how to make Jollof Rice with Oil-Poached Squid—a traditional African dish made with white rice, tomatoes, red peppers and other delicious ingredients. Then it’s Seafood Gumbo, which is traditionally known as a creole dish, but this recipe shows its African roots. Braised Leg of Lamb with Black-Eyed Peas and a Plantain Cake follow using traditional ingredients and Chef Deji’s family recipe. $30

Fifty Shades of Chocolate - DarkerIt’s time to reaffirm our love affair with all things chocolate, savoury and sweet. Come and join Fifty Shades of Chocolate creator Chef/Culinary Instructor John Bela for the second chapter of his chocolate trilogy, as chocolate is about to get heated again! This evening, Chef John’s objective is to demonstrate the versatility of dark chocolate as a culinary ingredient that provides a wonderfully rich depth of flavour. Your savoury journey will begin with a Dark Chocolate and

Exotic Mushroom Mille-feuille (layered puff pastry), and continue with Chef John’s signature temptation Mussels. The main entrée is a Black Pepper and Cocoa Nib–Encrusted Tenderloin with a Chocolate and Port Sauce, White Chocolate Mash and Asparagus with Cocoa Nibs and Shredded Prosciutto. We are all aware of the allure of chocolate as a sweet component. In this class, Chef Laura Boyd will teach you how to prep ahead to make a delicious Italian dinner. Chef Laura will demonstrate how to make an espresso chocolate mousse to enjoy at the end of class, but then she is putting you to work. You will make a Warm Mushroom and Arugula Salad, Sweet Potato Gnudi with crispy sage and pancetta, and fresh baked Focaccia. Mughlai CuisineIt is a style of cooking by the imperial kitchens of the Mughal Empire. The Mughal rulers had strongly influenced the regional cuisines of Kashmir and the Punjab. The tastes of Mughlai cuisine vary from extremely mild to spicy, and are often associated with a distinctive aroma and the taste of ground and whole spices. Join Sai Chelliah in this class featuring Paneer Tikka with a zesty Cilantro Walnut Chutney, Chicken Biryani with Cucumber Tomato Raita, and Shrimp Kebabs with Garlic Butter Naan. Badam Kheer (almond milk pudding with saffron, topped with crunchy almonds) will wrap up the evening. $30 Add wine/beer pairing for an additional $12.

Sleeman Brewery: Cooking with Beer (Interactive) From notorious beginnings to a legendary resurrection, the Sleeman family upholds five generations of brewing heritage. Sleeman Brewery, Guelph’s oldest and most Notorious Brewer is coming to the Loft. Sample their lineup of award winning brews while Damien Smith from the brewery prepares beer-infused food items. Try their Sleeman Railside Session Ale, Sleeman Original Draught and Sleeman Honey Brown, all while learning about the history of Guelph’s oldest brewer and how to incorporate beer into your cooking and meal preparation. Damien will be preparing Maple and Brown Sugar Beer Nuts, Bacon and Cheddar Rustic Beer Bread, and for dessert, decadent Beer Brownies. Cheers! $25

Start with a Salad of Roasted Asparagus Wrapped in Prosciutto with cocktail tomatoes, olives, buffalo mozzarella, roasted yellow peppers, garlic crostini and balsamic glaze. Next it’s a classic and rich Napa Valley Syrah Risotto with crisp pancetta and asiago cheese. Our main is wine-poached Chicken Stew with creamy supreme sauce on a crisp puff pastry shell, finished with fresh herbs. A platter of cheese, cured meats and other bite-sized appetizers from Longo’s will be offered to explore the interaction of food and wine. Surprising Salads From simple yet sophisticated to complex and crazy, these salads are delicious. Tonight you’ll watch as Chef Heather Johnson teaches you how to spice up your salads. Your pizza creations will include Potato Pizza with parmesan and fresh thyme, Fennel and Artichoke Pizza with spicy sausage and black olives, and Prosciutto and Arugula Pizza with buffalo mozzarella. You will also learn how to make a simple Side Salad, how to pair wine with each pizza and how to create the perfect Italian music playlist to keep the party going! Cooking with Tofu There are many kinds of tofu: silken, extra-firm, frozen and soft. Learn how to buy, store and use these types of tofu in easy-to-prepare, delicious, plant-based recipes. Join Natural Foods Chef and Cookbook Author Nettie Cronish for an Introduction to Organic Tofu Recipes. People have been eating organic soy foods for thousands of years. In this class, you’ll enjoy these delicious tofu recipes: Our dip will be made from firm tofu with spinach, garlic, fresh basil and tahini. It will be followed by the best Vegetarian Meatballs that use extra-firm tofu, fresh sage and Parmesan cheese, and can be baked or stir-fried. Have you ever considered cutting back on the amount of dairy you use in a recipe? Tofu will be used for half of the ricotta in a fresh noodle Lasagna recipe. For dessert, we will use soft tofu in a Peach Raspberry Tofu Coconut Baked Kugel (pudding). $30

Meals to Go from the Indian Kitchen Join Sai Chelliah for an evening of great food and fun. Tonight’s class will feature recipes that are quick and easy to make. The menu includes Egg Bhujia in whole wheat wraps, Juicy Cucumber and Tomato Salad folded in a Greek yogourt dressing, Chicken Tikka on a bun with sweet and chili sauce and yummy Vegetable Patties. French Tarts (Interactive) Learn how to make a variety of savoury and sweet tarts! This wonderful class begins with a Tomato and Prosciutto Tart, a delicious contrast of flavours on a crunchy puff pastry base. Chef Larissa will then teach you how to make a Leek Tart, a favourite in many Paris bistros. The savoury tarts will be followed by a decadent bittersweet Chocolate and Hazelnut Tartlet—a wonderful combination of chocolate, fragrant essence of orange, and crunchy, grilled hazelnuts. To finish this amazing class, you’ll make a Fresh Fig Tart with a red wine and fig sauce—it will surely become a favourite! $35
