the wines
“I like to think about the life of wine, how it is a living thing.
I like to think about what was going on in the year the grapes were growing. How the sun was shining,
if it rained. I like to think about all the people who tended and picked the grapes.
And if it’s an old wine, how many of them must be dead by now. I like how wine continues to evolve,
I like if I opened a bottle of wine today it would taste different than if I’d opened it on any other day,
because a bottle of wine is actually alive. And it is constantly evolving and gaining complexity,
that is until it peaks, like your ’61. And then it begins its steady inevitable decline.”
— Maya, from the movie “Sideways” (2004)

the reds
In the early 1990’s, the TV series 60 Minutes twice aired a report on the phenomenon known as
the French Paradox – the fact that the French have a lower rate
of heart disease than Americans, despite a diet that is higher in fat.
Since the one thing the American diet lacks, in comparison to the French diet, is red wine,
some researchers were looking for a link between the consumption of red wine and a decreased rate of heart disease.
Not surprisingly, in the year following this report, Americans increased their purchases of red wines by 39 percent.
Wine is fat free and contains no cholesterol!

The words ‘powerful, masculine and complex’ best describe Cabernet Sauvignon. Aromas of blackberry, blackcurrant, cassis, mint, warm spice, plum, eucalyptus, cedarwood and sometimes leather all fill the glass. It might be a bit of a bully, but the mighty Cabernet Sauvignon has staying power, a prize fighter – still, ‘king of the ring’. Pairs well with red meats, hearty
pasta, lamb, strong cheese and chocolate.

Nicknamed the ‘Heartbreak Grape’, Pinot Noir is like a temperamental teenager; stubborn and sensitive. Done right, it is a thing of beauty. It can be remarkably subtle, silky textured with layers of earth, mushroom, wild strawberries, raspberries and warm baked

Aah! Syrah aka Shiraz
The cool kid in town, Syrah travels in mufti as Shiraz and is Australia’s spicy, big-hitting red wine, rich and fruit forward, masculine, rustic and profoundly elegant. In France it is known and grown as Syrah and is responsible for some of the Northern Rhone’s big, bold red wines – think “rich and earthy” and old world style. Key to choosing is knowing what you like. Either way they are big, fat and ‘in

Nebbiolo/Barbaresco/Barolo/Barbera
Nebbiolo is the quintessential Piedmontese wine grape. It is named after and evokes the region's foothills on cool autumn mornings, when valleys and vineyards lie hidden under a ghostly blanket of nebbia (fog). Nebbiolo is most celebrated for making complex,
high acid, high tannin Barolo and Barbaresco. Wines are characterized by layers of tar, truffles, roses, violets, prunes & dark chocolate. — Christie Vaughn – Dream Wines

This signature wine grape and quintessential, indigenous “noble grape” of Spain comes in many disguises and aliases depending
upon where it is grown. Most experts agree that it is a classic quality grape variety and responsible for some of Spain’s best wines.
It’s most famous expression is in the rich, velvety red wines of La Rioja.

And now for some ‘drinking out loud’ in Portugal
Until very recently, Portugal did a pretty poor job with its Douro patrimony. Too often the wines were dirty tasting, from old, unclean barrels. The winemaking was crude, the ambition for greatness non-existent.
No More! Portugal is now gushing with stunning wines — and yes, stunning deals. Portugal very likely now offers some of the greatest wine values on the market today. Portugal’s achievement is still recent and the word hasn’t quite made the rounds! It is
arguably the most exciting wine place on the planet today!

the whites
“Want to know the secret to pairing white wines? Think of a cool region wine with no oak on it
— say, Sancerre, Pinot Grigio, or Tocai Friulano. Now, think of a lime. If you can put lime on your food, you can most likely pair it with an unoaked white wine.
Ceviche and Sancerre is going to be a great pairing. Chicken in a béchamel sauce with Sancerre, probably not.
Now, think of a white wine with oak on it — say, California Chardonnay. Think of it like butter.
If a dish works with butter, it will work with the wine. Lobster with Chardonnay: a great pairing. Ceviche with Chardonnay: definitely not.”
— Greg Harrington, MS

The Rieslings
One of our most under-appreciated varietals, Riesling exudes layers of lemon, lime, peaches, stone fruit, and a distinct aroma of wet stone
combined with racy acidity. It is a perfect match for spicy food. Riesling is a challenge to the viticulturist.
Given good weather, the longer the grapes remain on the vine, the sweeter they become –
but the winemaker takes a risk as all could be lost in the event of bad weather.

Marsanne & Marsanne Blends
Jacqueline , la fondatrice of Chateaux Ollieux – a magnificent old property surrounded by old vines and olive trees or “Ollieux” – was
probably one of the first winemakers in Languedoc. Unique, she fought against prejudice to protect the oldest vines in the Corbieres,
the Carrignan or Alicante grapes. She took risks by launching one of the first oak aged whites of the appellation. An amazing little
woman, she excels at assembling the collection – all while smoking a pipe!

Rosé – Drinking Pink
Rosé, unlike red wine and Helen Mirren, does not improve over the years so don’t get any ideas about hoarding it in your cellar for half a century. There’s no shame in drinking something with last year printed on
the label. You shouldn’t drink (and probably won’t find) anything that’s dated more than two or three years back.

When Madame Lily Bollinger from Champagne Bollinger was asked "When do you drink champagne?" she replied: “I only drink champagne when I'm happy, and when I'm sad. Sometimes I drink it when I'm alone. When I have company, I consider it obligatory. I trifle
with it if I am not hungry and drink it when I am. Otherwise I never touch it – unless I'm thirsty
