Trekforce South completesRanger Station in Chiquibul A fif teen-strong team ofTrekforce volunteers, staff, and lo-cal partners completed the con-struction of the Ranger Station/Ob-servation Post at Rio Blanco, intime for the Opening Ceremonyon Friday 14th March. After 31days of relentless toil, the final nailwas hammered in only secondsbefore a BATSUB helicopter car-rying assorted dignitaries: MrMarcelo Windsor (Deputy ChiefForestry Officer), Ms NatalieRosado (The Nature Conservancy),and Guest of Honour Col DarioTapia (Commander BDF) landedat the remote hilltop location, over-looking the Guatemalan border. Film crews from two BelizeanTV news channels were on handto capture the historic event: thisis the first time a Ranger Station/BDF Observation Post has beenconstructed in a National Park inBelize, and demonstrates the part-nership between Trekforce World-wide, FCD (Friends for Conser-vation & Development, the NGOthat co-manages the ChiquibulNP), and the BDF who patrolBelize’s border. Method1) For the curry paste: blend allthe ingredients to a smooth pasteand set aside.2) For the curry: cut the beef intochunks. Put in a pan of water andbring to the boil. Drain and rinseoff any scum.3) Heat half the oil in a large panor wok and fry the curry paste untilit darkens a little and smells aro-matic. This cooking of the spicesis an essential cooking method usedthroughout India and beyond. Addthe beef and stir-fry until browned.

4) Cover with water and bring toa simmer. Add the lemongrass,and salt and sugar to taste. Sim-mer for 60 minutes.5) Crumble in the coconut and sim-mer for another 30 minutes, or untilthe beef is tender and the saucethick and reduced.6) Heat the remaining oil in a fry-ing pan and fry the desiccated co-conut until golden brown. Blendto a fine powder in a food proces-sor and stir through the finishedcurry.7) Serve with Cilantro Rice.

“I call it Flower Dancers,” Melody said.

“I think I see the flowers,” I said, “but where are the dancers?”

“See,” she pointed. “There is a little dancer on each flower.”

“Oh.”

“I don’t expect you to get it,” she said. “It’s modern art and there’s nothingmodern about you.”

“If you say so. Do you have any more paintings that I haven’t seen?”

“I do, but they’re going to be in an art exhibition at the Bliss Institute in BelizeCity this week. Are you going to come to the show?”

Since I had to be in Belize City that Tuesday, I stopped in at the exhibition.

“I’m glad you made it to the show,” Melody said. “Where’s Mom?”

“She’s out shopping.” I said. “She’ll meet me here later. Show me someart.”

As we walked around the gallery, she pointed out different paintings.

“You must be joking,” I said, as I looked at the price tag on one of the paint-ings. “This is nothing but a bunch of circles painted with different shades ofcolor and the artist wants five hundred dollars for it.”

“If you want it, I’m sure the artist would give you a ten percent discount,”Melody said.

“I don’t see anything in this room that is a recognizable picture of anything,”I said. “Look at this. It’s a little tiny painting of something that looks like eithera frog or a cow. It’s no bigger than my hand and they want three hundred andfifty dollars for it.”

“If you had your glasses on you could see that it is a jaguar,” she said. “Whereare your glasses?”

“I didn’t bring them with me.”

“Well, quit whining and buy something,” Melody said. “You need to supportthe arts.”

“Wait a minute,” I said, stopping to look at another one. “How do they getaway with calling this art?”

It was a small black dot set on a field of white and framed in brass.

“On the other hand, I kind of like this one,” I said. “It looks somehow famil-iar. How much do they want for this? Maybe I can afford it.”

“Don’t be ridiculous,” Melody said. “That’s the light switch.”
