and entirely renovated mansion from the 19th century that

Domaine Clarence Dillon chose to settle its parisian residence.

The superb facade of the Hôtel Dillon can be admired at

31 avenue Franklin D. Roosevelt.

Lover of the French lifestyle, HRH Prince Robert of

Luxembourg – President of the family company – personally

sought out the paintings, vases and ancient furniture

that decorate each room in order to recreate in Paris the

warm and distinguished atmosphere of the Bordeaux

properties. The Hôtel Dillon offers an authentic art of

The entrance leads into a charming cobbled courtyard with

a trellised wall graced with rambling plants and surrounded

by Versailles planters blossoming with delicate pink

camellias. This little bucolic hideaway in the centre of Paris,

with its splashing fountain, is the ideal venue for sharing

very special moments.

Located on the ground floor and the basement of the

Hôtel Dillon, “La Cave du Château” is an elegant boutique

of fine wines, replete with exceptional bottles. This temple

for discerning wine lovers, which prides itself on being able

to satisfy its clients’ every wish, is a genuine treasure trove,

including not only precious vintages from the vineyards of

Domaine Clarence Dillon, but also a hand-picked selection

of the finest grand crus and spirits produced in France.

On the first floor, you will discover a restaurant that is friendly

and refined – reflecting the very best French produce – led

with panache and passion by a young and talented team.

In the kitchen, Michelin starred Chef Christophe Pelé will

make it his mission to revisit the great classics of French fine

dining. Meanwhile in the restaurant, Antoine Pétrus, a winner

of the prestigious “Meilleur Ouvrier de France” award, will

oversee proceedings in his capacity as Restaurant Director

and Chef Sommelier, ensuring his guests enjoy a delightful

escape into a timeless world suffused with a unique history.

Located in the very center of Paris, the Hôtel Dillon provides a privileged

third floor of the mansion are perfectly equipped and connected, ideal

truly is a “private apartment”. Each room is named after an important

character in the history of fine cuisine and Domaine Clarence Dillon.

ANTONINCARÊME

The largest private room, seating up to 20, was

named after the “King of Chefs and the Chef of

Kings”. Considered the inventor of haute cuisine,

Carême was Talleyrand’s personal chef. He was

quoted as saying: “Good food and wine fill the

gourmet’s heart with joy” – a conviction shared

by all at Hôtel Dillon.

AUGUSTE ESCOFFIER

The most famous chef of his time, who influenced

generations of cooks with his “Le Guide Culinaire”,

a comprehensive guide to fine French cuisine, has

given his name to the Hôtel Dillon’s second private

room, which has a capacity of up to 12 guests.

Auguste Escoffier was a late 19th century chef,

restaurateur, and author of French cookery books,

who modernised and codified the fine cuisine

launched by Carême. As many recipes he created

in his prestigious establishments were adopted

by other chefs, he was responsible for developing

the international influence of French cuisine.

SEYMOUR WELLER

The third and last private room, which has a

capacity of up to 8 persons, is named after the first

President of the firm, Seymour Weller, a nephew of

Clarence Dillon, who ran the company for 40 years.

On his retirement, in 1975, he was succeeded by

his cousin, Joan Dillon – granddaughter of the

founder and mother of the actual President, HRH

Prince Robert of Luxembourg.
