The most obvious (and cutest!) choice for a color representing February is pink. It’s February is pink. It’s irty, fun, feminine, and instantly seems to transport us to visions of cotton candy, bubble gum, and frilly dresses. Pink is one of our most versatile our most versatile colors; powder

pink can be sweet and child-like, while hot pink or magenta can be wild and full of vivacity. I am loving the trends I am seeing in the world of pink today. I even dyed the tips of my hair pink the tips of my hair pink recently and have loved being able to see them in my mirror everyday! And so now that February

is here and I’m beginning to see rose beginning to see rose colored hearts in store windows and feeling a little more pull towards my amingo nail polish, I couldn’t be more delighted. Let’s embrace our inner embrace our inner girly-girl this February and do Valentine’s Day all out! I want to see a

shades of pink. . .

Makes 4 servings

8 oz mushrooms, cleaned & sliced

1 shallot, thinly sliced3 tablespoons butter, dividedAbout 1 1/4 lbs. boneless

skinless chicken breast cut into skinless chicken breast cut into 1/2” pieces

1/2 cup dry white wine3 tablespoons heavy cream1/2 of 16 oz package Phyllo dough, thawed according to package directions

1 cup shredded Swiss cheese1 cup shredded Swiss cheeseCooking spray

Melt 2 tablespoons butter in a large skillet and add mushrooms. Sauté until mushrooms are golden. Remove mushrooms from pan. Add 1 tablespoon butter to skillet and melt; add shallot. Sauté shallot until softened. Remove shallot and add to mushrooms.mushrooms.

Add chicken to pan and sauté for about 5 minutes. Season with salt and pepper; add wine and mush-rooms and shallots. Simmer for about 5 minutes over low heat. Remove chicken mixture from pan with a slotted spoon. Simmer liquid inin pan over medium heat until re-duced to about 2 tablespoons. Reduce heat to low and add cream; stir. Return chicken mixture to pan and stir. Remove from heat.

Preheat oven to 400 degrees. Line a baking sheet with parchment paper.

PlacePlace a sheet of Phyllo dough on work surface. Spray lightly with cooking spray and place another sheet on top. Continue until you have 4 layers of Phyllo, spraying each sheet.

PlacePlace 1/4 of chicken mixture in center of Phyllo dough. Top chicken with 1/4 cup cheese. Roll up like a burrito and tuck ends underneath bundle. Transfer to baking sheet. Repeat to make 4 bundles. Spray bundles lightly with cooking spray.

BakeBake for about 15 minutes until bundles are lightly browned.
