Magical alchemy

At the New Caledonia Conservatory of Music on 21 &

22 July, music meets juggling in an unusual and magical

show fusing Bach’s works for lute with the airy poetry

of juggling. Don’t miss this opportunity to see juggler

Vincent de Lavenère creating delicate shapes in the air

which blend in perfect harmony with the arabesques of

notes conjured by lutenist Eric Bellocq as he performs

some of the loveliest music written by Johann Sebastian

Bach. Two arts fuse to create a triumph of subtle

enchantment which is both moving and joyous.

Venison curry Paddock de laBoutana styleIngredients (serves 6): 1.5 kg venison, 2 medium onions, 1/2 cup raisins, 1 can coconut milk, diced apples, bananas, 4 cloves garlic, Herbes de Provence dried herb blend (typically includes rosemary, marjoram, thyme, oregano, basil, savory & chervil), curry powder (hot or medium, as preferred), salt, pepper

Preparation: Cut meat into medium cubes. Heat oil until sizzling and sear meat in batches (add only a small batch at a time, brown on all sides and reserve. Bring oil back up to sizzling and brown next batch. Do not overcrowd the pan.) Add more oil to the pan if necessary and gently fry the chopped onions until soft. Return the meat to the pan and cover with water. Add the diced apples, raisins and Herbes de Provence blend, garlic & curry powder. Season to taste with salt and pepper. Taste and adjust seasoning if necessary. Leave to simmer over a low heat. The meat is done when it is fork tender - you should be able to pull a piece of the meat apart easily. Turn off heat when done and leave covered. Reheat before serving and stir in the can of coconut milk. Serve with white rice and top with grated coconut, sliced bananas, crushed peanuts and spicy tomato chutney.

T h e t r a d i t i o n a l w e l co m e o r "co u t u m e " i s a

cornerstone of Kanak culture. In its broadest sense

the term "coutume" refers to all the social rules that

govern everyday life but in the above instance it

refers to the traditional welcome ceremony, which is

a mark of respect (at the beginning of a meeting, on

arrival on tribal land, etc).

A simple gift is offered. Originally this took the form

of "Kanak" money, which was made from shells,

flying fox fur, etc. Today a gift of tobacco and money

(around F1,000) is laid upon a piece of material

(known as "le manou").

The person who is giving the gift explains his or her

reasons (to give thanks, make a request for authori-

sation to enter tribal lands, etc). The person receiving

the gift, replies and touches the gift as a sign of

acceptance.
