Pinelands is fortunate to have a very healthy population of the Cape Dwarf Chameleon. Dwarf Chameleons don’t lay eggs like other chameleons but give birth to tiny live young which can be found in small groups near the mother. Help save our chameleons by removing them from trees that are being pruned. Carefully go through each branch: one Pinelands resident saved 23 by doing this! Some people are very superstitious about chameleons and so this is a task you have to do yourself.

REMEMBERING MOMENTOUS OCCASIONSAs I write this column, I am also preparing something to read to the Red School pupils for their Readers are Leaders programme. I am planning to recall memories of the excitement of a young child like me who watched the first Moon landing live on TV in 1969.While I don’t remember the details, I do clearly recall feeling the amazement that it was really happening and that I was watching it at the same time. That brief event is probably what sparked my lifelong interest in astronomy. While preparing, a few other events came to mind which were defining moments for me - in history and personally.

Having grown up during the cold war era, the fall of the Berlin Wall was an unthinkable surprise after the fear of nuclear war during the Cuban Missile Crisis and the later assassination of Kennedy. Even though these were distant events, they made me feel that, even at the foot of Africa, we were a part of a wider world which I wanted to know more about.

As South Africans, the release of Nelson Mandela and the euphoria of the 1994 elections followed by the famous World Cup win in 1995 made us feel good about ourselves in a way that had not been possible before. The nervousness, anticipation and excitement of my marriage proposal next to the Seine in Paris, the wonder of going onto the 'World Wide Web’ for the first time when it was emerging in the early 90’s... these moments changed the direction of my life.

Thinking back on these events, it’s the emotions they brought out that remain strongest in my memory while the exact details of who said or did what are often fuzzy, with just a single significant image of the event etched in the memory. Perhaps that's why it's important to write up and photograph stories so we have the details to supplement our emotional memories in the future.

About the cover: Photographer Derrill Papendorf is a regular visitor to the Intaka Island bird sanctuary at Century City. Aptly named "Intaka" is an IsiXhosa word for a bird. If you set up early in one of the bird hides you will see many birds and be able to get some good images. This image of the Malachite Kingfisher was taken with a 600mm lens - it was also interesting to see some kingfishers regurgitating the bone pellet of the fish they had eaten.

Economists are warning us that 2016 is likely to be the most difficult year since 2008/9. With inflation at 7%, it will probably mean another two interest rate hikes. With soaring food prices (predicted 30% increase), an increase in rates and taxes and a GDP growth of less than 1% for this coming year, there must surely be some end in sight to soaring property prices. If you go to Property24 where most agents advertise you must then wonder why there are so many properties advertised above the R4m market. Is this a true reflection of prices? We believe not.The current market is in what I call the “elastic band period”. For some time now sellers have been stretching the band that links buyer and seller and the buyers have merrily been dragged along. There is now a noticeable disparity between buyers and sellers expectations and buyers are digging in their heels. If sellers keep stretching the band something is going to give as buyers stall their home buying decisions. When the band breaks someone is going to get hurt. We have already noticed a marked decline in the number of enquiries by qualified buyers.There is an ideal timeframe in which a property sells. If you do not get a written offer in the first 30 days your home is incorrectly priced. Buyers are already looking for alternatives such as rentals which is great for landlords but not for sellers.Sellers need to prepare for a tightening of the market as it enters the cool down phase. They should also be careful about basing their aspirations solely on property advertisements of other properties in the area as this could prove to be misleading. If you are not serious about selling please do not put your home on the market. If you are, then select a trusted agent, do your homework well and remember that the first offer is often the best!

These lovely ladies from Clareinch Old Age Home in Pinelands have been knitting squares for blankets. They enjoy being occupied and having the sense of achievement that goes with helping others. Once stitched together, the blankets are given to a maternity home so that every new-born baby may go home with a nice warm blanket. Any wool donations would be welcome to further their cause.

Pinelanders Bryan and Dean Carstens (Gr6 and 3 at Pinehurst) came first in the Double Handed Sailing Challenge at the Milnerton Aquatic Club on the 10th of April. The two boys together with Elisa Falcon (Gr3) represented Pinehurst at the inter schools sailing event on the 16th and 17th of April and achieved fourth place. Congratulations!

CANNONS CREEK HIGH SCHOOLRUNNERS IN THE OMTOM RACE

Simon Short (left) and Calvin Hammond (right) took part in the Two Oceans Half Marathon over the Easter weekend. They both achieved silver medals which means that they ran 21,1 km in under 90 minutes. Simon came 5th in the Junior Division with a time of 1h23 (92nd overall out of 14 000 runners) and Calvin came 7th with a time of 1h27 (138th overall out of 14 000 runners). What a fantastic achievement! Well done boys!Calvin registered to run his first half marathon in the OMTOM forthe Race4Conservation Foundation which raised R25 000 last year for Rhino orphans.

Due to the ongoing drought in parts of South Africa the Representative Council of Learners initiated a water project among the students. The idea was to lend a helping hand to the wider community and for students to think about others in need.The school partnered with Operation Hydrate and students collected thousands of litres of water which were dropped off at the collection point in Maitland.

There was a good turn out for the PRRA general meeting held at the Pinelands Library Hall on 13th April. Chris de Witt presented the plans for the Grace Primary School to be built in Nerine Avenue. The school will offer grades 1 to 7 in small classes. The land next to the school is to be kept as parkland. Mr Patrick Pillay of Pinewatch gave an update of the Pinelands Street Camera Project explaining the function of licence plate recognition cameras. The system is linked to a broad user group, including SAPS, who share technology and resources in the fight against crime. An audience member commented on the success of the surveillance cameras in Rondebosch. Bruce Burmeister and Anine Trumpleman presented the new building plans for the Huis der Nederlanden site. Residents asked if the zoning could be kept as residential. The liquor licence at Clyde Pinelands was also addressed by Alderman Brian Watkyns. CHARLOTTE WOLFSON AND THE THRILL OF THE DOWNHILL MOUNTAIN BIKE RACE

Grade 7 Cannons Creek student, Charlotte Wolfson, talks of steep downhills, rock gardens, walled corners and hard berms, as she explains what it is to be a downhill mountain bike rider. It is not the same as cross country riding and construction of the bike is very different - with an elaborate giant coil suspension. Charlotte has featured in six races this year - the Western Province DH1 and DH2; and the SA National Cup Series DH1 at the Helderberg track; the KZN Cup Series DH3; the SA National Cup Series DH2 - both at Giba Gorge; and the African Continental Champs in Lesotho. The race is fast and furious, can be slippery, rocky, dusty - and of course quite dangerous, so Charlotte is equipped with plenty of safety gear - helmet, neck brace, chest and spine protector and elbow and knee guards. Fitness training is very important. Charlotte plays hockey, softball, karate, and enjoys surfing which helps to build body strength and balance - essential as most of the ride is done standing.Charlotte's dad and three brothers all enjoy the sport, which Charlotte says is less of a competitive sport and more of a community event with riders helping each other throughout the race. Charlotte hopes ultimately to compete in the elite women's events at the World Championships.

Matthew Abrahams is a normal 16 year old boy at face value, who likes his Playstation, watching movies, going to the mall, and spending time with his family and friends. However, he also has a very special sporting talent.

SWIMMING FROM A YOUNG AGEMatthew was taught to swim at the age of 6 by swimming instructors Michelle, Ronel and Craig at Peak Drive and The Dell in Pinelands, as a means to make him water safe, because he was very daring. He swam in his first swimming gala at age 11 in the WP Junior League and two months later that same year he qualified to swim in the WP Senior League for his swimming clubs Vineyard, and later Aqua Wolf.

A BROWN BELT IN KARATEIn 2013 Matthew also obtained a Brown Belt in full contact Kyokushin Karate. He not only represented Western Province in karate but was also ranked 2nd and 3rd in the Western Cape in 2010 and 2011.

SWIMMING AND FOOTBALLAWARDS AT PRIMARY SCHOOLIt does not stop there. He enhanced his reputation as a top sportsman when he was awarded senior swimmer and senior footballer of the year in 2014 at his school Sundlands Primary in Kenwyn. Matthew went on to represent his school District for South African Schools Football Association (SASFA) and travelled to George in November 2014 where he helped the team to victory in the football tournament. This comes from someone who had never played club football and most of his team mates played for top football associations.

MATTHEW'S FIRST LOVE - SWIMMINGAfter all his achievements in multiple sporting areas we come back to his first love which is swimming. He was invited for swimming trials at the Western Cape

Sports School in 2014. After a full medical he was excited to hear that he had been accepted. He relished the new journey before him – representing UWC Aquatics at the swimming galas.

INTENSIVE SWIMMING TRAININGMatthew trains for two hours daily and two extra hours in the mornings before school from 05:30. The swimming distance covered in a week is 85km. Matthew’s steady improvement culminated in his achievement of 10 medals in the major 2016 Regional and SA National competitions, in February and April this year. He won:• 5 Gold• 1 Silver • 4 BronzeAt these competitions he achieved five Personal best times in 100m and 200m Freestyle, 50m Freestyle, 50m Butterfly and 50m Breast stroke. After doing well at swimming galas this humble and grounded boy does not beat his chest, he simply indulges in his favourite past time - having a couple of pieces of chocolate.

WHERE TO FROM HERE?When Matthew is asked about his swimming achievements he is quick to

remind you that he still has a long way to go and that he is way too young to specialise in a certain stroke. His short term goal is to qualify again for SA Nationals next year. Long term goals are to join the group of Elite swimmers in South Africa like Chad le Clos, Cameron van der Burgh and Sebastian Rossouw. He will then be able to swim in the World Championships, All Africa Games, Commonwealth Games and the Olympics, once he qualifies. For now he will continue to train hard and support his two favourite football teams, Manchester United and Real Madrid.

His parents, teachers and coaches believe that he should be allowed to grow and mature into a great human being, student and competitive swimmer.

I am often amazed by how innovative Pinelanders can be. Not only do we have a great community magazine (the Muse), but also our very own business directory (Pinelands Directory). I discovered the Pinelands Fibre initiative while researching the topic a few months ago. As owner of an IT business I have experienced the value that fibre can add to both households and businesses. Neighbourhoods that have fibre access are very sought after and, in my opinion, it can benefit property prices.Many people still believe that fibre is expensive and only suitable for high end users. This is no longer true. Competitive packages exist - starting at about R450 per month. A fibre package will replace both your DSL line rental and your data package. Fibre provides many benefits over ADSL, such as stability and faster upload and download speeds. Small and medium businesses can benefit from access to affordable voice over IP and offsite backup solutions facilitated by a fibre connection.

As soon as critical mass is reached to make the rollout of fibre financially viable, telecom companies will take the plunge. Anton and Clint of Pinelands Fibre, have done tremendous work in creating the www.pinelandsfibre.co.za for residents to register their interest in a fibre connection. Due to their initiative, Telkom has started rolling out fibre in Pinelands and a company named Frogfoot has also shown interest. Having competition and choice will help to reduce the cost of fibre to residents. Frogfoot’s plans include an offer to provide bandwidth to the Pinelands Street Camera Project, which will significantly reduce the costs of this project. Marriage is a time of immense joy, heady romance and the celebration of an exciting new future together – all of which can be short-lived if there exists a lack of harmony when it comes to money. Consider the following:A history lesson: Before planning one’s joint financial future, it is imperative that each partner understands their spouse’s history with regard to money, and how that history impacts on their financial behaviour today. Was there a scarcity of money during one’s childhood? Was money the cause of heated conflict and anxiety in the family? What spending habits has each partner acquired as a result of their upbringing? The great reveal: The next step is for each partner to reveal the full extent of their financial position – including all assets, liabilities, accounts, collectibles, inheritances, credit cards and investments. Full transparency and open communication are essential when revealing one’s incomes to each other. One direction: Components of the fiscal plan would include an emergency fund sufficient to cover 3 to 6 months of essential bills; a savings account for medium-term goals - for purchases such as a deposit on a home, an overseas trip or a new vehicle. Each partner should maximise their tax-deductible contributions to their retirement fund as soon as possible. Remember ‘teamwork makes the dream work’.Do the maths: Mapping out the monthly expenses. Essential costs, such as housing, transportation, groceries, medical aid, electricity and water, need to be prioritised in the budgeting process. Thereafter, discretionary expenses can be reviewed such as gym membership, cell phone contracts, entertainment, DSTV and other nice-to-haves.TEAM - Together Everyone Achieves More: Generally, married couples will have a combination of separate and joint bank accounts. For instance, each spouse would operate their own cheque account and then have a joint credit card. The practical construction of the bank accounts should not, however, detract from the underlying principle of financial unity.Minister of Finance: Although it is imperative for each partner to know exactly what is going on with the finances, it is often

practically easier for one partner to assume responsibility for paying accounts. Online banking is an effective tool for keeping both partners informed of household finances, ensuring that both partners have full knowledge of all transactions.Over the threshold: In order to avoid any tension over purchases, our advice is to agree on a pre-determined spending threshold. The idea is that all purchases over this threshold should be discussed and agreed upon first, thereby reducing post-purchase animosity between spouses.A friend in need: Our advice is for the couple to jointly develop a policy for dealing with friends and family in need of money, and then adhere to it resolutely. Risk and rewards: Whilst young and in the process of accumulating wealth, one’s most important asset is the ability to generate an income. It goes without saying that this income needs to be protected against unforeseeable events such as the death or disability of either spouse. Where there’s a Will: Once married or committed to a long-term relationship, it is important that each partner’s Will is updated so as to bequeath one’s assets appropriately. More importantly, if there are minor children from the relationship, the Will should make provision for their guardianship.Successful financial planning within a marriage is underpinned by teamwork. It is fortified by full transparency, intentional communication and dual commitment to a common goal. Henry Ford aptly noted, “Coming together is a beginning; keeping together is progress. WHAT IS THE RIGHT SCHOOL CHOICE?• Remember that the choice of school is

actually a choice for your whole family, not for the one child. This means that everyone in the family, within reason, should align themselves with the values and ethos of the chosen school. The only way this can be established without being a member of the community, is through spending time at the establishment. Attend everything the school organises before your child is 'school ready'. Functions like school fairs, open days, sports matches and plays are perfect opportunities to see the 'school in action'. Instinctively you will feel the right 'fit', just walking along a corridor!

CHOOSE AN AFFORDABLE SCHOOL• The school must also be affordable for

your family, not only in school fees but also in uniform and extras like camps, stationery and extramurals. One thing families often forget to include in this affordability is… will your child go on similar holidays, wear similar civvies clothes, buy the same toys…? This problem rears its head later in school life

because, as they get older, all children want to fit in. If your child is going overseas every holiday, and nobody else in his class is doing so, it becomes difficult to talk about the holiday. In the same vein, if your child is getting small toys for their birthday, but everybody else in his class is getting an iPad, an iPhone or an Apple watch, then your child is again not going to fit in.

LOOK AT THE EXTRAMURAL ACTIVITIES• Most schools you would consider will give

your child a good academic education. In South Africa the curriculum is regulated so there should be few differences in the academics between schools. Therefore look for the extras over and above the usual academics, such as outings, fun days, projects, camps, music lessons, and extramural learning like science, extra languages and stamp clubs. Extra lessons for both very bright children and those who struggle, also help.

in a school that celebrates diversity, not only by race but also by religion, ability and disability, psychologically and academically? Our country is diverse, and children growing up in a homogenous society will find life after school exceptionally difficult!

FAY WOODHEAD

AN ADVENTURE IN THE UKFay and Des featured in the Dec 2011/Jan 2012 Muse, when they celebrated their 60th wedding anniversary. Sadly Des passed away three years ago - and Fay finds it hard to believe that she no longer has her lifelong companion at her side. One of their travel adventures together was a three year stay in the UK. Fay was unable to use her experience in radio broadcasting, as it was a 9 to 5 job, so she took a position in Bond Street placing illustrations in children's books. She treasured her lunch hours when she could go out and explore the sights of London including Selfridges and Harrods.

SUNSHINE AND FAMILY BECKON The longing for regular sunshine and family brought them back to South Africa, to start their family in Seapoint. When their children Lynne and Philip were young, they bought a house in Ringwood Drive for the princely sum of R8 000. That was in 1959. Fay has just seen the same house on the market for over R3 million. "How times have changed" comments Fay. "In my youth I loved horse riding and we would ride from

Camps Bay to Rhodes Memorial. The road after the Cable Way was a dirt track - not tarred as it is today".

AN EYE FOR PHOTOGRAPHYFay and Des belonged to the Cape Town Photographic Club for more than thirty years and were regular competition winners, including a second place for Fay in an Argus competition where she competed with 12 000 other entries! As a judge for slide entries for salons, Fay tells how they were only given 10 seconds to assess an image.

A GOOD DECISION - AND NOWTHERE ARE THREE GENERATIONS HEREFay is very happy to have made the move to Pinelands. With a wealth of memories of the area and its development as a Garden City, she feels it was the best thing they could have done for their children. Happily, Fay is surrounded by her family who still have homes in the suburb. Both her children and grandchildren Tim and Ricki-lee and her husband Richard, live in Pinelands.

Cheerful Pinelands resident Fay Woodhead has always loved to travel. Visiting new places and meeting new people is interesting and it makes her happy. Our travel article on the next page, written by Fay, is from her most recent trip to the Pilansberg and surrounds, with some members of the SAARP. (South African Association for Retired Persons).

HOW DID THE ORGANISED TRAVELTRIPS WITH THE SAARP START?"The idea was to help a friend who had cancer to get out and about. A group of 27 of us had a whale of a time hiring a bus for a fortnight and staying in Knysna. On our last day we went on the Outeniqua Choo-Tjoe and the group asked "what shall we do next year?" So from then on Fay has enjoyed planning group trips for travel, locally and internationally, visiting many parts of Europe, Alaska, USA, and New Zealand. Fay notes that it was easiest on the MSC cruises to make sure no one went missing!

THE IMPORTANCE OF A SMILEFay loves to be busy - she knits for her favourite charity - the Association for the Blind and is already organising her next travelling trip. She still believes in what she and Des said in 2011 "appreciate the love your family has for you, and make the most of life with a smile on your face."Enjoy Fay's travel article!

NORTHWEST ENCOUNTERVAN GAALEN CHEESE FACTORYOur safari guide met us at Lanseria airport to escort us to the Pilansberg National Park. The beautiful landscape here was formed when a volcano collapsed leaving rings of mountains and the Mankwe Dam in the centre. On the way we stopped at the Van Gaalen cheese factory in the village of Skeerpoort, at the foot of the majestic Magaliesberg mountains, where we marvelled at row upon row of round yellow cheeses made by a second generation Dutch family.

POLOKWANE WATERHOLEOur chalet was in the malaria-free Manyane Camp, administered by the NW Parks Board. Pilansberg is not as big as Kruger, but still has the Big Five. Within 15 minutes we were at the Polokwane waterhole and were delighted to see a family of elephants having a swim. The babies go under even though they have trouble keeping their "periscopes" above water! Having seen thousands of zebra in the parks over the years I am amazed that the zebra stripes are all different just like the fingerprints of humans are different. Time slips by in the park and watching a female dung beetle reversing her load of dung up a slope can be interesting. She buries it in a depression, lays her eggs on top and covers it over. When the larvae emerge food is available and cycle continues.

BIRD HIDES - PHOTOGRAPHERS PARADISEThe drought has affected the levels of the Manke Dam as well - the long board walk to the bird hide normally takes one beyond the water's edge, but not when we were there. There are six bird hides in the park making it a popular destination for birders and photographers.

MANY RESTAURANTS TO CHOOSE FROMWe had lunch in the park at "The Zebra

Crossing" a friendly restaurant with seating overlooking buffalo and kudu making good use of the salt blocks provided for them. Then our guide told us that there had been a sighting of lion 9km up the road - information passed on by another park visitor. There is a lovely sense of sharing and togetherness in the park and we enjoyed relaxing with our evening meal under the stars discussing the day's events. All too soon we had to leave this tranquility and return to the busy world. Next stop was Hartbeespoort Dam where we found a gem called "French Toast" with authentic French decor, a mock Eiffel Tower and a replica bridge with an array of "love locks" as one sees on the real thing in Paris. As tourists do - we had our photo taken under the Eiffel Tower!

CHEETAH CONSERVATIONAfter a walk over the Hartbeespoort Dam wall, we went on to the The De Wildt Cheetah and Wildlife Centre set up by Ann and Godfrey van Dyk in 1971 as a breeding centre for endangered cheetah. Their story had an interesting beginning in that they were given two cheetah cubs after a farmer had killed the mother cheetah who was attacking their lambs. The centre has been extremely successful and also breeds Anatolian shepherd dogs used to protect livestock, without killing the cheetah. We found a drive around the centre fascinating, with vultures, wild dogs and of course a highlight was our experience of touching a cheetah - magical.

AN AFRICAN EXPERIENCEOur next adventure was the cultural village of Lisedi. We were housed in a group of Ndebele cottages decorated in colourful style. The main dining room was a work of art. A huge elephant skull and horns dominated the entrance and the walls were painted with African scenes. Even

the crockery fitted the decor. Huge cast iron pots were filled with crocodile, ostrich and various stews - all served with quiet politeness.

LOCAL FILM STUDIOOh, and there is "Pretville" a local film studio. The props are permanent buildings with a choice of cop shop, doctor's surgery, a general dealer and a restaurant. We watched a young couple in a film shoot and felt very fortunate to be able to enjoy this holiday with such a varied content of places to go and places to see!

An air of expectation turned into an air of delight. Pinelands Grove finally opened to the public to appreciate.At the gala event on Friday 15 April, Pinelands Grove management treated owners, dignitaries and selected invitees to an evening to remember. Memories were made and friendships forged at Pinelands’ newest prestigious retirement village.Whether it was the chandeliers, the elegant furnishing or the fires burning around the heated pool on a perfect evening, this was a night to remember.Pioneer investors who had bought their apartments off plan, beamed with pride. AVONTUUR FARM WALK

We arrived at 9am for the Avontuur Farm Walk - a wine estate and race horse stud. It was eerily beautiful seeing the horses and their foals through the mist, grazing in the paddocks in between the vineyards. Tony Taberer bought the estate in 1984, and promoted good wine and horse racing. Our guide walked us through the vineyards explaining how to recognise the differences in the leaves from the various vines. The horses were inquisitive and ambled over to investigate.Our first stop was the Cabernet Sauvignon Vineyard where the vine leaves are taking on their beautiful rusty colours of autumn. This vineyard was planted in 1986 - and the "weeds" in-between the vines are actually a mix of wheat/rye called kero, which keeps the soil cool, prevents weeds, and also encourages beneficial bacteria.

Our walk, which was not strenuous, carries on past the Shiraz vineyard planted in 2002. There are also 12.5 hectares of white grapes - Sauvignon Blanc, Chardonnay and Viognier. The last vineyard is the Cabernet Franc and Cabernet Sauvignon - two of the oldest and original vines planted in 1988. The premier wines on the farm are named after the famous race horses on the farm.There is a magnificent view of the Helderberg mountains forming a stunning backdrop to the Manor House, which is a national Monument, and to the restaurant and tasting room. Turning around, one can also see the Table Mountain in the distance. Apparently, on a clear day one can see right across to False Bay. 1. Preheat the oven to 180 ˚C and lightly grease an oven dish with a bit of olive oil.

2. Mix ricotta or cottage cheese and pesto and season with pepper to taste. Set aside.

3. Heat oil in a frying pan over a medium heat and fry leeks or spring onions until soft. Add mushrooms and sauté until just cooked. Season to taste.

4. Spoon veggies out. Place frying pan back on the heat and add the tomatoes. Toss until the skins just begin to burst. Add mushroom mixture back and stir in vinegar. Season to taste and spoon half of the veggies into the oven dish.

5. Meanwhile, spread 15-20 ml of the pesto mixture over each pancake. Fold the pancakes into triangles and place on top of the veggies in the oven dish.

6. Spoon remaining veggies on top of the pancakes. Pour cream over and sprinkle with pecorino cheese.

7. Bake for 20-25 minutes or until heated through. Finish with fresh basil leaves and serve immediately. A delicious large green salad will make it a special meal.

As the weather starts to change and there’s more and more of a nip in the air at night and early morning, we start to think about warmer comfort food. But, as it’s not quite winter yet, we can still enjoy meals that are perfect for autumn. This pancake bake is lovely as a weekend meal or over the public holidays ahead - and Mother’s Day. The concept of not having meat one day in a week, is more than just a ‘green’ idea. It’s indeed also an easy way to ensure that you enjoy a variety of foods, encouraging you to be creative with ingredients that may often only feature as a side dish. Pancakes are not just good with cinnamon sugar or syrup and a squirt of lemon. Why

not turn it into a delicious vegetarian meal that not only tastes great, but look impressive as well? The renowned combination of tomato, flavour-bursting basil pesto and a bit of dairy is always appealing. I recently made pancakes with stone ground wholewheat flour and just added a little extra liquid with a delicious end result – this is a great way to alternate with cake flour, especially for this savoury pancake bake. Despite the fact that there is no meat, this is quite a filling dish and if you pair it with a fabulous green salad, you can set the table for a special meal. If meat-free Mondays are not really your thing, then include some left-over chicken to the pesto as an add-on to the filling.
