Isn't spring a great time of year? The
snow is gone ...or will be!! Everything is
starting to turn green, the flowers are bloom-
ing and the birds are singing. I am anxious to
see all the flowers and bulbs I planted last fall
to come up and you may have noticed all the
trees Chris planted at the Event Center too.
Everything is going to look wonderful this
year; we also are adding more parking lot
lights and a new sign to the Event
Center. Chris has worked hard on this and the
city of Lake Elmo will be proud of it.
It has been a few years since we have not
had Easter in April, but having it in March
this year really did help our business (as I
have said in past newsletters March is a quiet
month). Our Saturday Breakfast Buffets are
finished until next October; they will start
back up again on Saturday, Oct. 19th and will
run through the 23rd of November.
Last month we had our first outside event at
Imation World Headquarters. It was a Valley
Outreach Event and about 300 people
attended. They had a orchestra, dancing,
silent auction and of course great food
catered by our Event Center. It was a
spectacular event! Imation is letting us have a
handful events a year at their beautiful space,
so if you or you know anyone that is looking
for a venue for a fundraiser, wedding or a
corporate event please call Elaine or Cheryl
at the Event Center 651.779.5994. We are
able to accommodate up to 400 people.
Our Innsiders this month are in for a
treat!! Last month we celebrated St.
Patrick's Day with a free brunch or a free
rueben at lunch time. This month we want to
offer you a little help with your taxes. No
sorry, we are not handing out refund checks,
but here's the next best thing. Did you know
that the maximum tax
collected in the U.S. is

We also are starting a new lunch
promotion called Throwback Thursdays. It
will consist of great lunch items at
"old-school" prices. It will be fun to look
back at all of our old menus since 1983 for
new ideas. Each month will have a new fea-
ture. Please see the back of this newsletter
for more information about Throwback
Thursdays.

As a caterer, it is our responsibility to keep the presentation
of our product appealing. Half the battle of keeping the ar-
rangement feeling fresh is that we must come up with new
ways food is offered and new ways it is displayed. One way
we do this is by having an assortment of heights on our buf-
fets. An easy way we create that height can be done with
items that are available to anyone. Take a look at the black
rings you see in the photo of our Mini Dessert Display.
These round, black lifts are simply a 10” PVC pipe (which
needed to be special ordered from a hardware store; they
carry smaller sizes in stock) cut into various lengths and
painted black. We have other lifts we use that are covered
with faux leather or “bling” trim (which we picked up at a
craft or fabric store) that is a roll of faux diamond studs
attached to fabric. You can use any covering you wish.
Simply cover the tubes and it looks amazing! Set trays on
them or use round mirrors like you see here. If you don’t
want to go to the trouble of creating your own lifts, look in
your own home for ideas. You can use interesting boxes,
beautiful serving bowls, or even group together attractive
glassware, mugs, clay pots, or short, heavy vases filled with
interesting things, and set your display on top. You could
even use fabric to cover something as simple as cans of
soup. Just make sure that whatever you use is steady, and
strong enough to hold the weight of your display. It needs
to be stable enough for the many hands that will be helping
themselves to your delicious buffet. Add an interesting
flower arrangement and you’re done!
A reminder, the Event Center will be hosting the Lake
Elmo Inn’s Mother’s Day Buffet. Visit our website for de-
tails, or call 651-779-5994 for reservations. We still have
space available but making your reservations early allows
you to get the time you want. The mid-day times (10:30 am
to 2:00 pm) fill up fast. This year Mother’s Day is on
Sunday, May 12th.

It is that time of the year that we all look
forward to, April showers brings May
flowers! Not only do we get to enjoy our
outside activities that come with the change
of season, but also at the Inn we get to enjoy
our new wine features.
April is also time for our next wine dinner; it
will be Wednesday, April 24th at 6pm.
This wine dinner we will be featuring
Trefethen Family Vineyard.
As one of Napa Valley’s few remaining
family wine estates, Trefethen Vineyards

outside grape.
Located in the
Oak Knoll
District of Na-
pa Valley, the estate vineyard is nestled in a
verdant landscape of vines at the cooler,
southern end of NapaValley. Along with a
delicious dinner by Chef Dave we will be
pairing it with Trefethen Dry Riesling,
Chardonnay, Merlot and Cabernet.

News from our Beer Guys…. Happy April everyone!! With the excitement of spring at hand, we would like to share our ex-citement over our new bottled beers. Levitation by Stone Brewing is a flavor experience like none other. It pours a deep chestnut with a healthy head. This beer hits the whole palate then “levitates” off the tongue. This is a beer that can be enjoyed by all.
