    ofmanufacturingeconomicalvegetariandisheswithoutanypreviousexperienceofcooking.Anexperiencedcookwilldoubtlessfindmanyofthedetailedinstructionssuperfluous.

    Theoriginalideawastocompileacookerybookforthosevegetarianswhoarenon-usersofmilkandeggs.Butasthiswouldhavecurtailedthebook'susefulness,especiallytovegetarianbeginners,theprojectwasabandoned.Atthesametime,non-usersofmilkandeggswillfindthattheirinterestshavebeenespeciallyconsideredinverymanyoftherecipes.

    I.--UNFERMENTEDBREAD.

    1.COLDWATERBREAD.

    1-1/4lb.finewholemealflourto3/4pintwater.

    Putthemealintoabasin,addthewatergradually,andmixwithaclean,coolhand.(Bread,pastry,etc.,mixedwithaspoon,especiallyofmetal,willnotbesolightasthatmixedwithalightcoolhand.)Kneadlightlyfor20minutes.(Alittlemoreflourmayberequiredwhilekneading,assomebrandsofmealdonotabsorbsomuchwaterasothers,butdonotaddmorethanisabsolutelynecessarytopreventthefingerssticking.)Putthedoughontoaflouredboardanddivideintofourroundloaves.Prickwithaforkontop.

    Thecolderthewaterused,thelighterthebread,andifthemixingbe

    donebyanopenwindowsomuchthebetter,forunfermentedbreadisair-raised.Distilledorcleanboiledrain-watermakesthelightestbread.Butitshouldbepouredbackwardsandforwardsfromonejugtoanotherseveraltimes,inordertoaerateit.

    _Anothermethod_ofmixingisthefollowing:--Putthewaterintothebasinfirstandstirthemealquicklyintoitwithaspatulaorwoodenspoon.Whenitgetstoostifftobestirred,addtherestofthemeal.Kneadfortwominutes,andshapeintoloavesasabove.

    BAKING.--Bakeonthebareovenshelf,floored.Ifpossiblehaveafewholesboredintheshelf.Thisisnotabsolutelynecessary,butanytinkerorironmongerwillperforateyourshelfforafewpence.Betterstillare

    wireshelves,likesieves.(Thisdoesnotapplytogasovens.)

    Startwithahotoven,butnottoohot.Totest,sprinkleateaspoonfulofflourinapattypan,andputintheovenforfiveminutes.Attheendofthattime,iftheflourisalightgolden-browncolour,theovenisright.Nowputinthebreadandkeeptheheatoftheovenwellupforhalfanhour.Attheendofthistimeturntheloaves.Nowbakeforanotherhour,butdonotmakeupthefireagain.Lettheovengetslightlycooler.Thesameresultmayperhapsbeobtainedbymovingtoacoolershelf.Italldependsontheoven.Butalwaysstartwithahotoven,andafterthefirsthalfhourlettheovengetcooler.

    Alwaysremember,thatthelargertheloavestheslowermustbethebaking,

    otherwisetheywillbeoverdoneontheoutsideandunderdoneinthemiddle.

    Donotopentheovendooroftenerthanabsolutelynecessary.

    Ifagasovenisusedthebreadmustbebakedonabakingsheetplacedonasandtin.Asandtinistheordinarysquareoroblongbakingtin,generallysuppliedwithgasstoves,filledwithsilversand.Abakingsheetissimplyapieceofsheet-iron,asizesmallerthantheovenshelves,sothattheheatmaypassupandroundit.Anyironmongerwillcutonetosizeforafewpence.Donotforgettoplaceavesselofwater

    (hot)inthebottomoftheoven.Thisisalwaysnecessaryinagasovenwhenbakingbread,cakesorpastry.

    Itmustnotbeforgottenthatovensarelikechildrentheyneedunderstanding.Thetemperatureofthekitchenandtheoven'snearnesstoawindowordoorwilloftenmakeadifferenceoffiveortenminutesinthetimeneededforbaking.OnegasoventhatIknewneverbakedwellinwinterunlessascreenwasputbeforeittokeepawaydraughts!

    ROLLS.--Ifyoudesiretogetyourbreadmorequicklyitisonlyaquestionofmakingsmallerloaves.Littlerollsmaybecutoutwithalargeegg-cuporsmallpastrycutter,andthesetakeanytimefromtwentyminutestohalfanhour.

    2.EGGBREAD.

    9ozs.finewholemeal,1egg,abare1/2pintmilkandwater,buttersizeofwalnut.

    Putbutterinaqr.qtn.tin(asmallsquare-corneredtinprice6-1/2d.atmostironmongers)andletitremaininhotovenuntilitboils.Wellwhiskegg,andaddtoitthemilkandwater.Siftintothisliquidthewholemeal,stirringallthetime.Pourthisbatterintothehotbuttered

    tin.Bakeinaveryhotovenfor50minutes,thenmovetoacoolerpartforanother50minutes.Whendone,turnoutandstandonendtocool.

    3.GEMBREAD.

    Putintoabasinapintofcoldwater,andbeatitforafewminutesinordertoaerateitasmuchaspossible.Stirgently,butquickly,intothisasmuchfinewholemealaswillmakeabattertheconsistencyofthickcream.Itshouldjustdropoffthespoon.Dropthisbatterintoveryhotgreasedgempans.Bakeforhalfanhourinahotoven.Whendone,standonendtocool.Theymayappeartobealittlehardonfirsttakingoutoftheoven,butwhencooltheyshouldbesoft,lightandspongy.When

    properlymade,theuninitiatedgenerallyrefusetobelievethattheydonotcontaineggsorbaking-powder.

    Therearepropergempans,madeofcastiron(from1s.)forbakingthisbread,andthebestresultsareobtainedbyusingthem.ButwithafavourableovenIhavegotprettygoodresultsfromtheordinarybaking-tinswithdepressions,thekindusedforbakingsmallcakes.Buttheseareathinnermakeandapttoproduceatoughcrust.

    4.HOTWATERROLLS.

    Thisbreadhasaverysweettaste.Itismadebystirringboilingwater

    intoanyquantityofmealrequired,sufficienttoformastiffpaste.Thentakeoutofthebasinontoaboardandkneadquicklywithasmuchmoreflourasisneededtomakeitworkable.Cutitintosmallrollswithalargeegg-cuporsmallvegetablecutter.Thequickerthisisdonethebetter,inordertoretaintheheatofthewater.Bakefrom20to30minutes.

    5.OATCAKE.

    Mixmediumoatmealtoastiffpastewithcoldwater.Addenoughfineoatmealtomakeadough.Rolloutverythinly.Bakeinsheets,orcutintobiscuitswithatumblerorbiscuitcutter.Bakeonthebareovenshelf,sprinkledwithfineoatmeal,untilaverypalebrown.Flourmaybeusedinplaceofthefineoatmeal,asthelatteroftenhasabittertastethatmanypeopleobjectto.Thecauseofthisbitternessisstaleness,butitisnotsonoticeableinthecoarseormediumoatmeal.Freshlygroundoatmealisquitesweet.

    6.RAISINLOAF.

    1lb.finewholemeal,6oz.raisins,2oz.Mapleton'snutter,water.

    Wellwashtheraisins,butdonotstonethemortheloafwillbeheavy.Ifthestonesaredisliked,seedlessraisins,orevensultanas,maybeused,butthelargeraisinsgiveratherbetterresults.Rubthenutterintotheflour,addtheraisins,whichshouldbewelldriedafterwashing,andmixwithenoughwatertoformadoughwhichalmost,butnotquitedropsfromthespoon.Putintoagreasedtin,whichshouldbeveryhot,andbakeinahotovenatfirst.Attheendoftwentyminutestohalfanhourtheloafshouldbeslightlybrowned.Thenmovetoacoolershelf,andbakeuntildone.Testwithaknifeasforordinarycakes.

    Forthisloafasmall,deep,square-corneredtinisrequired(price6-1/2d.),thesameasfortheeggloaf.3ozs.freshdairybuttermaybeusedinplaceofthe2ozs.nutter.

    7.SHORTENEDBREAD.

    Into1lb.wholemealflourrub4ozs.nutteror5ozs.butter.Mixtoastiffdoughwithcoldwater.Kneadlightlybutwell.Shapeintosmallbunsabout1inchthick.Bakeforanhourinamoderateoven.

    II.--SOUPS.

    Soupsareofthreekinds--clearsoups,thicksoups,andpures.Aclearsoupismadebyboilingfruitorvegetables(celery,forexample)untilallthenourishmentisextracted,andthenstrainingofftheclearliquid.Alittlesagoormacaroniisgenerallyaddedandcookedinthis.Whencarrotsandturnipsareused,afewsmallpiecesarecutintodiceorfancyshapes,cookedseparately,andaddedtothestrainedsoup.Thicksoupsalwaysincludesomefarinaceousingredientsforthickening(flour,pea-flour,potato,etc.).Puresarethicksoupscomposedofanyvegetableorvegetablesboiledandrubbedthroughasieve.Thisisdone,alittleat

    atime,withawoodenspoon.Alittleofthehotliquorisaddedtothevegetablefromtimetotimetoassistitthrough.

    1.BARLEYBROTH.

    1carrot,1turnip,4leeksor3smallonions,4sprigsparsley,4stickscelery,1tea-cuppearlbarley,3qts.water.(Thecelerymaybeomittedifdesired,or,wheninseason,1tea-cupgreenpeasmaybesubstituted.)

    Scrubclean(butdonotpeel)thecarrotandturnip.Washcelery,parsley,andbarley.Shredallthevegetablesfinely;putinsaucepanwiththewater.Bringtotheboilandslowlysimmerfor5hours.Addthechoppedparsleyandserve.

    2.CREAMOFBARLEYSOUP.

    MakebarleybrothasinNo.1.Thenstrainitthroughawirestrainer.Squeezeitwell,soastogetthesoupasthickaspossible,butdonotrubthebarleythrough.Skin1/2lb.tomatoes,breakinhalves,andcooktoapulpverygentlyinaclosedsaucepan(don'taddwater).Addtothebarleysoup,boiluponce,andserve.

    Incasesofillness,especiallywherethepatientissufferingfromintestinaltrouble,afterpreparingasabove,strainthroughafinemuslin.Itshouldalsobepreparedwithdistilled,orcleanboiledrain-water.

    3.CLEARCELERYSOUP.

    1headcelery,2tablespoonssago,2qts.water.

    Washthecelery,chopintosmallpieces,andstewinthewaterfor2hours.Strain.Washthesago,addittotheclearliquid,andcookfor1hour.

    Forthosewhopreferathicksoup,pea-flourmaybeadded.Allow1leveltablespoontoeachpintofsoup.Mixwithalittlecoldwater,andaddtotheboilingsoup.Oneortwoonionsmayalsobecookedwiththecelery,ifliked.

    4.CHESTNUTSOUP.

    1lb.chestnuts,1-1/2oz.nutterorbutter,2tablespoonschopped

    parsley,1tablespoonwholemealflour,1-1/2pintswater.

    Firstputonthechestnuts(withoutshellingorpricking)incoldwater,andboilforanhour.Thenremoveshellsandputthenutsinanenamelledsaucepanwiththefat.Fryfor10minutes.Addtheflourgradually,stirringallthetime,thenaddthewater.Cookgentlyforhalfanhour.Lastly,addtheparsley,boilup,andserve.

    Itisratherniceriftheflourisomitted,thenecessarythicknessbeingobtainedbyrubbingthesoupthroughasievebeforeaddingtheparsley.Thosewhodonotobjecttomilkmayuse1pintmilkand1pintwaterinplaceofthe1-1/2pintswater.

    5.FRUITSOUP.

    Fruitsoupsareusedextensivelyabroad,althoughnotmuchheardofinEngland.Buttheymightbetakenatbreakfastwithadvantagebythosevegetarianswhohavegivenuptheuseoftea,coffeeandcocoa,andobjectto,ordislike,milk.Therecipegivenhereisforapplesoup,butpears,plums,etc.,maybecookedinexactlythesameway.

    1lb.apples,1qt.water,sugarandflavouring,1tablespoonsago.

    Washtheapplesandcutintoquarters,butdonotpeelorcore.Putintoasaucepanwiththewaterandsugarandflavouringtotaste.Whensweet,ripeapplescanbeobtained,peoplewithnaturaltasteswillprefernoadditionofanykind.Otherwise,alittlecinnamon,cloves,ortheyellowpartoflemonrindmaybeadded.Stewuntiltheapplesaresoft.Strainthroughasieve,rubbingtheapplepulpthrough,butleavingcores,etc.,behind.Washthesago,addtothestrainedsoup,andboilgentlyfor1hour.Stirnowandthen,asthesagoisapttosticktothepan.

    6.HARICOTBEANSOUP.

    2heapedbreakfast-cupsbeans,2qts.water,3tablespoonschoppedparsleyor1/2lb.tomatoes,nutordairybuttersizeofwalnut,1tablespoonlemonjuice.

    Forthissoupusethesmallwhiteorbrownharicots.Soakovernightin1qt.ofthewater.Inthemorningaddtherestofthewater,andboiluntilsoft.Itmaythenberubbedthroughasieve,butthisisnotimperative.Addthechoppedparsley,thelemonjuice,andthebutter.Boilupandserve.Iftomatopulpispreferredforflavouringinsteadofparsley,skinthetomatoesandcookslowlytopulp(withoutwater)beforeadding.

    7.LENTILSOUP.

    4breakfast-cupslentils,1carrot,1turnip,2onions,4qts.water,4stickscelery,2teaspoonsherbpowder,1tablespoonlemonjuice,1oz.butter.

    Eitherthered,Egyptianlentils,orthegreenGermanlentilsmaybeusedforthissoup.Ifthelatter,soakovernight.Stewthelentilsverygentlyinthewaterfor2hours,takingoffanyscumthatrises.Wellwashthevegetables,slicethem,andaddtothesoup.Stewfor2hoursmore.Thenrubthroughasieve,ornot,aspreferred.Addthelemonjuice,herbpowder,andbutter(nutordairy),andserve.

    8.MACARONISOUP.

    1/2lb.smallmacaroni,2qts.waterorvegetablestock,3/4lb.onionsor1lb.tomatoes.

    Breakthemacaroniintosmallpiecesandaddtothestockwhennearlyboiling.Cookwiththelidoffthesaucepanuntilthemacaroniisswollenandverytender.(Thiswilltakeaboutanhour.)Ifonionsareusedforflavouring,steamseparatelyuntiltender,andaddtosoupjustbeforeserving.Iftomatoesareused,skinandcookslowlytopulp(withoutwater)beforeadding.Ifthevegetablestockisalreadystrongand

    well-flavoured,noadditionofanykindwillbeneeded.

    9.PEASOUP.

    Usesplitpeas,soakovernight,andprepareaccordingtorecipegivenforlentilsoup.

    10.POTATOSOUP.

    Peelthinly2lbs.potatoes.(Aflourykindshouldbeusedforthissoup.)Cutintosmallpieces,andputintoasaucepanwithenoughwatertocoverthem.Addthreelargeonions(sliced),unlesstomatoesarepreferredforflavouring.Bringtotheboil,thensimmeruntilthepotatoesarecookedtoamash.Rubthroughasieveorbeatwithafork.Nowadd3/4pintwateror1pintmilk,andalittlenutmegifliked.Boilupandserve.

    Ifthemilkisomitted,thejuiceandpulpoftwoorthreetomatoesmaybeadded,andtheonionsmaybeleftoutalso.

    11.P.R.SOUP.

    1headcelery,4largetomatoes,4qts.water,4largeEnglishonions,3tablespoonscoarselychoppedparsley.

    ThissoupfiguresofteninthedietsheetofthePhysicalRegenerationistsforgoutyandrheumaticpatients,butinadditiontobeingavaluablemedicineonaccountofitssalts,itisthemostdeliciousclearsoupthatIknowof.Tomake:choptheingredientstodice,coverclosely,andsimmeruntilthequantityofliquidisreducedtoonehalf.

    1.CURRYPOWDER.

    3ozs.corianderseed,2-1/2ozs.tumeric,1oz.blackpepper,1/2oz.lessercardamoms,1/4oz.cinnamon,1/4oz.cuminseed.

    Puttheingredientsintoacoolovenandletthemremainthereallnight.Nextdaypoundthemthoroughlyinamarblemortar,andrubthroughasieve.Putthepowderintoawell-corkedbottle.

    Aspicemachinemaybeusedinsteadofthemortar,butinthatcasethetumericshouldbeobtainedreadypowdered,asitissohardthatitisapttobreakthemachine.Thevariousingredientsaregenerallyonlytobeobtainedfromalargewholesaledruggist.

    2.EGGCURRY.

    1largeonion,1dessertspooncurrypowder,1oz.butterornutter,3hard-boiledeggs,1dessertspoontomatopulp,1teacupwater.

    Shredtheonion,putitinthestew-panwiththebutter,sprinklethecurrypowderover,andfrygentlyuntilquitebrown.Shelltheeggsandcuttheminhalves.Addtheeggs,thetomatopulp,andthewater.Stirwell,andsimmeruntiltheliquidisreducedtoone-half.Thiswilltakeabout15minutes.Servewithplainboiledunpolishedrice.

    3.GERMANLENTILCURRY.

    Usetheingredientsgiven,andproceedexactlythesameasforeggcurry.

    Butinplaceofeggs,take1breakfastcupofcoldcookedGermanlentils(seerecipeforcookinglentils).Usealso2teacupswaterinplaceofthe1,andonly3/4oz.butterornutter.

    4.VEGETABLECURRY.

    UsetheingredientsgivenandproceedthesameasforGermanlentilcurry,usinganycoldsteamedvegetablesinseason.Thebestcurry,accordingtoanIndianauthority,isonemadeofpotatoes,artichokes,carrots,pumpkinandtomatoes.

    hisstaplearticleofdietandthrowingawaytheliquor.Onthecontrary,whenhedoesindulgeinboiledmeat,theliquorisregardedasavaluableasset,andisusedasabasisforsoup.Buthismeatisgenerallyconservativelycooked--thatis,itisbaked,roasted,orgrilled,sothatthejuicesareretained.Ifhehastochoosebetweenthrowingawaythemeatorthewaterinwhichithasbeenboiled,hekeepstheliquor--witness"beef-tea."Forsomeunknownreasonhedoesnotoftentreathisvegetablesinthesameway,andsufferstherebythelossofmuchvaluablefoodmaterial.

    Thevegetarian--beingavowedlyathinkerandapioneer--would,itmightbeimagined,treatwhatisnowoneofhisstaplearticlesofdietatleastascarefullyastheout-of-dateflesh-eater.Butno!Forthemostpart,hisvegetablesareboiled,andwhenthebestpartofthefoodconstituentsandalltheflavourhavebeenextracted,hedinesoffamassofindigestiblefibre--merewastematter--andallowsthe"broth"tobethrowndownthesink,withtheconsequencethatmanyvegetariansarepale,flabbyindividualswhosuccumbtotheslighteststrain,andsufferfromchronicdyspepsia.

    Theremedyissimple.Treatvegetablesasyouusedtotreatmeat.Bakeorstewthemintheirownjuice.(SeerecipeforVegetarianIrishStew.)Attheleast,steamthem.Alittleofthevaluablevegetablesaltsarelostinthesteaming,butnotmuch.Betterstill,useadoubleboilerette.A

    verylittlewaterisputintotheinnerpanandsoonbecomessteam,sothatbythetimethevegetableiscookedithasalldisappeared.

    Noexacttimecanbegivenforcookingvegetables,asthisvarieswithageandfreshness.Theyounger--alwayssupposingithasjustcometomaturity--andfresherthevegetable,thequickeritcooks.

    Itshouldnotbeforgottenthatorthodoxcooksputallgreenandrootvegetables,exceptpotatoes,tocookin_boiling_water.Thisruleshouldnotbeneglectedwhensteamingvegetables--thewatershouldbefastboiling.

    Iwillconcludewithafewremarksaboutpreparinggreens,cauliflowers,

    16.ONIONS.

    Ifonionsarepeeledintheopenairtheywillnotaffecttheeyes.OnlytheSpanishonionsarepleasantasavegetable.TheEnglishonionistoostrongformostpeople.

    Steammedium-sizedonionsfrom45mins.to1hour.Servewithwhitesauce,

    flavouredwithaverylittlemaceornutmeg,ifliked.Forbakedonions,firststeamfor30minutesandthenbakefor30minutes.Putnutterorbutteroneachonion.Cookuntilbrown.Onionsforfryingshouldbeslicedandfloured.Fryfor5or6minutesinverylittlefat.Thisisbestdoneinacoveredstew-pan.Drainonkitchenpaper.

    17.PARSNIPS.

    Steam.Coldsteamedparsnipsarenicefried.Sprinklewithchoppedparsley,andserve.

    18.POTATOES.

    Scrubwellandsteam,eitherwithorwithoutpeeling.Ifpeeled,thisshouldbedoneverythinly,asthegreaterpartofthevaluablepotashsaltsliejustundertheskin.

    Successdependsupongettingthefattherighttemperature.Itmustberememberedthatfatandoildonotbubblewhentheyboil.Theybubblejustbeforeboiling.Assoonastheybecomequitestilltheyboil.Averyfaintbluesmokenowarises.Whenthefatactuallysmokes,itisburningandspoilt.

    stockmaybeusedinsteadofthewater.

    THICK.--Ifthickgravybedesired,mixadessertspoonfulwholemealflourwithalittlecoldwater.Addtheboilingstocktothis.Returntosaucepanandboilfor3minutes.Addasmallpieceofbutterjustbeforeserving.

    Rubthelemonrindwellwiththesugar.Putthesugarintoasaucepanwithasmuchwaterasitwilljustabsorb.Boiltoaclearsyrup.Addthelemonjuice.Makehot,butdonotboil.

    5.TOMATOSAUCE.

    Pourboilingwateronthetomatoes,allowtostandfor1minute,afterwhichtheskinsmaybeeasilyremoved.Breakthetomatoes(donotcut)andputintoaclosely-coveredsaucepan.Putononesideoftherange,oranasbestosmatoveraverylowgasring,andallowtocookslowlytopulp.Serve.

    Thissimplerecipemakesthemostdelicioussauceforthosewhoappreciatetheundilutedflavourofthetomato.Butagoodsaucemaybemadebyallowing1teacupwaterorcarrotstocktoeachteacupofpulp,boilingupandthickeningwithwholemealflour.Alittlebuttermaybeaddedjustbeforeserving.

    6.WHITESAUCE.Allow1leveldessertspooncornflourto1/2pintmilk.Mixthecornflourwithaverylittlecoldwaterinabasin.Pourtheboilingmilkintothis,stirringallthetime.Returntosaucepanandboil5minutes.Addasmallpieceofbutterjustbeforeserving.

    7.BROWNING,FORGRAVIESANDSAUCES.

    Put2ozs.lumpsugarinsaucepanwithasmuchwaterasitwilljustabsorb.Boiltoaclearsyrup,andthensimmerverygently,stirringallthetime,untilitisaverydarkbrown,almostblack.Itmustnotburnor

    theflavourwillbespoilt.Thenaddapintofwater,boilforafewminutes.Putintoatightly-corkedbottleanduseasrequired.

    VIII.--EGGCOOKERY.

    Manyvegetariansdiscardtheuseofeggsandmilkforprinciple'ssake,butthemajoritystillfindthemnecessaryasahalf-wayhouse.Butnoeggsatallareinfinitelytobepreferredtoanybutrealnew-laideggs.Thecommercial"cooking-egg"isanunwholesomeabomination.

    1.BOILEDEGGSFORINVALIDS.

    Puttheeggonincoldwater.Assoonasitboilstakethesaucepanoffthefireandstandononesidefor5minutes.Attheendofthistimetheeggwillbefoundtobeverylightly,butthoroughly,cooked.

    Boileggsfor20minutes.Removeshells.Cutinhalvesandtakeouttheyolks.Wellmashyolkswithaverylittlefreshbutter,melted,andcurrypowdertotaste.Stuffthewhiteswiththemixture,joinhalvestogether,

    andarrangeinadishofwatercress.

    5.SCRAMBLEDEGGANDTOMATO.

    Skinthetomatoesandcooktopulpasintheprecedingrecipe.Beattheeggandstiritintothehottomato.Cookuntiljustbeginningtoset.

    6.OMELET,PLAIN.

    Whisktheeggoreggslightlytoafroth.Putenoughbutterinthefrying-pantojustcoverwhenmelted.Whenthisishot,pourtheeggsinto

    it,andstirgentlywithawoodenspoonuntilitbeginstoset.Foldoverandserve.

    7.SAVOURYOMELET.

    Pastryshouldusuallybemadewithaveryfinewholemealflour,suchasthe"Nu-Era."Therearetimes,however,whenconcessionstoguests,etc.,demandtheuseofwhiteflour.Insuchanevent,useagoodbrandofhouseholdflour.Themorerefinedthekind,thelessnutrimentitcontains.Neveraddbaking-powdersofanykind.

    Thesecretofmakinggoodpastryliesinlightlymixingwithacoolhand.Ifaspoonmustbeused,letitbeawoodenone.Rollinonedirection

    only,awayfromtheperson.Ifyoumustgiveabackwardroll,letitbeonlyonce.Aboveall,rolllightlyandlittle.Thequickerthepastryismadethebetter.

    2.PUFFPASTE.

    1/2lb.fresh-butteror6ozs.Mapleton'snutter,1yolkofeggor1teaspoonlemonjuice,1/2lb.flour.

    Ifbutterisused,wrapitinacleanclothandsqueezewelltogetridofwater.Beattheyolkofeggslightly.Puttheflouronthepasteboardinaheap.Makeaholeinthecentreandputintheyolkofeggorlemon

    juice,andabout1tablespoonofwater.Theamountofwaterwillvaryslightlyaccordingtothekindofflour,andlesswillberequiredifeggisusedinsteadoflemonjuice,butaddenoughtomakearatherstiffpaste.Mixlightlywiththefingersandkneaduntilthepasteisniceandworkable.Butdoitquickly!

    Next,rolloutthepastetoabout1/4inchthickness.Putallthebutterornutterinthecentreofthispasteandwrapitupneatlytherein.Standinacoolplacefor15minutes.Next,rollitoutonce,andfolditover,rollitoutagainandfolditover.Dothislightly.Putitawayagainfor15minutes.Repeatthisseventimes!(Idonotthinkmanyfood-reformerswillhavethetimeorinclinationtorepeattheaboveperformanceoften.Speakingformyself,Ihaveonlydoneitonce.Butasnoinstructions

    To1largeSevilleorange(ifsmall,count3as2)allow3/4lb.canesugarand3/4pintwater.Washandbrushoranges,removepips,cutpeelintofineshreds(betterstill,putthroughamincer).Putalltosoakinthewaterfor24hours.Boiluntilrindsaresoft.Standanother24hours.Addthesugar,andboiluntilmarmaladejellies.Ifpreferred,halfsweetandhalfSevilleorangesmaybeused.

    5.VEGETABLEMARROWJAM.

    Peelthemarrow,removeseeds,andcutintodice.Toeachpoundofmarrowallow1lb.canesugar;toevery3lbs.ofmarrowallowthejuiceandgratedyellowpartofrindof1lemonand1/2alevelteaspoongroundginger.Putthemarrowintothepreservingpan,sprinklewellwithsomeofthesugar,andstandfor12hours.Addtherestofthesugar,andboilslowlyfor2hours.Addthelemonjuice,rind,andgingerattheendof1-1/2hours.

    XII.--SALADS,BEVERAGES,&c.

    1.SALAD.

    Lettuce,tomatoes,mustardandcress,cucumber,oliveorwalnutoil,lemonjuice.

    Rubthelumpsofsugaronthelemonuntiltheyarebrightyellowincolourandquitewet.(Itisthefragrantjuicecontainedintheyellowsurfaceofthelemonrindthatgivesthedeliciouslemonflavourwithoutacidity.)Mixthebarleytoathinpastewithalittlecoldwater.Thisispouredintoapintofboilingwater,wellstirreduntilitcomestotheboilagainandthenlefttoboilforfiveminutes,afterwhichitisdone.Addthesugarandlemonjuice.

    TakeonepartofHominyand2-1/2partsofwater.Havethewaterboiling;

    addthehominyandboilforfifteenminutes;keepstirringtokeepfromburning.

    3.BROWNGRAVY.

    Putthericeoninthewaterandbringgraduallytotheboil.Boilhardforfiveminutes,stirringonceortwice.Drawittosideofstove,whereitiscomparativelycool,or,ifagasstoveisused,putthesaucepanon

    anasbestosmatandturnthegasaslowaspossible.Thewatershouldnowgraduallysteamaway,leavingthericedryandwellcooked.
