kind of service they are offering to the community.

We are fortunate in San marcos unified School District
that in recent years we have been able to tell an incred-
ible story of academic success. one thing we can’t brag
about so much is the physical state of many of our older
campuses. While the district maintenance staff has
done a commendable job keeping these campuses in
serviceable condition, the school board has recognized
that the time has come to take action and improve
those campuses that need it.

For most of us, September is the official first month of a new school year. Sure, the weather still calls us to ‘Summer’, but our schedules call us out for “Fall”. Sports seasons have begun. Homework is probably already start-ing to pile up. Back to School events and fundraisers are filling the calendar. Yes, ‘real life’ is starting to settle in. Summer is technically over and it’s time to get back to reality – back to work, to early mornings, to packing lunches and to late nights of homework. Yes, it’s time to let go of the lazy days of summer and get back into a more scheduled routine.
Yet, ‘back to the grind’ is also a fresh start for a lot of people this fall. I’m amazed to discover this month how much new stuff is going on in and around San Elijo Hills. In this issue of The Fountain, you’ll read about three different families who are starting their own businesses. Our People in the Neighborhood spotlight
is on the Elsdons, a young couple of teachers who are back to school this month, but in a new neighborhood and expecting a new baby. You’ll also learn about some new propositions on the November ballot that mean new things for our City and schools.
All of these new beginnings give me hope about the start of this ‘new year’. Just like our kids who get to look forward to new classes, new teachers and new friends, we, too, can see fall as a new opportunity.
Instead of going back to the old grind. How about taking a new approach to fall. Create a new ‘grind’ for yourself and your family. Meet some new people. Try out some new businesses….a new salon, a new restaurant, a new shop. Schedule a new family activity. Find a few new things to add to the mix this fall and introduce some new excitement into your life. You never know where it might lead. It just might be the start of a whole new path.

San elijo Hills Community Garden
There will soon be a brand new way to connect with your neighbors. The HOA Board recently voted to approve the creation of a Community Garden here in San Elijo Hills. The garden will be located at corner of Baylor Drive and Questhaven Road – across from the park and will be a great way to meet neighbors and share in the joy of gardening. The garden will be designed to complement the trail head space and not impede any of the trail paths. If you’re interested in having an area in the garden, a small fee of $35/year will get you your own des-ignated space in the raised planter area as well as some starter seeds. The community garden will not be maintained by the HOA, but rather is something that will be self-run with volunteer homeowners keeping an eye on things. It’s just one more opportunity for neighbors to get together, get to know each other, and hopefully, grow some tasty food! The plots are limited in number, so they are available on a first-come, first-served basis. There is also a need for Garden Captains for each area just to keep an eye on things and help with the coordination. If you’re interested in learning more, contact Jean Salvia at Walter’s Management at (760) 431-2522.

clubS & eVenTS The Hills Family Dentistry Opens in September
It’s pretty exciting to have a den-tist office open right here in the neigh-borhood. It’s even more exciting when you get to know the people behind the practice and the kind of service they are offering to the community.
Derek and Shelly Martin are the faces behind The Hills Family Dentistry. They purchased the Marketwalk unit because it offered them not only a wonderful home for their family, but also the opportunity to open their own dental practice on the first floor. They moved into the unit several months ago and have been busy finishing up the office. The Hills Family Dentistry will officially open its doors on September 20 and the Martins couldn’t be more excited.
Derek attended the Arizona School of Dentistry & Oral Health. He loved the school because it was new and offered a lot of very unique opportunities for him. Not only did they work with the most advanced technology and equipment. He was also able to work in public health at a homeless shelter, which is where Derek began to see how his skills in dentistry could be used to help others.
Derek is very much focused on caring for people. He has always hated the feeling that some dental practices create with their sales approach and never-ending ‘upgrades’. Derek sees dentistry as healthcare and as such he takes the approach of treating people like family and caring for their health. Derek wants to create something different - a dental practice that thrives on being part of a tight-knit community or as Derek puts it, “a small practice with big impact!”
The Hills Family Dentistry has invested in equipment and technol-ogy that allows them to offer very comprehensive services from cavity detection to restorations. He can create a crown for you there in the office the same day – no more sending it off to a lab and wearing a temporary for week. And, imagine how handy it is to have a dentist in the neighbor-hood when you have one of those unexpected dental emergencies.
If you’re looking for a dentist that is caring and can take care of every member of your family, stop in and meet Derek Martin & his family. Get to know your neighborhood dentist and make dental health a priority for your entire family.
You can reach The Hills Family Dentistry at (760) 798-7166 or www.thehillsfamilydentistry.com. They are accepting phone calls and scheduling appointments for their opening day.
blackstone Pizzamany of you already know
mike and Sherry middleton and their family. They have been active members of our communi-ty here in San elijo Hills for many years. mike has always loved to cook and if you’re a friend or neighbor, you have probably
already experienced his amaz-ing pizza-making skills. Well, mike and Sherry just celebrated the opening of their very own pizza place – blackstone Pizza.
It all started when they got tired of eating pizzas from the big chains – the frozen cheese, pre-made sauces and mushy crusts. They started cooking piz-zas at home and eventually they cooked so many pizzas that their pizza stone turned black as it became more seasoned. mike’s pizzas were shared with family and friends who said no pizza compared to the ones they had from the ‘black stone’ – and so, blackstone Pizza was born.
blackstone Pizza is located at the corner of e. mission and mulberry - just blocks away from mission Hills High School in San marcos. If you don’t normally venture over there, it’s worth the drive. The décor is fun and the food is so fresh! You can custom-ize your own pizza or choose from a unique selection of specialty pizzas such as the Colorblind, The Grrizzz, The Street Taco or The Whole Schmear. You’ll also find great salads, sandwiches and sides.
Grab your family and neigh-bors and head over for some good food in a relaxed, friendly environment. blackstone Pizza also delivers here in San elijo Hills, so check them out at www.blackstonepizza.com and support your neighbors in their newest endeavor. You can reach them at (760) 798-2246 or 574 e mission

This past month, the San Elijo FC GU13 team brought home the very first set of hardware for San Elijo FC at the Dave Shelton Memorial Cup. The girls played in a very tough Silver bracket and put together three solid wins to advance to the Final before losing to a very tough Oceanside Breakers team. “This is very exciting for our girls and the club. For this to happen in such a short period of time, and in our inaugural season, is just awesome for not only this team, but for all the kids and parents who represent our club. I have a feeling this is the first of many great things in the future for our players and our club.” said Chris Fitzsimmons Founder and Director of San Elijo FC.
Congratulations San Elijo FC GU13! 2010 Dave Shelton Memorial Cup Finalists!

on your doorstepThree generations Travel to Peru
Earlier this summer, I had an amazing travel opportunity. As part of my junior year travel proj-ect, which is a requirement at my school (Pacific Ridge School), I planned a trip and traveled to Cusco, Peru for two weeks with my mom (Karen Smith, who many of you know as Publisher of The Fountain) and my grandmother (Ralene Friend of Palm Desert). Traveling as three genera-tions, we had the opportunity to volunteer with children from an orphanage in Cusco for 10 days while living with a host family. From there, we finished our trip with a four-day hike on the Inca Trail to Machu Picchu. It was such an amazing experience for all of us.
My experience included outlining the trip, applying for a grant and making a presentation to a grant committee at my school to secure funding assistance for my trip. I was also required to share the experience back at school by showcasing my trip in a “Travel Museum” and by creating a blog for the trip (http://thetrip-peru2010.blogspot.com/). Just the process itself was a learning experience. Nothing, however, would compare to the lessons learned and the experience gained staying in Peru, spending time with the children, and then facing the physical challenges of the hike.
The children we worked with live in an orphanage of about 50 children. The facilities where they attend school are very run-down and the children have very little. Each day at the school, we were expected to provide a lesson or activity, but there were no supplies, so we were forced to get creative and think of ways to teach concepts without all of the proper tools. Of course, we also purchased a lot of supplies for the school and gave the children the opportunity to have fun with things they don’t normally have available to them – from colored paper to crayons and markers. The children were grate-ful for anything we brought to them each day, but what they enjoyed most from us was our time and attention.
The children were also full of energy and love. They were always happy to see us and to spend time with us. You could tell how much they enjoyed one-on-one time with someone.
The home stay was an incredible experience because we got to see what it would be like to live in Cusco. We got much more comfortable with Spanish and learned a lot about life in Peru. Even in the nicer parts of town, hot water is not often available. Internet access is slow and cumbersome and transportation is always a challenge. The food is very different – with lunch being the main meal, soup as an appetizer and potatoes and rice at most meals.
The four-day Inca trail is a very challenging hike – especially if you’re sick, which I was for the entire hike. My mother, grandmother and myself each had moments where we were at the end of our rope. We didn’t think we could make it, but somehow we all sur-vived and the stories we have gathered will be stories we will tell for years to come.
This experience was an amazing opportunity. Many people from the community supported me as sponsors and I thank each of them for their support. In addition, I thank the grant committee at Pacific
Ridge School for supporting the amazing journey. I also thank my mother and grandmother for being brave enough to leave home for two weeks and explore another part of the world. Together, we experienced being uncom-fortable and even pushing our own physical limitations to learn how other people live, to see historic sites, and to make a difference in the lives of some very special children in Peru.

We are fortunate in San Marcos Unified School District that in recent years we have been able to tell an incredible story of academic success. Our district-wide API score was 836 in the 08-09 school year, one of only four unified districts in the coun-ty over 800. Ten of 11 elementary schools were over 800, including San Elijo Elementary School, which was in the top 10 countywide, and our high schools joined a relatively small
group of elite public high schools with scores over 800. The 09-10 test scores are just now coming in and look even better, so it is a story we will be able to continue to tell.
One thing we can’t brag about so much is the physical state of many of our older campuses. While the district maintenance staff has done a commendable job keeping these campuses in serviceable condition, the school board has recognized that the time has come to take action and improve those campuses that need it. On July 12, 2010, we approved the placement of a general obligation bond on the November 2010 ballot to raise up to $287 million for the modernization of many of the campuses in our district, including San Marcos High School. The bal-lot measure will be known as Proposition K.
While every single school in the district will benefit in some way from Proposition K – the projects range from minor technology upgrades and shade structures, to major building projects – the total replacement of San Marcos High School is a priority. The school, which will celebrate its 50th anniversary next year, opened its doors when San Marcos was primarily a small agricultural town, with a population of less than 4,000. It was built to accommodate 1,600 students, and now holds about 2,300, thanks to the addition of several portable classrooms. The school is expected to have 3,000 students by 2017.
If Proposition K is passed in November, San Marcos High School will have a new campus with state-of-the-art facilities. The proposed design of the new campus is nearly complete, and architects have designed a high school campus with technology, sustainability, and growth in mind. The new campus at San Marcos High, if built, will have modern science and computer labs, support 21st Century learners for college and career, and everything else we expect from a new comprehensive high school, including a new performing arts center and gym. It will be a tremendous asset to the entire community.
Repair and Rebuild San Marcos Schools: Proposition Kby randy Walton, SmuSD board member & resident of San elijo Hills
Proposition K is expected to cost property owners approximately $44.00 per $100,000.00 of the assessed [not market] value of their property annu-ally. It’s important to point out that all money raised by the bond will stay local and can only be used for construction purposes. In fact, upon passage, a citizens’ oversight committee will be created to oversee the use of the bond funds, which must be used for campus construction only. The state is pro-hibited by law from taking any bond money away, and no bond funds can be used for school operations (e.g. administration, salaries, etc.).
While the prospects of local school improvements are very exciting, it won’t happen if local voters do not approve Proposition K by a margin of 55% or greater on November 2, 2010. For that we need the dedication and involvement of voters throughout the district, including those in San Elijo Hills, Old Creek Ranch, and every other neighborhood within the San Marcos Unified School District boundaries.
A campaign committee has been formed for this purpose and is looking for volunteers to help with the effort, which will include walking neighbor-hoods, posting signs, making calls, and hosting informational events. If you’ve never been politically active before, this is a great time to start. Your help is needed and appreciated.
To learn more about Proposition K, including frequently asked ques-tions, and to learn how you can help, please visit www.YesonKforKids.org or call (760) 571-5511. If you would like to contact me personally, please email me at [email protected]. I welcome the opportunity to discuss it with you.

CHrIS orlAnDo: CITY CounCIl Earlier this year, I wrote about the more than $24 million that the State of California is taking from the City of San Marcos to help address the state’s budget mess. While the constitutionality of this raid of local funds is being fought in the courts, cities across the state are coming
together to support a measure on the November ballot that would prevent the state from taking from local coffers to cover its own budget shortfalls. The measure, Proposition 22, will help keep local money here in San Marcos.
Proposition 22, the Local Taxpayer, Public Safety and Transportation Protection Act, would revoke the state’s ability to borrow from local government prop-erty tax funds; prohibit the state from borrowing Proposition 42 funds (gas tax), which voters have dedi-cated to transportation and mass transit, and prevent the state from stealing redevelopment funds from local cities. In addition, the measure would further prevent the state from redirecting or borrowing from other rev-enue sources established to pay for public transit or transportation projects.
The $24 million the state took from San Marcos came directly from the city’s redevelopment agency. It is the fund that is used to build new parks,
Proposition 22 Seeks to Protect Local Funds
add infrastructure and jumpstart redevelopment projects that renew aging parts of the city. The state’s take could mean the delay of important projects such as the building of roads and infrastructure for the planned Creek District and the construction of South Lake Park. While the city is working to keep these and other projects on track, the threat of additional raids by the state
looms as the budget debacle in Sacramento continues. While voters, recognizing the need to protect local
funds, have resoundingly approved measures similar to Proposition 22 in the past, Sacramento has continually taken advantage of loopholes in the laws to reach into the coffers of local government. Proposition 22 will close those loopholes and add additional constitutional and other provisions to keep the state out of the pocket of local government. Specifically, the measure will protect local funding for police and fire services, road repair and maintenance, congestion relief, parks and other amenities as wells as protect resources for projects that revitalize our community and spur economic development.
It is always difficult to wade through the alphabet soup of initiatives and propositions that make their way onto the ballot each election. This November, Proposition
22 is one measure that deserves special consideration. Its passage would directly benefit the City of San Marcos and help keep funding for road improvements, parks, and other vital infrastructure intact.

people in your neighborhood
Ashley and Graham recently moved into the Village Square neighborhood in San Elijo Hills. Ashley grew up in La Costa and Graham in Encinitas, but they didn’t meet until some college friends introduced them to each other. On July 4, 2009, they married and have started their new life together as a family.
It’s back to school time for Ashley and Graham. They are both in the education field as teachers. Graham teaches Physical Education and coaches at Pacific Ridge School in Carlsbad. He has served as Head Coach of the Upper School Boys JV Lacrosse team and as assistant coach for the Boys Varsity team, as well as other sports in this new and growing school. Graham grew up playing a variety of sports and went on to play at Sonoma State where he received a variety of awards and honors. He loves working with middle and high school age kids.
Ashley, on the other hand, spends her days with the little ones. She is a kindergarten teacher at Carrillo Elementary. She loves working with chil-dren and says she has the ‘best job ever!’ As a public school teacher, she rides the roller coaster of cutbacks each year, crossing her fingers that her job will survive and, thankfully, each year things manage to work out. Ashley loves what she does and being at Carrillo is great!
Graham and Ashley enjoy being out-doors. They love biking and are also now loving the hiking trails of San Elijo Hills. When Graham finds free time, he golfs and participates in an adult men’s lacrosse league. Ashley enjoys going to the beach and time with friends. They also love cooking and just spending time together at home. Ashley and Graham are both thrilled to be living in San Elijo Hills and to be so close to work and to their friends nearby.
Ashley and Graham are expecting their first baby around Valentine’s Day next year. They are so excited to be starting their family
and to be living in such a great community. Be sure and say hello when you see them out and about in the Town Square or around the trails.

school news
The start of a school year brings renewed visions of achievement and excitement for a new beginning and chance to set goals for a successful year. New hopes and old dreams surface, leading us to examine what it will take to have our students be the best they can be both in and out of the classroom. One of the things that we know about the facts that lead to success for each student is that learning is improved and schools are happier places when there is cooperation between teachers and parents.
Research shows clearly that that there are many benefits that result from positive school-home cooperation and communication. Numerous studies have pointed to increased interest in learning, enhanced social adjustment, and improved student behavior that result when there is positive communi-cation, cooperation and support between parents and teachers.
The foundation on which parent-teacher cooperation is based results when there is open two-way communication, mutual respect for the role of each person, and an acknowledgement that a partnership has been created when adults nurture and share the responsibility for the development of the students. With these factors in mind, it is essential that every effort be made to work toward a relationship beneficial for your student. Your student’s school whether it is Elementary, Middle School, or High School is urging their parents take the initiative in getting to know the teachers who will play such a key role in the education and success of your students.
As parents, most of you are very busy and have a lot of demands and very full schedules. Most of our students come from homes where both parents hold outside jobs, or where there is only one parent present in the house-hold- and that person may be required to work more than one job in order to meet the essential needs of the family. Under the easiest of circumstances, time is of the essence. But parents are urged to establish priorities which will enable them to get to know their student’s teacher.
The following are offered as guidelines for our parents:
As your student’s parent and chief advocate, take the first step to get acquainted with the teachers with whom your student spends their school day. In this electronic age it can be done very easily over the internet via e-mail or via the traditional phone call which is not obsolete yet. Be sure to attend any before school or the traditional Back-To-School events so you can put a name and face together as you talk with your student about their day.
• Discuss with your student’s teacher the goals and expectations you have for the year. Share pertinent and relevant information about your stu-dent’s interests, health issues, limitations, or specific needs- Knowing that such information will be held in professional confidence.
• Discuss arrangements for future communications. If grades or prog-ress reports are of significant concerns, discuss communicating via the electronic gradebook that is present in most schools today
An important part of getting to know your student’s teachers embraces knowledge of the background education and preparation that has brought that teacher to your student’s classroom. Every teacher has experienced at least four or five years of university education which includes subject area learning as well as methods of teaching. Many teachers have advanced degrees, and all are required to continue their education for as long as they teach in order to stay informed on new topics as the knowledge base con-tinues to expand.
Learning happens when parents and teachers know each other, work cooperatively, and have an open communication line to nurture the develop-ment of the student they share throughout the school year. The exchange of information between parents and teachers can only be beneficial. The more you know about your student’s education and the more involved you become, the greater the opportunities for success become.
Please know that your school is ready to help our parents and teachers become partners for the good of learning- “We are ALL in This Together”. Please contact your school and let us work together to make this a great year for your student and your family.

In addition, we will be selling overstocked spirit wear at Flag Salute once per month, usually on the last Friday of the month. Look for the spirit wear flyer in your child’s Wednesday envelope. As a reminder, students are encouraged to show their school spirit every Friday by wearing their SEES spirit wear or school colors of black, gold and white.

Welcome Back to School! On August 30, San Elijo Elementary School opens for its fifth year. Enrollment continues to rise at all grade levels as we welcome over 1100 Kindergarten through fifth graders. SEES welcomes several new teachers to its staff as well.
The 2010/2011 school year will be an opportunity to continue all of the wonderful programs previously funded by our PTO including, technology, science lab, music, art and Eagle Play. With support from the parent com-munity, SEES will still foster academic success and many extracurricular endeavors.
Staff and parents are invited to “tell their higher education stories” as we implement an Are you on PACE? for college culture at our school. It’s never too early to start thinking about higher education possibilities and goals. The San Marcos Unified School District, in partnership with Cal State San Marcos, offers guaranteed admission at CSUSM to graduating
seniors at our high schools who complete certain college prep coursework. This PACE (Partners Advancing College Education) promise also includes financial support for qualifying graduates. We know that our SEES students will SOAR off to college in the future so are committed to planting those seeds early.
As always, our state test scores continue to indicate the dedication and talent of our amazing instructional and support staff. We look forward to sharing those results with the community when they are released publicly. SEES students SOARed academically last year as we know they will again. For up to date information about all of our programs and opportunities, visit our website often at www.sanelijoelementary.org.
Here’s to a great 5th year in the community and thank you for your continued support for our children!

Tricky Techniques for Finding Creative Storage Space in Your Home
Since many of us are staying in our homes longer these days, there’s never a shortage of people looking to capitalize on “using what they’ve got” within an existing space. The challenge is to find a place
for everything and everything in its place, without your quarters looking like a well-stoked resale shop. If you’ve already had a garage sale, donated to charity, passed along to family and friends, yet still have stuff to store, it’s time to get creative. But don’t worry: this doesn’t have to be a difficult proposition; it just requires some imagination.
In the kitchen, there are a few tricks you can use to maximize the square footage of what you already have. Find some large, lightweight decorative contain-ers to stack above kitchen cabinetry; paper-covered hatboxes are inexpensive and usually have patterns that compliment culinary spaces. This is a great way to store bulky yet light entertaining items such as paper plates and cutlery, seasonal decorations, plastic picnic ware, specialty cake pans, and other hostess accoutrements that aren’t in everyday use. Next, open your cabinets and take stock – Do most of your items only stack so high, with inches of space before the next shelf starts? We had this problem, and didn’t want to have plates teetering precariously in tall piles, so I took measure-ments and had an extra shelf cut for each cabinet in my kitchen. I also put in movable wire shelving; now our different-sized bowls and plates coexist in peace. When re-arranging upper kitchen cabinetry, however, make sure that there’s a mix of weighty and weightless goods – cabinetry can only hold a certain amount, and will collapse if over-stocked. Another great storage spot for excess and oversize pans is your oven or microwave, when not in use. Of course, you’d have to remove items before cooking, which isn’t convenient for everyone, but if you’re a home chef with an assortment of oddly-shaped baking sheets, then the oven is fair game.
Most of us lament the lack of space in our closets; see if it isn’t possible to hang a multiple hook or pocket organizer either on the door itself or the wall the door closes towards. There is usually at least three inches deep of space the size of the entire door that can be capitalized upon. Try mounting a floating shelf above the door frame as well. In a master closet, this is a great niche for stacking shoe boxes or freshly-washed master bathroom towels.
Got luggage? Normally, most travelers store it nested; one piece inside the next as their size increases. If your family doesn’t travel as much as you’d like, however, suitcases are an ingenious option for stowing seasonal clothes. They’re neat, stack well, are easy to unpack, and unlike most plastic contain-ers, breathe so that items don’t get “stale” while tucked away. Large tote bags and purses are also a quick way to store smaller accessories such as clutches,
scarves and hosiery. In the bedroom, you don’t need a captain’s bed to
hide away extra stuff. Not only are there storage bags and plastic containers designed to slide under where you sleep, but you can get bed risers to make this space taller (elevate with care, though – if your kids use their mattress as a jumpy, things may not be secure enough for this option). If there’s furniture pieces with extended legs, such as a delicate bedside table, consider placing a woven basket or leather box in the open space underneath for excess objects.
Floating shelves, as previously mentioned, are incredibly versatile for creating storage where there was none before. Any windows that don’t have a treat-ment designed to make the room look taller, such as a valance, are a great, unexpected place to hang floating shelving. It will create a look with some architecture and substance. For rooms lacking crown molding, mounting wide shelving 12 to 18” below ceiling height not only creates an opportunity to display a large selec-
tion of “smalls,” (i.e., plates, trophies, figurines), but it also adds structure to a space. Floating shelves are also handy in corridors, halls and stairwells. When mixed in with framed artwork, this creates an artistic yet practical way to both gather and display collectibles.
Ultimately, every dwelling has unique opportunities to increase its stor-age potential. If you scan through home décor magazines, even the most posh residence can have quirky collectible solutions, whether it’s an entire room full of built-ins, or antiques re-purposed as functional containers. Walk around your house and access those missed opportunities for sneaky square foot usage, both hidden away and in plain sight. What room do you have, and what do you own that can be used in that space? Armed with an open mind and a skillful eye, any abode can rise about its size and be a more functional setting for all who live there.

Ask The Doctor....
Do you have a health-related question for the doctor?
Take advantage of a little free ADVICe! email [email protected] and the physicians at Palomar Pomerado Health will provide an answer for you here in The fountain.
i’ve been told by my doctor to lose weight because of high cholesterol and high blood pressure. i’ve also been told i have pre-diabetes. i’ve tried dieting and nothing seems to last. i don’t have the money to join another diet program and am so worried and frustrated. what can i do? O. g.
many diet plans can help people lose weight for a while, how-ever, unless you make permanent changes to your lifestyle, which includes food choices and physical activity, chances are small that weight loss will be sustained. Additionally, as our lifestyles become more and more sedentary, it is much easier to gain weight. Start by focusing on two or three changes that you can make and stay with them. These changes can include: drinking water instead of sodas and juices, choosing fresh fruit to snack on instead of chips, crack-ers and cookies, or leaving food on your plate/taking smaller por-tions. be sure to think about not only what you eat, but why you eat. eating because of emotional reasons such as stress, boredom and depression typically lead to weight gain. making and sustaining diet changes can make a very big difference in your risk for heart attacks, strokes and diabetes as well as other disabling and chronic diseases.
my doctor told me to start exercising more to help with weight control, but my knees bother me and it’s hard to walk because of that. i know exercise is important, but what other exercises can help me lose weight? T. r.
Your doctor is right. The less active we are, the more likely we are to gain weight and additionally, this leads to muscle wasting which further lowers our metabolism (calorie burning rate). If walk-ing is a problem, there are other very good ways to exercise. If you have access to a pool, water exercises with pool weights are effec-tive and take the pressure off of your knees. Armchair aerobic videos are available that are designed especially for those who need to sit while exercising. exercise bicycles and rowing machines are also options for those who can’t stand or walk. However, depending on your physical condition, it would be beneficial to visit with a physical therapist for specific advice on the safest and most effective exercises to help with fitness and avoid further injury. expert advice in exercise can be very valuable and help you get started. As with diet changes, exercise plans must be realistic and sustainable to provide lasting benefits, including weight management, lower risk of diabetes, and heart disease.
Diet Changes: Where do I start? An important part of managing weight is deciding when, what, and
how much to eat. Everyone has different likes, dislikes, and habits. Different meal plans will suit different people.
Here are some basic meal planning facts and tips to help you get started:
• Eating at regular times – Skipping meals or “grazing” means trouble!
• Drink water, low calorie beverages – add in some black or green tea!
• Prepare raw vegetables ahead of time so they are ready when the urge to snack hits.
• Keep the fruit bowl on the table or cut up in the refrigerator. You will be more likely to achieve your target of three to five servings per day.
• Regular physical activity will improve weight management…discuss with your doctor.
• NO eating in front of screens, in the car, or anywhere else where you are not aware of what is really being consumed!
• One half of your plate should be covered with vegetables. They are very high in nutrients and low in calories.
• One quarter of your plate should be covered with starchy foods. Choose breads and cereals, rice, pasta or noodles at every meal. Starchy foods are broken down into glucose that your body needs for energy.
• One quarter of your plate should be covered with protein. Include fish, lean meats, or eggs as part of your meal.
• For carbohydrates (starch and fruit): Choose an amount the size of one to two fists.
• For protein: Choose an amount the size of the palm of the hand, and the thickness of the little finger.
• For vegetables: Choose as much as can be held in both hands. Choose low-carbohydrate vegetables (e.g. green or yellow beans, broccoli, lettuce).
• For fat: Limit fat to an amount the size of the tip of your thumb.

business spotlight
‘Pistachio’ has officially opened its doors. If you haven’t stopped by the day spa yet, stop in and take a peek. They’re located at 1691 Melrose Drive next to Mariah’s restaurant. Pistachio offers a full range of services for the entire family: From haircuts to color and specialty hair and skin treatments, you’ll find very skilled professionals doing what they do best at Pistachio.
The concept for Pistachio has been under development for several years -- even longer when you consider that it has been a long-time dream of co-owner, Lucy Hatefi. To finally see it come alive is a thrill for everyone involved.
A mother of two very young girls, Lucy has been in the beauty indus-try for over 15 years. She’s a color specialist herself and when you come into the studio, you’ll most likely find her busy working on her clients. For the last four years, Lucy and her husband, Rod, have been planning their own salon, educating themselves and doing all the research. When they finally found the right location, they knew that now was the time. Rod’s brother Azin has also joined them as marketing director, which makes the new ven-ture a true family operation.
Pistachio raises the bar by offering an environment that is more like a day spa you would find in Beverly Hills than the typical North County salon. When you enter, you’ll find the latest equipment supplied by high-end manufacturers such as Takara Belmont. It is with these tools and furnish-ings that Pistachio delivers the latest in hair cutting and coloring tech-
niques and skin care. There are 20 stylist stations and a fully equipped private facial room with which the studio has attracted some of the area’s highest skilled special-ists.
Pistachio offers a diverse menu of skin care services, including facials, peels, waxing and tinting. And, for discriminating shoppers looking for that rare find or a special gift, Pistachio’s Fashion Boutique offers an eclectic range of items sourced from markets around the world. They have brought in a pro-fessional buyer who will be stocking the boutique with clever and affordable high-quality merchandise.
While you wait for your hair treatment to dry or process, you can take advantage of laptop counters and Wi-Fi. You can also enjoy the luxury of scheduling appointments online through Pistachio’s website. Just go to www.pistachiohair.com and create a login so you can set up your next appointment. Walk-ins are also welcome, so stop in and see what this new day spa has to offer right here in the neighborhood.
Pistachio Hair Studio & Fashion Boutique is open Monday from 9 am to 4 pm, Tuesday-Friday, 9 am to 7 pm and Saturdays from 9 am to 4 pm. They are closed on Sundays. You can reach them at (760) 350-5005.
