Brazilian Coffee (Alto Paranaiba - Fazenda Aurea - Moreninha Formosa)

The region of Alto Paranaíba is the highest part of Cerrado Mineiro. After being involved in the Brazilian coffee market for more than 25

years, João Antônio Lian and Luis Antônio Moraes Ribeiro decided to invest in coffee production about 10 years ago. The farm itself produces

approximately 50,000 bags per year.

At 1250 meters above sea level Alto Paranaíba has rich soil, very consistent rainfall and superb weather conditions for producing great

coffee. The farm has more than 50,000 square meters of patios for drying and processing natural coffees. The suspended patios ensure

that the coffee dries slower and more evenly.

Sumatran Coffee (Aceh Province and Sipangan Bolon)

This coffee is sourced from the most amazing locations, at the very end of Lake Tawar in Aceh province and also near the town of Parapat near

Lake Toba. This particular lot has been “Triple Picked”, which means that the coffee has made its way through a warehouse containing many hand-sorting tables, each separating defects and low quality

green beans from the beautiful/uniform coffee we always look for. This particular coffee has been through the sorting process 3 times (hence

triple picked), making it as clean a coffee as you will find from Sumatra.

All our Sumatran coffees are directly sourced through a small family export company and our good friend “Dody Sayhrum”

from CV Yudi Putra. YP have an extensive network of small micro-mills in the Sumatra lake Toba region of Sumatra and Aceh.

Dody and his family really are leading the charge for specialty coffee production in Sumatra and we’re proud to be working

with them.

Brazilian Coffee (São Paulo | Minas Gerais - Monte Santo de Minas - Pedra Grande)

Fazenda Pedra Grande sits on the border of two major states in Brazil; São Paulo and Minas Gerais. This micro-region has beautifully rich volcanic soil, in which coffee trees thrive. Impeccable farm practice

and growing conditions are what make this a consistently high quality coffee. The farm sits at 900 meters above sea level, where the hills

provide a unique micro-climate. This Estate has been growing coffee for 100 years, The same family has owned and run the estate for the entire time, spanning three generations. Pedra Grande has a large warehouse and mill on-site, which are used to process, sort and grade their coffee.

Ethiopian Coffee (Sidama | Oromia - Tade GG | Nefas Farm)

These stunning coffees come from two of our favourite farms in Ethiopia. A washed lot from Tade GG, in the Oromia region and an unwashed lot from Nefas Farm, in the Sidama region. The processing at these privately owned farms is second to

none. Extremely thin layers of coffee are spread across raised drying beds, allowing the beans to dry evenly. These high

altitude, cool climate farms grow some exceptionally small and dense coffee beans, which make for a super complex

and sweet flavour profile.

San Miguel Estate is located in Desamparados, in the Central Valley of Costa Rica. The Castro family has owned and operated this farm since

1910. This is a beautifully processed washed lot, displaying classic Costa Rican flavours of citrus, apple and cocoa. The dry fermentation process

gives this coffee some body and sweetness.

The original trees that were planted on this estate are still alive today and producing great coffee. Every few years, the trees get cut at knee height, which allows a quicker re-growth than planting new seedlings.

This means that this coffee comes from trees that are over 100 years old.

SANTA FELISA GUATEMALA

Santa Felisa is an Estate in Acatenango Valley, Guatemala. The Meneses family puts love and care into the many coffee varietals they grow on

their beautiful farm. Fastidious processing allows the different varietals and styles to shine through in the cup.

This particular lot is a Typica varietal of Arabica, which has been processed using the washed method, where the coffee is picked, pulped and soaked in water to remove the sticky mucilage layer. With the K72 washed method, the coffee is soaked in water for 72 hours. Cold water is added every 24 hours to stop the fermentation process. This method

‘activates‘ the coffee and produces a unique flavour profile.

Kii is a washing station in the Kirinyaga district of Kenya’s Central Provence. Kii is a member of the Rung’eto Co-operative Society, which also includes 2 other washing stations; Karimikui and Kiangoi. Farmers

bring fully ripe cherries to the station to be milled, fermented and dried.

Rung’eto Co-operative ensures each of the the three stations rotate their mill managers in order to keep all three stations producing consistently

excellent quality coffee year after year. The coffee for all of these washing stations comes from local smallholder farmers, who live within the district. Rung’eto have very stringent rules about the cherries they will accept. The cherries must be picked within hours of arriving at the

mill, or they will be rejected.

CARMEN PANAMA

Carmen Estate is situated in the Paso Ancho Valley, Chiriqui Province, Panama. Near the western border with Costa Rica, Paso Ancho Valley lies on the western slopes of the Baru Volcano. The Baru is an inactive volcano located between the Boquete and Volcan-Candela areas. At

3,500 meters above sea level, the Baru is the highest point in Panama. The Baru Volcano helps produce mineral rich, fertile soils to the Paso

Ancho Valley micro region. This region has a unique micro- climate that includes regular rainfall, high altitude and cool winds that allow the trees

to mature slowly.

This lot was processed using the honey method, where ripe cherry is picked, sorted and then pulped. The pulped ‘parchment coffee’ with its mucilage in tact, is then laid out to dry on patios. Drying is finished in

mechanical driers.

Hartmann Estate is a family run coffee farm in the Volcan region of Chiriqui province, Panama. This region is very close to the border of

Costa Rica. The Hartmanns grow many varieties of coffee and process with many different styles. This lot is a traditional washed lot, which

includes a wet fermentation period of 24-72 hours, depending on weather conditions. All coffee at Hartmann Estate is dried on raised

beds which is unique for the region.

Hartmann Estate has made a name for itself around the world due to their ingenuity and high quality focus. They are a 100% shade grown

estate and also have a ‘bird friendly‘ certification, which includes restrictions on tree removal and ensures that nature is looked after.

GACHUIRO AA KENYA

Kiama Co-operative Society in the Nyeri Province of Kenya is responsible for this delicious coffee. This lot is dry fermented for extra body and texture and then fully washed with water from

the Kagumo River.

SL28 and SL34 are varietals of coffea arabica, developed at Scottish Laboratories in Tanzania in the 1930s. They are mutations of the

‘French Mission’ AKA ‘Bourbon’ varietal. SL28 also has some Mokka lineage. Both SL28 and SL34 are known for intensely sweet and

citrusy flavour profiles.
