Basic principles on poultry slaughter
• Dirty and clean area
– Separated rooms / compartments
– People are not allowed to enter the room from dirty to clean area
• No chickens on the floor
– Chickens on the tables or storage pins
• Movement chicken from warm to cold area (high to low
temperature)
