    Having decided to install a Josper

    Grill our aim was to nd the best meat

    supplier we could. Not only was the

    quality important but we also wanted the

    farming methods used to be ethical and

    for the cattle to be organically reared.

    The North Highlands is a part of

    Scotland that has a long history of

    quality livestock production. The Castleof Mey brand was created by the North

    Highland farmers, which is inspired

    and supported by His Royal Highness,

    Prince Charles.

    All cattle are pure breed Aberdeen

    Angus and are fully traceable to

    individual family farms. They are solely

    grass fed for their whole duration until

    reaching full maturity.

    The beef is given extra avour through

    the skillful processing techniques of dryageing, slow chilling and fully maturing

    on the bone. All our steaks on the menu

    have been dry-aged for at last 35 days.

    Dry-ageing beef is what gives it a

    wonderful chewy, buttery, nutty taste.

    This is because the beefs natural enzyme

    shelp break down largely avourless

    proteins, fats and sugars into smaller

    products which are full ofavour. Also

    during this process the meat becomes

    more tender and succulent.

    THE ORIGIN OF STEAKThe word steak is derived from the Old Norseterm steikjo; to roast on a spit which hasbeen around for as long as there used to

    cook it.

    All domestic cattle are descended from

    a single ancestor, the aurochs. These

    were large long horn beasts, that can be

    seen depicted in many cave paintings.By 55BC Romans had recorded the

    existence of red cattle in south-western

    England. Which are almost certainly

    the Red Devon cattle which can still be

    found there today. This only goes to

    show the longevity of eating beef.

    THE JOSPERHAS LANDED!

    Cooking on re is as old as the hills.

    Looking at different cultures around the

    world today we can see that it is still verywell-practised. Be it burning charcoal

    in India to fuel the tandoor ovens or in

    Japan for the robata grills.

    Once wed located our fantastic produce

    we wanted to serve it in the best way

    we know how. So we have invested in a

    specialized indoor barbecue grill called

    a Josper (imported from Spain), which

    is fuelled by charcoal alone.

    The meat and sh are grilled directly

    over burning charcoal and the oven can

    generate heats of up to 500 Celsius. The

    intensity of the heat and the taste from

    the burning charcoal is the perfect way

    to cook our carefully sourced produce,

    to keep the meat and sh succulent and

    full ofavour.

    THE ROOMTEMPERATURE MYTH

    Here at The Coal Shed we take wine very

    seriously; and like our food we want to

    serve it to you in the best way possible. Ingeneral red wines are served far too warm

    these days, particularly in restaurants

    where the room temperature can get

    fairly high. The room temperature rule

    for red wines was derived hundreds of

    years ago long before wall insulation

    and central heating were even invented!

    We believe red wines really benet when

    served just below room temperature

    as it improves the silkiness of the fruit

    and also keeps the alcohol in check.With this in mind we have invested in a

    red wine fridge that will moderate the

    temperature of our wines to around

    20C or just below depending on the

    weight of the wine. Unfortunately we

    will only be able to do this for red wines

    bought by the bottle so if youre thirsty,

    happy days!
