Letter from the ManagerWelcome 2011! I hope everyone had a wonderful holiday season celebrating what ended up as a pretty good year. When we were planning for 2011 we projected flat with regard to revenues and were optimistic about sustaining the upbeat, vibrant pace of our many activities and programs. What I think will be essential to ensure success is a continued focus on value, membership replacement and obtaining a written strategic vision for the Club which is communicated well to all members and implemented diligently by the Board and management.
To assist maintaining value at the Club we are holding the line on nearly all pricing for activities, programs and dining. On Sunday January 9th we will introduce an expanded ala carte brunch adding a make-your-own waffle bar and “The Basics” buffet of scrambled eggs, bacon, sausage, hash browns, assorted fruit, Danish and breads, all priced at twelve dollars. Come and enjoy the casual brunch. We will continue to have our Grand Buffet Brunch the last Sunday of each month.
Additionally, we are continuing our early dining special value and sweetening the deal. Come to dine at the Club being seated and placing your order before 6:15 pm, and all kid’s meals are half off and adults are now 20% off. This applies to ala carte dining in both the Grille and Lounge Dining rooms.
Kim Grant will be the chair of our Membership Committee who will be charged with the challenge of meeting or exceeding last year’s successful membership drive. We’ll again be asking you, our enthusiastic members, to reach out to your friends, relatives and business associates who you think would make great members. Please invite them to join the Club and view our member testimonial DVD on our website or by e-mailing Elizabeth at [email protected].
In the week before Christmas the Board voted to make another additional payment towards the principal of our debt. With this the Club has paid a total of $600,000.00 in addition to our scheduled monthly principal payments, totaling a gross reduction in our debt in 2010 by $1,103,000.00 or by 23%. We’ve been able to do this because of our strong membership recruitment last year. I’m hopeful 2011 will yield the same results.
RefinancingThe Finance Committee headed for the second year by David Huff will be working on refinancing our debt. With interest rates being at historic lows and our Club establishing such a great credit history, we should be able to capture very favorable financing. I’ll keep you posted as this work moves forward.
Shared Strategic VisionEvery member’s view is important! As I’m penning this communiqué, our focus groups are not full. If you haven’t done so yet, please join your fellow members in a focus group to give your opinion and hear others about where the Club is today and where we need to be in years to come. This Strategic Plan is one of the most important initiatives the Club has engaged in in years. Please be a part of it. You can sign up on our website, or by e-mailing Diana at [email protected].
Do you WOW?In January of ’08 I introduced an initiative where members should expect a WOW experience when they come to the Club. Our staff has been engaged in the component parts of how to WOW. There are five principal engagements to consistently ensure a WOW experience whenever a member and an employee encounter a “moment of truth”; they are:
• Anticipate the needs and wants of the member• Be prepared to serve• Be continuously enthusiastic about all you do• Execute flawlessly• Do it now – have the ultimate sense of urgency about all tasks at hand.
I marvel at the already great relationship most of membership has with our loyal and dedicated staff. We continuously strive to create happiness. The WOW initiative was implemented to provide our staff feedback as to our moment of truth success ratio. If you are WOWed by a staff member please report it. If your experience is not a WOW, please convey that also.

Letter from the PresidentFirst, we all owe a great deal of thanks to Carolyn Cordill for her fine service on the board and as president this past year. In addition, we also owe thanks to Mark and Tony Padon for their service on the Board of Directors the last three years. All three have provided outstanding leadership for the Club.
We welcome three new members for the Board of Directors, Scott Frazier, Tim Peters, and Mike Caswell.
We should all remember that this is a member owned club. Your involvement and participation both in the activities of the club and the operations of the club is invaluable. We are fortunate to have an
experienced, knowledgeable and professional general manager, Richard Lareau. Further, we are extremely fortunate to have quality staff and personnel that run this club on a day to day basis.
However, it is very important for the members to participate. One way that you can all participate is to send any suggestions, questions, or comments in person or by email to me, Richard Lareau, or to any of the board members. The board members are in charge of separate committees at the Club and all welcome any suggestions, questions, or comments regarding the Club. Specifically, the following is a list of each of the committees and the board member in charge of that committee for 2011:

In addition to forwarding any suggestions or inquiries, please consider joining one of the committees when the opportunity presents itself at the end of 2011 for the 2012 year.
Finally, to dispel any rumors or concerns from the membership, the fact that I was elected president does not mean that there is any plan presently in place to change the Golden Room to the Black and Gold Room, the Breezeway to the Breesway, or to change the sports bar to the Purple and Gold Sports Bar.
I look forward to working with the Board, the management and staff, and all of you as owner members of the Briar Club during the next year. God Bless all of your families for the coming year.

It’s also interesting to know that as I talk about our WOW initiative at many of the national conferences and manager symposiums I attend and lead throughout the year, it is a topic of great notice that many of my peers wish to emulate and implement in their clubs. Positive WOW reports are the easiest to convey and receive and to disseminate to our staff. We feel great when we get them. Not-so-WOW reports are harder to deliver and require greater listening techniques on our part, but provide management and staff with the need-to-know feedback that helps our Club perform to the highest levels and ultimately provide for the best member experience. Thank you for your participation and enthusiastic support.
As always I’m very eager to hear feedback about your experiences at the Club. No issue or comment is too small to be important. If you are thinking or experiencing it, most likely other members are also. Let’s make 2011 memorable together.

Employee of the MonthLance WarrenExecutive ChefManager of Merit: October - DecemberAs a child, Lance Warren would cook beside his father in the kitchen. He never imagined that he would be tasting success – literally. Lance attended the University of Houston where he pursued a major in Hotel and Restaurant Management. While attending school Lance had the opportunity to work under Chef Fritz Gitschner, CMC and Chef James Hanyzeski, CMC at Houston Country Club. Early on in his career, he was hired to help open the Houston restaurant, Rickshaw. Lance also worked at the St. Regis, a 5-diamond hotel, for five years where he was the Executive Sous Chef. In this position,
Lance was able to travel to assist other chefs at premier properties across the country. During his career, Lance received the honor of top Jeune Commis (Young Chef) in the southwest region of the United States for the Chaine Des Rotisseurs. In 2006 he was a sous chef to Charles Clark on the Food Network hit reality show, “Iron Chef America” in which they competed against Iron Chef Mario Batali. Lance received his certification for Executive Chef (CEC) from the ACF early this year. He is currently president of the Professional Chefs Asscoiation of Houston (PCAH) Chapter of the American Culinary Federation (ACF).He is in his 16th year as a professional in the hospitality industry and is currently the Executive Chef for the renowned Briar Club.
Robert BurgeOctober Employee of the MonthRobert has worked at The Briar Club for about 1½ years as the Receiving Agent, a very busy and early-morning job. Staff members could hardly wait for his one year anniversary to elect him as Employee of the Month because he so impressed everyone with his willing attitude and hard work! He has attended Houston Community College and plans to get an Associate’s degree in Business Management. Robert’s favorite thing about working at The Briar Club is that he never feels like he is working and says “I love it here”. From Houston, he enjoys jogging in Memorial Park and playing sports. His favorite movie is Rudy and he admires Marisa Miller (a swim suit model for Sports Illustrated).

Alejandra (Alex) ManceraDecember Employee of the MonthAlex has been at The Briar Club for 2 ½ years and serves in the Grille, and as hostess, receptionist and goodwill ambassador at club sponsored events. Alex will always give a warm greeting and smile and loves creating a wonderful experience for the members every time they come in. She is a student at the Hilton Hotel & Restaurant Management School. Alex grew up in McKinney, Texas and likes to watch movies and read novels. Her favorite book is To Kill a Mockingbird. She has a pet hamster, loves babies, and admires her mom.
Brian BancroftNovember Employee of the MonthBrian is a busser and server in the Lounge and currently a student at the University of Houston studying accounting. From San Diego, California, he moved to Houston in 2001 and has worked at the Club for a year and a half. What does he like about working at The Briar Club? -----getting to know the members. Brian enjoys watching movies and biking. His favorite movie is Dark Knight and someone he admires is Renu Khator, the University of Houston President. When asked what would surprise people about him he said he has a great grandmother who is still living.

FOOD AnD BEVERAgE SERVICEEnjoy evening dining before 6:15 pm and receive 20% off of adult food and beverages and ½ price off the kid’s buffet. Don’t miss Wednesday Night Rendezvous in the Lounge! Complimentary hors d’oeuvres and ½ priced drinks from 5:00 pm – 7:00 pm every Wednesday.
Please check the Newsletter for the month’s listing of dining available. This will give you the times, prices and dress code. Please make reservations through our Catering Department if your dining party is for 11 or more.
For your convenience, we suggest dining earlier in the month to avoid the end-of-month rush. Please remember, no outside food or beverage is allowed to be brought into the Club.

DRESS CODESunday Brunch – Dressy casual attire is expected, which excludes the following: (a) for men and boys: athletic attire, sleeveless and collarless shirts, all hats, and rubber flip-flop shoes; and (b) for women and girls: athletic attire, caps and rubber flip-flop shoes. Denim attire without holes and excessively worn areas is permitted. Shorts are not permitted, other than Bermuda style dress shorts.
Lounge – Prior to 6:00 pm, clean and neat casual attire is permitted, which excludes for men T-shirts, caps and flip-flop shoes. After 6:00 pm, dressy casual attire is expected, which excludes for men, athletic attire, sleeveless and collarless shirts, all hats, and rubber flip-flop shoes. SMOKIng pOLICySmoking in The Briar Club is limited to the designated areas of the Courtyard and the patio outside the Lounge and as designated by Management.

SERVICE CHECKSYou will be asked to sign a ticket for all food, beverage and party function charges. No cash or checks are accepted for payment at the Club. Please print your name and member number clearly on each ticket and sign. Please request and retain copies of all tickets for statement verification. At the end of the month, these charges are tallied and a statement is mailed to you.
MOnTHLy STATEMEnTSStatements are mailed out at the beginning of each month. They include charges of dues for the upcoming month and any food, beverage, or other charges incurred during the previous month (or food & beverage minimum if applicable).Statements not paid by 3:00 pm on the last business day of the month in which they are received will be charged a $25.00 late fee. pARKIngParking for the Club is across the street on Timmons. Please do not use the Post Office parking lot, or the small valet parking strip between Whataburger and The Briar Club parking lots. We offer valet service at no charge, for your convenience. The Club is not responsible for damage to, or loss of personal property on the premises.
