Although green tea and black tea are derived from the same plant Camellia sinensis , there are signicant dierences in the preparation of the two. Black tea (more common in the western world) is withered, rolled, fermented and dried for curing. Through this avor enhancing fermentation process, the bioactive polyphenols of the fresh leaf are oxidized, and black tea loses most of the benecial polyphenols. Green tea, on the other hand, is prepared from lightly steamed and dried l eaves of the tea plant.
