Côtes du Roussillon Villages Red Wine Soil: The cradle of prehistoric man, Tautavel valley is mainly home to limestone soils along with some areas of schist marl. Since 1996, 301 ha divided between the villages of Vingrau and Tautavel have been producing this appellation in the lowest foothills of the Corbières mountains. Grape varieties: 40% Carignan, 30% Syrah and 30% Grenache noir. Production method: The grapes are picked by hand at optimum ripeness for each grape variety. The varieties are fermented separately: the Carignan undergoes carbonic maceration whilst the other two grapes are vinted traditionally. Extraction occurs at low temperatures with gentle, regular pumping over. Ageing: The wine is aged in tanks for a year to soften the tannins. Description: The deep garnet hue sports brilliant red highlights. The nose exudes jammy fruit, wild blackberry and blackcurrant aromas as well as notes of liquorice and a peppery touch. The palate is robust with evident yet closely-integrated tannins. The finish is long with spice notes. Storing: Ready to drink now but will keep for 2 to 3 years. Serving suggestion: This wine makes an ideal partner for all grilled or slow-cooked red meats. Pair it with beef bourguignon, lasagna, lamb stew and veal kidneys. Grilled ribs also work extremely well, as does a platter of slightly mature cheeses. Serving temperature: Serve at between 16 and 18°C. n Ultimate pairing choice: French onion soup au gratin.
