request (RFA’s) from USSS state/local • Retail Food Specialist role, training,
standardization, SME’s, collaboration, other resources
• FDA issued assignments demonstrate cooperative efforts: inspections, sampling, record collection & trace back activities.
FDA NIMS & IMT’s
• HSPD 5 All federal agencies to be NIMS compliant
• ICS the established, standardized organizational structure and terminology utilized for the management of all incidents
• 2009 FDA NIMS implementation work group, training based on established standards and FDA EOP
Roles & Responsibilities of NJ Department of Health
• Primary Regulatory Authority of the MetLife Sports Complex (State Property)– MetLife Stadium, Izod Center, Racetrack &
New Racetrack and surrounding areas
• Provide technical assistance, training & support for Local Health Departments (LHDs)– 100 LHDs in NJ/ ~20 LHDs in Super Bowl Zone
• Coordinate efforts of State, Federal & LHDs

• NJDOH inspectors conducted food vulnerability assessments at 9/11/11 and 12/11 games:
- 60+ foodservice operations visited- most recommendations had been
implemented
•DNC’s food defense directive “to demonstrate a higher level of safety with our food supply/flow”
- FIRST training required for all employees - stricter receiving/storage protocols - chain of custody for food

Activities

• 1/30/14 Met with Union Square Events and conducted walk-thru providing food for the FOX Sports Event at Old Meadowlands Racetrack Grandstand
Pre-Super Bowl:
• Inspectional activities included monitoring of receiving and preparation temperatures of multiple types of food products to be re-heated, stored, cooked, prepared and served during tailgating parties on 2/2/14
