The tradition of enjoying King Cake leading up to Fat Tues-day, coming up on March 5, is one we look forward to. Oval-shaped cakes are decorated in traditional Mardi Gras colors; purple represents justice, green means faith, and gold stands for power. Our King Cake comes with festive beads and a small plastic baby, which the host hides in the cake. The guest who receives the piece of the cake with the figure is said to be bestowed with good fortune and is obligated to host the next Mardi Gras party.

This New Orleans' favorite came to Dayton 20 years ago when Scott Fox, DLM’s VP of Bakery, attended a meeting hosted by the Cincinnati Bakers Guild. He met a southern baker from New Orleans who explained what a King Cake was, and then provided a tutorial on how to make it.

Scott took the ball and ran with it, bringing the first King Cake to Dorothy Lane Market in 1999. “That first year we only sold about 100 cakes, but the following years they really took off” Scott says. Now, DLM bakes nearly 2,000 full-sized King Cakes for the season, along with a miniature “baby” cake for those who want just a taste of this sweet treat. Stop by and pick yours up while you can. When it comes to the farm-raised salmon we carry, we seek the very best. So many providers raise their salmon in densely packed waters with antibiotics so that they grow as fast as possible. We take it upon ourselves to source farm-raised salmon that's antibiotic free, fed an organic diet, and given plenty of room. The farms also practice rotation to allow sites to redevelop naturally. "They're raised the right way," says Jack Gridley, VP of Meat & Seafood.

The Shetland Farm Organic Salmon we carry is raised in floating ocean pens about 100 miles off the coast of Scotland. The fast-moving currents of the cool water are perfect for rais-ing salmon, which are certified organic by the UK.

Farm-Raised King Salmon from Creative Salmon Co. is certified organic by Canada. "The Farm Raised King Salmon is raised in Tofino Bay, British Columbia ... the cold, clean, fast-moving water provides the fish with the same environ-ment as its wild counterparts with plenty of room to swim and develop muscle," says Jon Lemaster, DLM Springboro Seafood manager. "Both of these farm-raised salmon are from two of the best farms in the world and we're very proud to have them in our cases."

Mention an oyster on the half shell and your taste buds will crave this culinary experience. The immense number of flavors and textures makes one think of a celebration of luxury. This is far from the truth if we go back in time. The oyster was a snack food for those grow-ing up on the Eastern Seaboard. Over time, the vast estuaries of wild oysters were slowly depleted and habitats were destroyed by growing cities and population.

The modern day oyster is a poster child of sustainable aquaculture. Most oysters con-sumed today are farmed. They can live for many years, but most are harvested for consump-tion when they are 3-4 years old. Oysters are great filter feeders—they filter anywhere from 30-50 gallons of water per day. They receive all their nutrients from the water they filter so the farmer doesn't have to feed them. They leave the water and surrounding habitat cleaner and they pick up the subtle nuances of flavor from the habitat and water.
