T ake a walk through yet another country of the world at GRAZE KITCHEN as the Hilton brings Korea to you from the 20th September to 1st October 2017, presenting two of their guest chefs from Hilton Millennium Seoul,who will turn out traditional Korean dishes to satisfy your taste buds. Creating a menu consisting of a range of authentic Korean hot and cold items and desserts will be made available for dinner at the dedicated pod which will be an added feature to the variety of cuisine that GRAZE Kitchen offers. One of the highlights the diners could look forward to is the action station where some interesting a la minute preparations will be taking place! The popular Modumjeon; assorted Korean piccata which is a dish made up with pumpkin, spring onion, seafood and mushroom, La Galbila; grilled sliced beef, Bibimbam; assorted vegetable rice, Kimchi Bokeum Bab; spicy kimchi riceSam Ge Tang; Korean traditional ginseng chicken are a few of the many dishes that will vary each night. Residence By Uga Escapes Hosts Chef Mathew Macartney T he culinary team from the Vakarufhali Island Resorts in the Maldives, a member of the Mount Lavinia Hotel Group, bagged awards at the recently held Food and Hospitality Asia Maldives (FAHM) 2017, the International Culinary Challenge supported and endorsed by the World Association of Chefs Societies (WACS). The competition is widely recognized as one of the region’s most prestigious International Culinary Competition that has a strong emphasis in promoting culinary excellence. The Chefs from the Vakarufalhi Culinary Team competing for honours and won the awards are; DCDP Buddika Wijayarathna, SCDP Gamini Weerasekara, Jr Sous Chef Chaminda Prabath Kumara, DCDP Indika Prasanna. This annual competition is the key decisive platform on which hundreds of Culinarians converge to display their skills, and seek accreditation and feedback for improvement from an Internationally Acclaimed Panel of Judges. It is the only Internationally Recognized Platform for Chefs in Maldives and is the only event endorsed by the Chefs Guild of Maldives and the Chefs Guild of Lanka. Commenting on the achievement, the Executive Chef of the Vakarufahli, Riccardo Rizzoli said “all eyes were focused on the competition, which has also become a meeting point for fellow gourmet’s to make new friends, share their experiences and marvel at the creative show pieces. We are proud of the accomplishment of our culinary team, which not only demonstrate their skills and talent but also the exquisite culinary experience we offer”. C olombo’s Residence by Uga Escapes together with Chef Mathew Macartney hosted a curated wine dinner at their acclaimed restaurant, Rare. The event which was open to all, was sold out, with tickets priced at 15,000.00 LKR each. It also consisted of carefully and skilfully crafted gastronomical experiences spread across each evening. Guests were treated to a variety of dishes packed with flavour and an array of colours, to sample with a side of complementing wine. Some of the wines included in the menu were Italian Prosecco, Chilean Sauvignon Blanc, South African Rosé and Argentinian Viognier.The dishes were works of art as much as they were culinary marvels, with the likes of Shiso Cured Canadian Wild Salmon with Kohlrabi, Oysters, Passionfruit and Roasted Sesame, Spiced Caramel Glazed Pork Belly with Celeriac Remoulade and Honey Crisp Apples, Roasted Salt Grass Lamb with Crisp Mint Hollandaise, Boulanger Potato and Organic Vegetables, and to round it off, Rose Geranium Gelato. ‘The team at Residence and I worked together to create a menu for the evening with both international experiences and local inspirations. A unique experience requires a unique location, which meant I had to choose a restaurant in Colombo best known for its creativity to compliment the evening, which already embraces the concept of international cuisine an emphasis on local ingredients, Rare at Residence.’ – Chef Mathew Macartney Chef Macartney himself first got his start as an apprentice at Café Cuccinain South Yarra which specialises in Italian cuisine. Following three years of training where he acquired essential skills and expertise as a young chef, he was then presented with an opportunity to work under Raymond Capaldi and Marcus Moore at Hotel Sofitel. Here, Macartney was actively involved in a range of culinary events, working hand- in-hand with industry leaders who would shape his career to come.
