In the north of England, Scotland, Wales and Northern Ireland “Tea” refers to the main evening meal. “High Tea” is an early evening meal eaten between 5 and 7 pm and would be followed by a larger meal later in the evening. “Low Tea”, or “Afternoon Tea”, is a light snack eaten between 2 and 5 pm, typically consisting of sandwiches. Interestingly, the use of “Low” and “High” referred to the height of the table where tea was taken. While “taking tea” habits have changed over the years one thing is for sure, here at Dollies we enjoy your company and it is our pleasure to serve you no matter what you wish to call it. We are collecting pristine, bone china cups & saucers to be given away at the September 2019 fundraiser. From Amys Kitchen Spring Pea Orzo Salad Dressing: 1/4 cup minced shallots 2 Tbsp. EVOO 1 Tbsp. dijon mustard 1/2 tsp. salt 1/2 tsp. black pepper 1/2 cup lemon juice Whisk together, set aside. • 8 oz. cooked orzo pasta • 1 pint cooked sugar snap peas (halved) • 1-2 cups frozen peas Chopped basil, parsley & chives to taste Mix salad ingredients together. Add dressing just prior to serving. Stir and garnish with sliced almonds. Makes 10-2/3 cup servings. Enjoy!

Let’s Take Tea Shall We?

“Let’s Take Tea”, this phrase can be taken quite literally and refers to brewing and sharing a cup

Spring Pea Orzo Salad Dressing: 1/4 cup minced shallots 2 Tbsp. EVOO 1 Tbsp. dijon mustard 1/2 tsp. salt 1/2 tsp. black pepper 1/2 cup lemon juice Whisk together, set aside. • 8 oz. cooked orzo pasta • 1 pint cooked sugar snap peas (halved) • 1-2 cups frozen peas • Chopped basil, parsley & chives to taste Mix salad ingredients together. Add dressing just prior to serving. Stir and garnish with sliced almonds. Makes 10-2/3 cup servings. Enjoy!

Dollies Tea Room will be at the Pennsylvania Tea Festival

Terri (manager of Dollies) will be presenting For the Love of Tea, A Tea Primer

at the Pennsylvania Tea Festival being held Friday, September 27, 2019 and Saturday,

September 28, 2019. The Festival runs 9 a.m. to 4 p.m. each day, tickets are $12 in advance

or $15 the day of the event. The Festival is held in the fragrant herb gardens of The

Rosemary House, at 118-120 S. Market Street, Mechanicsburg, PA. There will be a large

number of merchants, tea vendors, musical entertainment, tea tastings and informative

programs through-out each day. Dollies Tea Room will have a table located under the

Garden Pavilion. Luncheon Tea will be available from Sweet Remembrances Tea Room

also located on the property. Please visit the Festival website for a full schedule of events

and to make program reservations (when required), www.TeaFestPA.com.

Wildflower Tea

He brewed his tea in a blue china pot, poured it into a chipped white cup with forget-me-nots

on the handle, and dropped in a dollop of honey and cream. He sat by the window, cup

in hand, watching the first snow fall. “I am,” he sighed deeply, “contented as a clam. I am a most happy man.”
