It’s finally time to prepare your outdoor living space! Planning remains the key to avoiding costly mistakes and ensuring all your outdoor space wishes are realized. A professional landscaper is an important part of the design process to consider.

STEP 1: SET YOUR GOALS
n Are you interested in developing a single area on your property or do you want to transform several spaces? If the plan concerns several areas, which are the priorities?
n Apart from the aesthetic aspect, how important is the functionality of the space? Are you aiming for maximum use of the premises?
nDo you want your new garden to provide more security, more privacy, or greater ease of access?
nWhich style do you prefer: natural, urban, formal, informal, etc.?
nWhat elements already exist in the places you want to keep, such as trees, rocks, streams, landscaping, etc.?
nIs there a view you would like to keep, improve or hide?

STEP 3: LIST THE FACTORS THAT COULD INFLUENCE YOUR DESIGN
nLocation and zone of your property
nClimate (snow, wind, temperature)
nTopography of the site (characteristics of the land surface)
nAreas of sun and shade already present
nSoil condition (e.g., clay soil, wet, swamp, sand, etc.)
nDrainage and irrigation
nExisting landscaping and permanent elements already in place
nMunicipal regulations, such as height restrictions on structures or construction distances to be respected; please check your municipality’s website for more information
nUnderground infrastructure, such as pipes, aqueducts, cables, etc.
nAny restrictions on the schedule of work; keep in mind that it is best to do most landscaping work between the months of April and November
STEP 4: HAVE A PLAN DRAWN UP
A professionally designed plan is an essential step in any landscaping project. Since it reflects your choices, a master plan helps you keep control of your project and avoid unpleasant surprises, because it gives you an overview of the final result.
To help you visualize how the components of your plan will work with existing property aspects and structures, your plan will identify plant elements (trees, plants, flowers, grass), inert elements (stones, patios, structures), as well as water and lighting features. This overview will be an important reference tool to explore the possibilities available to you, and will allow you to develop the design according to your needs and budget, as well as according to the stages of development.
A professional plan will help you achieve your goals and maximize the potential of your property. It can also save you money. Landscaping is often a significant investment – mistakes and misunderstandings can be expensive. A professional can help you avoid making costly mistakes.
STEP 5: LOOK FOR A CERTIFIED LANDSCAPER

DETERMINE THE AVAILABLE SPACE
Determine the amount of space you want to transform, and gather ideas on how to use this space, taking into account the purpose you want it to serve: cooking, dining, relaxation and play.
IDENTIFY SPACES AND PRODUCTS DEDICATED TO SPECIFIC AREAS
These elements are crucial to establishing a plan according to your needs and desires. Position an outdoor fireplace as the focal point, determine the cooking and eating spaces, and define any other area you want to include.

COLD-SMOKED SALMON
NANA CÉCILE’S PIZZA
2 fresh salmon fillets with skin 675 g (1-1/2 lb) each4 tbsp maple syrup4 tbsp bourbonMaple wood pellets
DRY RUB300 g (1 cup) coarse salt75 g (1/2 cup) maple sugar110 g (1/2 cup) brown sugar40 g (1/2 cup) Montreal spice
INGREDIENTS
1 pizza dough recipe180 ml (3/4 cup) pizza sauce4 tbsp fresh basil, chopped2 tbsp fresh oregano leavesFresh ground pepper1 buffalo mozzarella ball, sliced
INGREDIENTS
1. Put the fillets in a large pyrex plate, skin side down2. Dry rub: mix all ingredients in a bowl. Coat the fillets evenly
with the mix. Cover with plastic wrap and refrigerate for 24 hours.
3. Remove excess spice rub with your fingers then put the fillets in a resealable large bag. Drizzle with maple syrup and bourbon. Refrigerate for 12 hours.
4. Fill half the smoker box with the pellets. Burn the pellets for 2 minutes before extinguishing the flame. Set the box as far as possible from where the fillets will go.
5. Set the salmon on the grill then quickly close the lid. Cold smoke the salmon for 4 to 12 hours.
6. Let the salmon rest in the refrigerator for 24 hours before. Cut in slices and serve.
METHOD
1. Set a pizza pan on the grill. Preheat for indirect cooking method.
2. Cut the dough in half and roll out the dough into 2 rounds of 20cm (8”) diameter.
3. Cook the dough.4. Spread the tomato sauce on the crust. Sprinkle with cheese
and herbs. Season to taste with pepper. 5. Cook the pizza for 1 to 2 minutes rotating it once so cheese
melts uniformly.6. Cut the pizza in slices and serve.

INGREDIENTS
1. Preheat the grill using only the back burner. 2. Rub the inside and outside of the chickens with the spices.3. Skewer the chickens back to back and tightly squeeze them
together. Tie the end of the legs using stainless steel pins. Set a drip pan under the chickens.
4. Cook for approximately one hour, until the meat easily comes off the bone.
5. Note for cooking with coals: put the coals under the chickens. Make sure that the rod turns constantly so the chickens do not burn.
6. Ten minutes before the end of cooking, baste the chickens with the preferred sauce.
