Eating seasonally and regionally can be overwhelming so this guide is your source for being savvy about local foods and includes many ways that you can eat locally all year round.

INGREDIENTS: Balsamic Reduction:
2 tbsp. honey
1/3⅓ C. balsamic vinegar
Salad: 3-4 C. gently packed spring greens
1 C. strawberries, hulled and quartered
4 oz. small mozzarella balls, drained and halved
5-6 basil leaves, coarsely chopped
¼ C. sliced almonds, toasted
1 tbsp. extra-virgin olive oil
Salt and black pepper, to taste
DIRECTIONS: Balsamic Reduction: Combine honey and vinegar in a small saucepan. Simmer gently over low heat until mixture is reduced to about ¼ cup.
Salad: Wash and dry greens. Divide greens among plates. Top with strawberries, cheese, basil, and almonds.
Drizzle each plate with 1½ tsp olive oil and 1½ tsp balsamic reduction.

Smashed Sweet Potatoes with ApplesServes 8
INGREDIENTS:4 pounds sweet potatoes (about 6 large)½ C. freshly squeezed orange juice
½ C. heavy cream
4 tbsp unsalted butter, melted
¼ C. light brown sugar
1 tsp ground nutmeg
½ tsp ground cinnamon
2 tsp kosher salt
1 tsp freshly ground black pepper
For the Topping:3 tbsp unsalted butter
3 McIntosh or other tart apples peeled, cored, and cut into eighths
3 tbsp light brown sugar
DIRECTIONS:1. Preheat oven to 375°F.
2. Scrub potatoes, prick several times with a knife or fork, and bake for 1 hour, or until very soft when pierced with a knife.
3. When cool enough to handle, scoop out the insides. Place sweet potatoes in the bowl of an electric mixer fitted with the paddle attachment. Add orange juice, cream, butter, brown sugar, nutmeg, cinnamon, salt and pepper. Mix together until combined but not smooth, and pour into a baking dish.
For the Topping:1. Melt the butter in a skillet over medium-high heat.
Add brown sugar and stir to dissolve the sugar. Add apple wedges and cook for about 5 to 10 minutes, until lightly browned on both sides. Place apple wedges on top of the sweet potatoes.
2. Cover and bake for about 20 to 30 minutes, until heated through.

Fair Trade Certified standards are enforced by the Fairtrade Labeling Organizations International (FLO) (in the U.S. by Fair Trade USA). Fair trade products must be produced in accordance with the following guidelines: Workers must receive fair wages, safe and equitable working conditions and the right to join trade unions; child or forced labor is completely prohibited. Crops must also be grown, produced and processed in a manner that supports social development, economic development and environmental development. Fair trade standards have been established for coffee, tea, cocoa, honey, bananas, juices, cotton, flowers, rice, spices and herbs, wine, fresh fruit and sugar.
Free Range/Free Roaming Raised with free access to outdoor areas with plenty of vegetation for forage. This is in contrast to the practice of animals being raised in confined and/overcrowded spaces.
Heirloom Varieties A horticultural variety which has survived for several generations. Fruits and vegetables that are open pollinated and grown for their flavor, color and uniqueness and not for transport and storage.
Heritage Breed Traditional livestock breeds that were raised by our forefathers. These are the breeds of a bygone era. These breeds were carefully selected and bred over time to develop traits that made them well-adapted to the local environment and they thrived under farming practices and cultural conditions that are very different from those found in modern agriculture. Traditional, historic breeds retain essential attributes for survival and self-sufficiency–fertility, foraging ability, longevity, maternal instincts, ability to mate naturally, and resistance to diseases and parasites.

are still serving, in any branch of the U.S. military, the ability to use the Homegrown by Heroes logo on their products.
IPM stands for Integrated Pest Management, a sort of middle-ground production method advocated for
by the Environmental Protection Agency. The basic
principle of IPM is to use the most “current, comprehensive information on the life cycles of pests and their interaction with the environment” in order to determine the most economically and chemically efficient method of pest control.
American Grassfed USDA has a grass fed standard for ruminant animals like cows and goats, which
states that these animals must be fed only grass and
forage during the growing season. The American Grassfed Association is one organization that certifies beef, bison, dairy, lamb and goat that is fed only on pasture, in addition to being raised without antibiotics, synthetic hormones, confinement and with standards for high animal welfare. Other animals, like chicken and pigs, can be pasture raised (and USDA organic standards require at least some access to pasture), but there are currently no specific certification standards for non-ruminant animals being grass fed or pastured.
American Humane Certified program (formerly the Free Farmed program) was created by the American Humane
Association to ensure that animals raised for dairy, poultry, beef, veal, goat, swine, turkey and bison products are raised in a humane manner. These guidelines, created with input from animal science experts, ensure that livestock have access to clean and sufficient food and water as well as a safe, healthy living environment and that staff and managers are thoroughly trained to care for animals in a humane manner.
Animal Welfare Institute Its standards cover the way its participating farms raise their animals (including beef and dairy cattle, bison,
sheep, goats, pigs, chickens, turkeys, ducks, geese and rabbits). AWA states that the basic premise of their standards is that animals must be able to behave naturally and be in a state of physical and psychological well-being. They only certify family farms and state that animals must be raised on pasture or range.
Biodynamic foods with the Demeter biodynamic label come from farms that were managed in a holistic, ecologically sustainable way. Biodynamic farms are managed as self-contained, self-
sustaining ecosystems that minimize their reliance on external inputs. To be Demeter
Biodynamic certified, a farm must meet all the requirements of the USDA Organic program, in addition to the more rigorous Demeter standards.
Certified Gluten-Free is a process designed to protect consumers with gluten-related disorders by confirming that a food, drink
or supplement meets strict standards for gluten-free safety.
It assures consumers that there is third-party oversight confirming the legitimacy of the manufacturer’s gluten-free claims. Typically, the criteria includes testing the gluten content of the finished product. The current systems for gluten-free certification require gluten-free products to contain less than 20 parts per million (ppm) (NFCA/GFCP), less than 10 ppm (GFCO, QAI/NSF International) or less than 5 ppm of gluten (CSA Seal of Recognition).
Certified Naturally Grown This is an alternative, non-governmental
certification system where other farmers act as
inspectors in a program administered by a non-profit organization. The Certified Naturally Grown label indicates that someone is certifying that it is indeed natural, rather than just using the word
“Natural” for oriented towards using technology, pesticides, chemicals and other synthetic tools in the cultivation of crops, marketing purposes.
Community Supported Agriculture (CSA) is a direct connection between the farmers and the consumers. To join, a CSA is to have a share of the season’s harvest. Every week throughout the season the CSA community receives a box of that week’s harvest. The farmer gains the security of knowing he or she has been paid for a portion of the harvest and the farmers’ community participates in how and where their food is grown.
Conventional Agriculture according to the USDA, there is no concrete example of conventional farming, as it takes different forms depending on the farm, the region and the
nation. Consistent features are used to designate farming techniques that are traditionally oriented towards using technology, pesticides, chemicals and other synthetic tools in the cultivation of crops.

Non-GMO Project is a non-profit organization that provides the only third-party labeling program in North
America for products grown without using genetic engineering. They verify that the process products go through, from seed to shelf, are produced according to their rigorous best practices for GMO avoidance.
rBST Free Recombinant bovine somatotropin (rBST) is a synthetic version of the Bovine somatotropin (BST) hormone found in cattle. The hormone is used by many commercial dairies to increase milk production.
Sustainable Agriculture A holistic method of agricultural production and distribution that strives to be ecologically sound, economically viable and socially just. A system capable of maintaining productivity indefinably. The farm then becomes a vital economic part of the community, enhancing open space, providing community access to fresh food, and keeping the money spent on the farm in the community.
USDA ORGANIC Food is federally certified by the USDA to meet certain standards of
production. Big ticket items include limiting chemical
use, and prohibiting the use of GMOs and sewage sludge. Organic products are not all created equal, though. If you ever buy organic foods, it is important to know the difference between the products that are labeled “100% Organic”, “Organic”, “Made with Organic”, and products that include organic items in the ingredient list. 100% Organic–all ingredients must be certified organic, including any processing aids (e.g. preservatives).
Transitional refers to products from fields or farms that are in the process of being converted from conventional production to certified organic production. The USDA requires a minimum transition period of three full years, during which time the grower must comply with all National Organic Program standards.
Value-Added Products Any product that is originally grown by small family farmers and “increased in value” by labor, and creativity and sold direct to customers. The farmer develops and processes the end product themselves. Please note that many of these terms do not have legal definitions so may mean different things for different people. Our “Logo and Label 101” is a work in progress. We welcome any additions to help increase our knowledge. We encourage you to ask your local farmers or retailers for details about the foods they grow and sell.

INGREDIENTS:1 lb cabbage
2 tbsp water
2 tbsp butter
DIRECTIONS:1. If you are working with a whole
cabbage, cut in half and cut one half in half. Two quarters should be enough for this recipe.
2. Remove the core. Slice cabbage crosswise into half inch strips.
3. Wash cabbage, drain and set aside.
4. Preheat a large skillet. Add water and cabbage to skillet. Cover with a tight-fitting lid. Cook until cabbage starts to soften, about 5 minutes. Remove lid and continue to cook until all water has evaporated. Add butter. Stir to coat the cabbage.
Note: Leftover cabbage can be wrapped in plastic wrap. It will keep in the refrigerator for a couple of weeks.
