Step-by-step directions for preparing:
Roasted Potato Wedges

Step #1
Before you begin, sanitize work area.

Step #2 Gather ingredients and cooking
equipment.• Potatoes• Large colander• Cutting Board• Knife• Pan release spray

Step #3 Place potatoes in a colander.

Step #4 Scrub potatoes with a vegetable brush. Place in a steam table pan or lexan.

Note: Potatoes can be cleaned the day before and stored in the refrigerator.

Step #5 Cut potatoes into wedges by placing potato on the cutting board and cut potato in half.

You may also use your fruit slicers to cut the potatoes into wedges.
Step #6 Cut potato half into wedges by cutting potato halves into four pieces.

Step #7Spray pan with pan release spray.

Step #8Place potatoes on prepared sheet pan. Pour ¼ cup olive oil blend on potatoes. Note: 25 whole potatoes cut into wedges will fill a sheet pan.

Step #9Season potatoes with 1 ½ teaspoon salt and ¼ teaspoon pepper. Toss potatoes with gloved hands or spoon to evenly coat the potatoes with oil and seasonings. Potatoes should be in a single layer.

Step #10Place potatoes in a 350oF oven and bake for approximately 20-25 minutes until tender and golden. Halfway through baking stir potatoes so they brown evenly.To test tenderness of the potatoes, stick a paring knife into a potato wedge. The potato should be tender and pierce easily.

Step #11When potatoes are finished baking place them in a hotel pan. Place hotel pan in a steam table well on the serving line.
Serving Size: K-5: 3 wedges6-12: 4 wedges
