cut 1 or 2 slices from the pineapple, cut into wedges and reserve. Peel pineapple, cut into quarters and remove core. roughly chop, reserving about 1 cup of the pieces. Blend or juice remaining pineapple until smooth.

combine pineapple and orange juice in a large jug. add chopped fruit including the reserved chopped pineapple and mint leaves.

stir in lemonade and ice and serve in glasses garnished with the reserved pineapple wedges.
