    Ingredients

    500g of fresh Hokkien Noodles (yellow noodles) for 4~5 persons.

    6~8 midsize fresh prawns fry, de-shell and cut into pieces

    2 potato boil for 20 minutes, peel and cut into cubes.

    100g deep fried tofu, + 100g Dou Gan (Dried Tofu)- optional . dice

    both into cubes

    1 Cucumber cut and dice into quarters.

    1 fresh tomato slice to small pieces.

    50~60g Beansprouts.

    Shallots and large onions, chop to pieces.

    2 green chili chop to pieces

    2 stocks spring onions chop to pieces

    Seasonings:

    1. Curry powder 1 table spoon

    2. Belacan powder () 1 tea spoon

    3. Tomato Ketchup: 4~5 table spoons.

    4. Soya Sauce : 2 table spoon

    5. Sambal Chili sauce (): 1~2 Table spoon depend on how

    spicy you like it!

    6. Egg : 2 lightly beaten up

    Garnish:-

    Crispy Shallots to garnish on top of Mee Goreng before serving.

    Procedure: Rinse noodles with warm/hot water, drain and set aside

    Heat oil in Wok, add chopped shallot, onions, Belacan powder,

    curry powder and fry for 1~2 minutes till golden brown with

    great spicy fragrance.

    Add noodles, prawns, tomato, potato, ketchup, bean sprouts, soya

    sauce and fry for 3-4 minutes.

    Add egg, tofu, cucumber, Sambal chili paste, spring onion, cut

    green chili and fry for another 1 minute. (you can also use freshly

    chopped spring onion & cut chili as garnishing)

    Mee Goreng is done! Add Crispy Shallots as topping before

    serving

    Food Sense and wine

    Belacan Powder or paste

    Sambal Chili Paste

    Belacan powder is made from salted

    shrimp pulp that is dried in the sun,

    pressed through grinder and dried

    again. Then it is made and sold as

    blocks, powder or as paste. My favorite

    Belacan are from Penang!

    Sambal Chili is a made from Chili puree

    with small amount of other ingredients

    such as shrimp paste, garlic, shallots,

    citrus fruits, sugar, lime comes in big

    variety! Spice up your life!!!

    Wine Pairing with Mee Goreng

    It is not easy to pair wine with spicy

    food. Rule 1 is NOT to pair wine that has

    Oak flavor (means red wine) with spicy

    food! A nice glass of cold SauvignonBlanc (My favorite Marlborough Ridge,

    New Zealand) will surely do some

    wonders to enhance your Palate!!

    Otherwise a nice glass of Cold Beer or

    ice cold Lemonade to go with Mee

    Goreng on a hot summer day, simply

    heavenly!!!
