Rosemary Garlic Roasted Turkey

8 cloves garlic, crushed

1/4 cup (50 ml) chopped fresh rosemary

1/4 cup (50 ml) olive oil

Preheat oven to 325 degrees F

Mash together garlic, rosemary, olive oil, salt and pepper so that it forms a thick

paste.Rub rosemary garlic paste onto the breast meat under the skin, reaching in as far

as you can without tearing the skin, all over the skin and in the cavity. Add stuf� ng

and place the turkey, breast side up, on a rack in a shallow roasting pan. Place the

turkey into the preheated oven. Do not cover the pan. Roast, basting every 15 to 20

minutes with the pan juices, until a meat thermometer inserted into the inner thigh

reaches 170 degrees F (77 degrees C), approx. 3 to 4-1/4 hours. Remove roasting

pan from the oven and let the turkey rest at room temperature for about 15 minutes

before carving. Serve turkey with pan juices or use the juices to make gravy.

Rosemary Garlic Gravy

1/4 cup (50 ml) fat from the roasting pan • 1/4 cup (50 ml) fl our

2 cups (500 ml) defatted turkey pan juices, turkey broth, water, or a combination.

In a saucepan, combine the fat from the roasting pan and fl our. Cook, stirring

to eliminate any lumps, for just a minute or two. Whisk in turkey juices, broth or

whatever liquid you’re using and cook, stirring constantly, until the gravy thickens.

Let simmer over low heat, whisking occasionally, for 6 to 8 minutes.

Whipped Shortbread

1lb butter1 cup icing sugar1/2 cup corn starch

3 cups Flour1 tsp. VanillaChopped nuts or cherries (optional)

Preheat oven to 350degrees F

Cream butter. Add ingrdients in order. Drop from

teaspoon on to cookie sheet. Adorn with tiny pieces

of nuts or cherries. Do NOT bake until brown!

Eggnog Muf� ns

3 C fl our1 T baking powder

1/2 C + 1 T sugar

1 tsp + 1/2 tsp nutmeg

1/2 tsp + 1/4 tsp cinnamon

1 C milk1/2 C melted butter

1 tsp rum or rum extract

Preheat oven to 400°. In a large bowl, combine fl our, baking

powder, 1/2C sugar, 1 tsp. nutmeg and 1/2 tsp. cinnamon, set

aside.

In medium bowl, whisk eggs, milk, butter and rum. Pour liquid

ingredients over dry and stir just until mixed.

Spoon batter into 12 greased muf� n cups.

In a small bowl, combine 1 T sugar, 1/2 tsp nutmeg and 1/4 tsp.

cinnamon. Sprinkle evenly over muf� n tops. Bake for 20 minutes

or until golden.

The Night Before ChristmasA Visit From St. Nicholas - Henry Livingston, 1808‘Twas the night before Christmas, when all through the house, not a creature was stirring, not even a mouse.

The stockings were hung by the chimney with care, in hopes that St. Nicholas soon would be there.

The children were nestled all snug in their beds, while visions of sugar-plums danced in their heads; and mamma in her ‘kerchief, and I in my cap, had just settled down for a long winter’s nap, when out on the lawn there arose such a clatter, I sprang from the bed to see what was the matter.

Away to the window I � ew like a � ash, tore open the shutters and threw up the sash. The moon on the breast of the new-fallen snow, gave the lustre of mid-day to objects below. When, what to my wondering eyes should appear, but a miniature sleigh, and eight tiny reindeer.

With a little old driver, so lively and quick,I knew in a moment it must be St. Nick.More rapid than eagles his coursers they came, and he whistled, and shouted, and called them by name;“Now! Dasher, now! Dancer, now! Prancer, and Vixen! On! Comet, on! Cupid, on! Donner and Blixen! To the top of the porch! to the top of the wall! Now dash away! dash away! dash away all!”

As dry leaves that before the wild hurricane � y, when they meet with an obstacle, mount to the sky, so up to the house-top the coursers they � ew, with the sleigh full of toys, and St. Nicholas too.

And then, in a twinkling, I heard on the roof

the prancing and pawing of each little hoof.As I drew in my hand, and was turning around, down the chimney St. Nicholas came with a bound.

He was dressed all in fur, from his head to his foot, and his clothes were all tarnished with ashes and soot.A bundle of toys he had � ung on his back,And he looked like a peddler just opening his pack.

His eyes – how they twinkled! His dimples – how merry! His cheeks were like roses, his nose like a cherry! His droll little mouth was drawn up like a bow, and the beard of his chin was as white as the snow;

The stump of a pipe he held tight in his teeth, and the smoke it encircled his head like a wreath; he had a broad face and a little round belly, that shook, when he laughed like a bowlful of jelly.

He was chubby and plump, a right jolly old elf, and I laughed when I saw him, in spite of myself. A wink of his eye and a twist of his head, soon gave me to know I had nothing to dread.

He spoke not a word, but went straight to his work, and � lled all the stockings; then turned with a jerk, and laying his � nger aside of his nose,and giving a nod, up the chimney he rose.

He sprang to his sleigh, to his team gave a whistle, and away they all � ew like the down of a thistle.

But I heard him exclaim, ere he drove out of sight, “Happy Christmas to all, and to alla good-night!”
