Chefs must have at least 7 years experience in a high-end Chocolate Production Shop or high-end catering establishment. Chefs should be passionate, motivated professionals with excellent written and spoken English, and Food Safety knowledge. Candidates will direct our chocolate programme, creating innovative products for our guests. They will be responsible for tempering all kinds of chocolates, using many skills to create multi-variety moulds and hand shaped confections. Chefs must have an extensive knowledge of the flavour, texture and other chocolate properties so as to be confident in creating desserts, candies, sculptures and decorative pieces. Decorating knowledge using all types of materials e.g. spray gun, transfer sheets, calligraphy on confections is a must. Chefs will be abreast of the latest industry trends and developments, using such information to produce innovative products for our guests. Strong leadership, organizational and cost-control skills are required for this role.
