Protein Veggies Sauce
Choose 1
Cook pasta or pasta
substitute. Set aside.
2. Wash and chop onion,
garlic, veggies & greens.
3. Chop your protein. If using
beans, drain. Set aside.6.

Lemon-Oil Dressing (juice & zest of 1 lemon
+ 2T olive oil)

Follow these simple instructions to make a pasta dish with ingredients that are available to you.
Choose 2-5 plus onion & garlic
Fresh Basil
Fresh Parsley
Grated Parmesan Cheese
Mozarella Cheese
Any
4. In a large skillet sauté onion
& garlic until fragrant. If
using meat or tofu add to
skillet and sauté until brown
& cooked through. Set aside.
Add 1 tablesepoon oil to
empty skillet; sauté veggies on
medium heat, starting with
hardest veggies, then adding
softer. Cook until tender.
Add your protein and 1 cup of
sauce or all of the dressing.
Stir until warmed through.
7.Add leafy greens and stir
until wilted.
8.Place pasta or substitute in
bowl. Add a scoop of veggies
and sauce! Add toppers!
