Headquartered in the bustling, thriving metropolis of Dubai,

Since our inception, the restaurant concept has grown to include

central warehousing and a central production kitchen for all

The Café Restaurant represents the core of the concept. While every restaurant is distinctly “Shakespearean”, each outlet is unique in terms of colors, décor and layout that differentiate us from the typical “cookie cutter” concepts. Each restaurant is conceived, designed and decorated by our in-house Design Team, and every piece of furniture and fixture is handcrafted in our very own workshops. patrons who visit our restaurants. We use classic methods and fresh

In 2004, Shakespeare and Co. added Patisseries to its repertoire. These have proveb to compliment the concept flawlessly, with an impressive slection of pastries, viennoisserie, petit fours, macarons and marshmallows all produced in our state-of-the-art- pastry ktichen and delivered fresh to each outlet every morning. Shortly thereafter, Shakespeare and Co. Chocolates made their debut in our distinctive pastry counters. Homemade with quality ingredients using artisanal methods, every piece of chocolate is individually hand wrapped in distinctive Shakespeare packaging. Our chocolates have become renowned and sought-after in the region for their exceptional richness and flavor, and unique presentation.

Key Business Functions

All ordering, receiving and shipping is coordinated from Shakespeare and Co.’s 35,500 square foot warehouse facility, featuring centralized patisserie and kitchen operations. From this prime location within Dubai – and 1 hour and 30 minutes from Abu Dhabi, Ras Al Khaimah and Fujairah – all UAE establishments are supplied with food, beverages, patisserie items and general supplies on a daily basis. Catering operations are also based within the facility. The facility also houses the company’s Design Department workshops featuring a team of over 60 personnel specializing in paint, carpentry and upholstery, as well as a graphic design studio. These creative operations under the direction of the Director of Design and Merchandising, produce key proprietary elements of the concept – including furniture and fixtures, as well as printed materials destined for both UAE and International franchises.

Providing consistent, personalized service is crucial to the success in the restaurant industry. Particular emphasis is placed on staff development and training, which leads to promotions and ultimately effective staff retention. Each restaurant features front-of-house teams led by a Restaurant Manager,

supervising a team of supervisors, captains, waiters, bartenders and housekeeping, and a back-of-house team led by a Chef de Cuisine, sous

External advertising is highly selective, focusing primarily on “word-of-mouth” reputational promotion. Domestic Growth

Due to a solid foundation, Shakespeare and Co. has grown rapidly over the last decade in spite of market turmoil. The brand has achieved great success throughout the UAE, with an ambitious plan to establish 40 stores by 2017 currently underway. The versatility of the concept and increased brand recognition has paved the way for restaurants to be established in a variety of locations, including regional supermalls, stand-alone locations and mixed-use developments.

In addition to the potential for future expansion in the UAE, the company has also fostered its growth across the MENA region with international franchise locations currently operating in Lebanon, Qatar, Oman, Jordan and Egypt. 2015 will see the brand open its doors in the territories of Bahrain, Saudi Arabia and Iraq. The Retail Chocolate Division, Catering Division and the Patisserie Division within Shakespeare and Co. are all developing businesses that offer diverse revenue streams and enhance the core business. Dr. Edward T. Saad Chairman and Founder

Established Gulf Interstate Oil Company in 1988, which provides consultancy services and supplies crude oil and finished oil products around the world. Established Plastcrete Middle East in 1995, a company active in building materials for the construction industry. Dr. Saad holds an Msc in Chemical Engineering from M.I.T. and a PhD. In Chemical Engineering from the University of Kentucky.

Gaetan Herve General Manager

Gaetan joined Shakespeare and Co. as Operations Manager in January 2009. His career milestones include tenures with the Boca Raton Resort in Florida, Intercontinental Hotels Group in Spain and Belgium, and Four Seasons Hotels in London and Dubai. Born in Aberdeen, Scotland of French heritage, he holds a degree in International Hospitality and Tourism Management from the Glion Hotel School in Switzerland.

Cyrus Graesslin Regional Director of

Operations and Franchises

Cyrus, who calls the Black Forest region of Germany home, joined Shakespeare and Co. in 2011 as Regional Director to oversee the company’s expansion plans in the MENA region. His extensive experience includes managing restaurant chains Café Italia and Al Ghalia Group in Bahrain, and managerial positions in five star hotel chains such as Accor, Mövenpick, Hyatt and Rotana in Switzerland, the United States, New Zealand and the United Arab Emirates. Cyrus holds an Associate’s Degree in F&B and a Diploma in Hotel Management from Les Roches Hotel Management School in Switzerland.

Charbel Khachan Group Executive Chef

Chef Charbel joined Shakespeare and Co in 2008, after a distinguished career in hospitality with over 20 years of experience in five star hotels including the Phoenicia and Vendome Intercontinental Hotel Group, Le Meridien, Marriott and Regency Palace. He holds a polytechnics degree in Hotel and Restaurant Management from Kafaat University in Lebanon, an Executive Master of Business Administration from the University of Atlanta, is a senior member of the World Association of Chefs and World Chefs Culinary judge.

Pascal Dupuis Executive Pastry Chef

Chef Pascal joined Shakespeare and Co. in 2006 to take the helm of the newly established Patisserie Division. He has had an exemplary career spanning two decades in prestigious establishments, such as the Cannelle Patisserie in Lebanon, Patisserie Thilloux and the Ritz Hotel in Paris, including a stint in the French President’s kitchen at the Elysee Palace. He has won a number of awards, including Meilleur Apprenti de France, and has designed custom cakes for celebrities, as well as prominent political and religious figures. Pascal holds a Brevet de Maitrise in Pastry.

Corina Carstea Human Resources Manager

Corina, a native of Romania, joined Shakespeare and Co. at its pre-launch stage in 2001 and rejoined in 2008 as Human Resources Manager. She has over eight years of experience in the hospitality industry in guest relations, finance and Human Resources. As part of her experience within the Jumeirah Group, she earned a certificate in Human Resources Management.

Arbindra Khatri Operations Manager

UAE/Franchises

A native of Nepal, Khatri attended Triviwan Univirsity where he pursued Graduate Studies in Commerce. After completing his management training, he landed on the shores of Dubai in 1997 and after a distinguished 4 year career at Hyatt, he joined Shakespeare in Co as one of the original pioneers. Possessing a knack for customer service and an eye for detail, he was assigned to head the opening teams for Al Attar Business Tower, Safa Center and The Village. He currently oversees operations for the entire UAE portfolio as well as Outside Catering.

Ala’ M. Jasser Director of Design

Ala’ brings 15 years of experience in the field of marketing and design, and holds an MBA in Marketing from the New York Institute of Technology and a B.A. in Economics from the University of Jordan prior to taking the helm of our Design Department in early 2016. Holding both Canadian and Jordanian citizenship, his career highlights include early stints in the marketing and public relations field, before venturing into his own business as a Creative Director and Brand Manager for a boutique design house, and high end fashion retailer.

Lal Ravindran Senior Finance Manager

A graduate of the University of Kerala in 1980, Lal’s experience in the field of Finance spans over 35 years. He spent the early part of his career with a Kerala State Electronics Development Corporation (KELTRON), starting as a Trainee, before eventually rising to the positions of General Accounts, and finally Accounts Manager . The association with Keltron endured until 2003 when he ventured to UAE where he served as an Accountant in a Design and Interior Furnishing Firm of a sister organization, before transitioning to Shakespeare and Co. in 2004.

Heloise Lambert Sales and Marketing Manager

A native of France, Heloise brings experience in Business Development, Events/Project Management and Marketing, her most recent stint handling Foodora’s Corporate Sales, with prior tenures with Ecoplage S.A as a Business Development Manager, and Cluster Marketing Executive of Brands and Designs for Hilton Worldwide. She holds a Master of Science in General Management from the Graduate School of Aix en Provence in France, and a Bachelor in International Business from the University of Central Missouri in the United States.

Liquid assets are one of the primary indicators of whether or not a prospective franchisee is able to establish and operate a Shakespeare and Co. establishment. While total investment required can vary depending on each market, the average initial investment to open a typical 3,600 sq. ft restaurant is USD $ 1 million. A considerable portion of this cost can be derived from conventional sources. Shakespeare and Co. does not provide financing to franchisees, guarantee any note, lease or other documents, nor entertains joint venture proposals.

While we expect our franchise partners to possess an intimate knowledge of the territory they are developing, the site selection process can be a daunting task. We advise on the viability of a potential site according to key criteria, and locations must be mutually agreed upon. Then the design process begins. Based on LOD’s provided by the franchisee, our in-house Architectural and Design Team undertake both the initial concept drawings, as well as the detailed concept drawings including full layouts (general, flooring, partition, ceiling and kitchen equipment), sectional elevations, detailed drawings and full 3D (3 dimensional) renderings required by the developer and the franchisee’s appointed contractor.

The initial stages of establishing a restaurant operation is a stressful

period, even for the most battle-hardened. But from the moment the agreement is signed, our team of corporate staff commences their start-up phase support, providing counseling on site selection, training and

recruitment, purchasing of equipment, construction, and implementation of the concept’s standard operating procedures through

comprehensive, user-friendly reference materials and tangible, on-site support.

In the days preceding the opening, we deploy a Franchise Task Force to ensure the operation and employees are ready for the challenges ahead.

The lead up to opening

The key to success of a Shakespeare and Co. franchise is full implementation of standards of food, service and quality. We ensure this by training every new outlet opening team in every facet of the operation – from operation of equipment, food and beverage preparation, steps of service and effective guest relations, product knowledge, and administrative responsibilities and recordkeeping. There is no defined period as to how long our task force remains on the ground – we will remain until both franchisee and franchisor are confident the operation is stable and the staff are confident and capable of continuing on their own.

Other Considerations

- Establishing and operating a restaurant business is a capital-intensive venture. We provide expert guidance, from validating a franchisee’s feasibility studies, to guidance in maximizing sales and operational efficiency to increase profitability.

- Depending on the size of the market, the company may require the franchisee to open a

minimum number of outlets within a specified time frame. Each new outlet will receive pre-opening assistance from the franchisor.

- Recognizing that each franchise opportunity will be unique to a particular territory/situation, a party wishing to explore franchising opportunities with Shakespeare and Co. should embark on preliminary discussions to identify territorial requirements, restrictions, etc., and negotiate/amend details of the franchise arrangement to the satisfaction of both parties.

The company will continue to support the franchisee’s operation of the Shakespeare and Co. brand during the term of the license agreement through regular management inspections/evaluations, conducting mystery shopper visits, making recommendations on targeted sales and marketing campaigns, ongoing training support, marketing support, and providing the benefits of any new product and design development.
