(DINING OUT LOVELY LADIES)By Jill Schein

Well, it’s really been a long time. I’m so sad we couldn’t all get together, but the important thing is that we all stay safe. I’m sure you miss eating out as much as me. I do, however, hope you are all eating well at home. Eating healthy and nourishing our bodies properly is a great defense during these times. Try to add more vegetables into your diet. Put down the chips and cookies (this is hard for us all) and try to pick up more fruit. Go for a walk around the neighborhood and (from a safe distance) say, “hi” to your neighbors. If you are looking for some good healthy ideas for meals or have any questions, please feel free to call me at…941-962-9234. If you are staying home, and need any assistance with some shopping, please let me know that, too. Here is a quote from Hippocrates that I love…

“Let food be thy medicine and medicine be thy food.”And a quote from Dr. Colin Campbell…“Nutrition, when done right, can create more health than all

the pills and procedures combined.” Cheers to your good health and good eating. Until we dine out next!

Amie Spencer - “Thinking Out Of The Box”

by Kay Luczak From Cincinnati, Ohio, to San Francisco, California, to Bradenton, Florida. As a Libra, she keeps her life in balance, working with people, helping people, and her love of pho-tography. Starting in Cincinnati where  she received her training by the top therapists, her treatment program was # 3 in the area. She did a live 3-minute TV show every morn-ing at 7 a.m. where people could ask questions. Her motto: “never” be afraid to ask the question. Most of her career has been associated with Social Services for families and children, women in cults, domestic violence, and children who were abused.  She worked with parents to help them feel comfort-able with learning the skills of being a good parent. She worked for 5 years at Head Start to develop skills in the Early Childhood program. She also worked with hardcore young teenage girls - even the youngest bank robber who was a fifteen-year-old girl. She dealt with 25 girls who were in lockdown.  When she moved out to California, she worked for the mayor of San Francisco and moved on to Family Services in Chinatown at the Family Resource Center in San Francisco. Her entire staff all spoke only Chinese. This had to be a handicap for her, by the way, but she was able to get through it. While she was there, she designed a “Baby Box” to help keep the newborn from sleeping with the mother. The Box contained newborn items, bottles, baby clothes, etc. The Box itself was designed to look like a bassinet so that the baby would have his / her own bed to sleep in. While she was in San Francisco, Tech Industries came into the area and forced a lot of people to lose their housing as rent went from $800 per month to over $4,000 per month. She developed a program where older folks took in boarders (now homeless people) to use their spare bedrooms and in turn gave them someone to live with so they were no lon-ger living alone. I applaud her, for that had to be quite an undertaking. But, how wonderful to fit people together! From Cape Hatteras to Maui, Hawaii in her free time she windsurfed. While windsurfing she took numerous pictures and wrote numerous articles including one for the New England Windsurf Journal where her photography stood out from the others. Her photography, which started with her brownie camera at the age of 9, then on to a Polaroid camera, before getting her good camera equipment, is well known for her published articles.  Retirement is still not in the forecast for Amie as she starts on her next adventure traveling around to see and photo-graph some of the wonders of America. By the way, Amie is licensed to charter sailboats anywhere in the world so maybe we’ll see photos coming from Japan or Australia or somewhere unknown one day soon. Good luck on your next adventure Amie, we will be looking forward to your latest posts.

Keep The Recipes Coming . . .MRS. MEYERS COOKIE BARS

by Debbie Thornton My grandmother was fortunate enough to attend the Indiana University of Pennsylva-nia and when she graduated, she became a grade school teacher and taught school for over 35 years! In the summer, my sister and I would stay at my grandmother’s home for a whole week for a visit. Grammy would take us shopping, dining, and on visits to our other aunts and also to some of her school teacher friends’ homes. One of those school teachers was Mrs. Meyers. Her home is where I first tasted these delicious spice raisin bars. When I received the recipe from her, it was not titled; and so, I named them “Mrs. Meyers Cookie Bars”. Bake a batch and enjoy! Simmer for 20 minutes:

1 cup raisins 1 ½ cups water ½ cup butter

Add 1 cup sugar and let mixture COOL. When cool, add the following ingredients:

1 egg 2 cups flour 1 teaspoon baking soda 1 teaspoon cinnamon ½ teaspoon clove ½ teaspoon nutmeg ½ teaspoon salt ½ cup chopped walnuts

Bake at 350 degrees on greased and floured cookie sheet (or if you like a thicker cookie bar – use a 13x9 pan) for 15 – 20 minutes. Let cool and then add icing: ¾ lb. powdered sugar, 1 tablespoon butter, 1 teaspoon vanilla, pinch of salt, and then add milk slowly for consistency. Delicious! Have one in the morning with your coffee!

$3595$3595I am so pleased that I called this company to replace my old AC unit! The owner, Lori, could not have been any kinder and very informative with the different products that they carry and install. She explained all the costs to me and also sent me a proposal to review. I was pleasantly surprised that it didn’t have the sting that I thought it would have and the cost was very reasonable. I also want to give a shout out to Craig and Jacob who showed up for the job propmtly and were very knowledgeable and super polite and friendly. I will definetely tell family and friends or anyone looking for a new A/C, service or maintenance to call Integrity AC! Sure glad I did!
