How Sweet It IsA 10,000-year-old cave

painting in Spain depicts twowomen collecting honey from awild bee hive. The practice ofkeeping bees to produce honeydates back to at least 700 B.C.

Here are some more factsabout this sweet treat:

• In addition to a foodsource, honey is usedfor medicinal andcosmetic purposes.

• According to the NationalHoney Board, the averageAmerican consumes about1.3 pounds of honeyper year.

• Honey bees must visit2 million flowers toproduce one pound ofhoney. The bees’ source ofnectar determines the colorand flavor of honey. Typesinclude alfalfa honey,which is light in color witha mild flavor, and orangeblossom honey, which hasa slight citrus taste.

• Store honey tightly sealedand out of direct sunlight.If honey crystallizes, placethe container in hot waterfor 15 minutes.

• For centuries, honey hasbeen used to help healwounds. Researchers thinkthis works because honey’smain components, glucoseand fructose, attract water,drying the wound andinhibiting the growthof bacteria.

Recently we ventured out toone of our favorites, “The BlackBear Diner” where staff is alwaysfriendly and the food is alwaystasty.

Apples and DiabetesA study published in the

American Journal of ClinicalNutrition found that peoplewho ate five or more apples aweek had a 23 percent lower riskof developing type 2 diabetescompared with those who didn’teat apples. Certain flavonoids inthe fruit may be the reason forthe lower risk.

Sapphires for SeptemberSapphire is the birthstone for

the month of September. Blue isthe most popular color for thesegems, but they can be almostany color, including yellow,

green, pink, orange and purple.Sapphires have been treasured

for thousands of years. Theancient Persians believed theEarth rested on a giant sapphire,and its reflection made thesky blue.

Sapphires are associated withthe virtues of truth, loyalty anddignity and are a favoritegemstone for royalty.

Sapphires belong to thefamily of minerals known ascorundum. They are one of thehardest gemstones, second onlyto diamonds.

Countries that producesapphires include Sri Lanka,Thailand, Cambodia, Australiaand Madagascar.

Resident HighlightAudrey Osborne

Audrey was born in Washta,Iowa and lived on a farm withher parents and two sisters,Kathleen & Margree. Audrey metand married James, her highschool sweetheart, at the age of17. They have two children,Michael who lives in Chico andDoreen who lives in Tracy. Also,she has five grandchildrenand six great grandchildren.

Audrey moved to Oakland,California in January of 1941.She attended business schooland was secretary at AmericanHome Foods for 20 years. In1968 Audrey and James rentedtheir first home in Vacaville.They liked the area so well thatthey bought a home andeventually built their own homein Leisure Town. Audrey studiedand received her Real EstateBroker License in 1969. She alsobecame a Worthy Matron ofEastern Star in 1974 and is still amember. Audrey retired in 1984and she and James bought an RVand traveled all over the US.Sadly, James passed awayin 2004.

Audrey moved to Emeritus inMay of 2012 where she enjoysplaying Bingo and Pokeno withother residents. If you haven’thad the chance to meet Audreyyet, we hope you will as she is avery sweet lady and we’re happyto have her as part of ourEmeritus family.

Audrey is outgoing, social and active, ifyou haven’t met her yet, stop on by hertable and say “hello”.

Garlicky Sweet-PotatoFries

2 Large sweet potatoes,scrubbed and

cut lengthwise into 1/2 inchthick wedges

1/2 cup olive oil1/4 cup chopped fresh parsley4 garlic cloves, mincedSea Salt and freshly ground

pepper1. In a large bowl, toss sweet

potatoes with olive oil, parsley,garlic, 1 tsp salt, and 1 1/2 tsppepper until evenly coated.Cover with plastic wrap andmarinate for 2 hours.

2. Heat grill to medium. Grillsweet potatoes until tender,turning once. 7 or 8 minutes perside. Serve hot or at roomtemperature, with dippingsauces if desired.

Makes 8 servings

Creamy Scallion DipCombine 1/2 cup

mayonnaise, 3 tablespoonssliced scallions, 2 teaspoonsDijon mustard, and 1 teaspoonWorcestershire sauce.
