Presidents Message September 2013 Greetings, Welcome back everyone and a very warm welcome to the many new members who have signed up over the summer. The Centre is officially open on the 9th of this month and most programs, including the lunches, will be up and running from then on. Be sure to check that your activity is on at the time and day you expect it. Also the sign up sheets for front desk and kitchen volunteering still have some empty spots which need filling – if you can spare us an hour or two. We certainly lucked out with another summer of sunshine, again! The gardens have been very productive giving those of us who indulge in such habits, full shelves and freezers of home grown preserved produce. Sechelt was full of visitors and parking became difficult. I am enjoying the experience of being able to go shopping without trolling the parking lot for a space. Thanks to Ron Atkinson and Bill Brown, who spent most of the summer here. Our kitchen has had a magnificent refit. Walls have been painted, cupboards with locks installed, new counter tops etc. Take a peek when the kitchen is not being used. It has made me very aware of just how desperate my own kitchen is in need of refurbishing. Also in the bar area you will find that the fridge has been replaced. This has been deliberately set away from the back wall, so please don’t “push it into position”. Thanks also to Jim Coffin, another Busy Bee over the summer, who tackled ALL the floors and made the Centre look and smell so good. This year the Centre entered both the Canada Day Sechelt Parade and the Gibsons Sea Cavalcade. The bus was decorated and some of your directors handed out Canada pins. The Gibsons Sea Cavalcade was a much grander affair and was produced by the Funtastics group on behalf of the Centre. Not surprisingly they won first prize! Thanks to Sharon Wood who supplied balloons for both events. The Watermark ‘Rocky Mountain Rail Trip’ was won by Lillian Peters – congratulations to Lillian! I look forward to meeting you all again and hearing of the grandchildren visits, the trips you took and everything else that has happened over the past two months. Best regards, Barbara

10 Day Holland America Cruise Raffle

The Sechelt Seniors Activity Centre is currently raffling tickets for a ten

day Holland America cruise for two in an outside cabin. This cruise can be used anywhere in the world and has no expiry date. A maximum of 400 tickets will be sold. All monies raised will be used to replace the sound system et the Centre with a new, user friendly, audio-viual system. Tickets are $20.00 each and will be sold at the Centre and Mosaic Market in Davis Bay. Tickets will also be sold every Saturday from 11:00 am to 3:00 pm , August through October at the Trail Bay Mall. DRAW DATE IS OCTOBER 19.

THEY DIDN’T KNOW WHAT HIT ‘EM! The Sechelt Seniors Activity Centre entry received first place in the Gibsons Sea Cavalcade parade on July 27th.The entry involved our bus decorated with an octopus on the roof, balloons and other sea life décor and a trailer with balloons, mermaid, decoration signs and seven characters in 1920’s style bathing suits, complete with umbrellas and a life guard. Seaside music was played and twelve more persons walked the parade route including Mounties on horses, Keystone Cops, a busy bee and flower, two convicts and a Sechelt Seniors Activity Centre sign. A huge thank you to all those who participated in the parade, we couldn’t have done it without you!

COOKING FOR TWO Pecan Chicken with Creamy Honey-Mustard Sauce

Ingredients Chicken 2 boneless skinless chicken breast halves 2 tablespoons all purpose flour 1/3 cup honey mustard salad dressing 1/2 cup finely chopped pecans 2 tablespoons butter Sauce 2 tablespoons honey mustard salad dressing 1/3 cup sour cream 1 teaspoon sliced green onions Step 1: - Place 1 chicken breast half, boned side up, between 2 pieces of plastic wrap or waxed paper. Working from center, gently pound chicken with flat side of meat mallet or roll-ing pin until about 1/4 inch thick; remove wrap. Repeat with remaining chicken breast half. Step 2: - Place flour, 1/3 cup dressing and pecans in 3 separate small flat dishes. Coat each chicken breast half with flour. Dip in dressing to coat well. Dip in pecans, coating both sides. Step - 3 Melt butter in medium nonstick skillet over medium-low heat. Add chicken; cook 2 to 3 minutes on each side or until chicken is fork-tender and juices run clear. Remove chicken from skillet; place on serving platter. Cover to keep warm. Step - 4 To drippings in skillet, add 2 tablespoons dressing and sour cream; cook and stir un-til mixture boils and thickens. Pour over chicken. Sprinkle with onions.

Expert Tips: - In this recipe, the chicken breasts are pounded thin so that they cook quicker. The pecans coating the chicken tend to burn easily, so a shorter cooking time at a low tem-perature is necessary. This pecan chicken recipe is the perfect entrée for a Southern-style meal. Sweet potatoes, buttermilk biscuits and collard greens or a green salad complete the menu. Other nuts can be used in place of pecans though.

Laughter yoga (Hasyayoga) is a practice involving prolonged voluntary laughter. It is based on the belief that voluntary laughter provides the same physiological and psychological benefits as spontaneous laughter. Laughter yoga is done in groups, with eye contact and playfulness between participants. Forced laughter soon turns into real and contagious laughter.
