SEbastien Gaudard Chef Pâtissier Not much past 6am, before the sun has kissed Paris’ glorious rooftops, pastry chef Sébastien Gaudard and his trusty Jack Russell, Hot Dog, are out the door and making their way via scooter to Gaudard’s eponymous pâtisserie on Montmartre’s rue des Martyrs. If you peer through the windows of the chef’s elegant shop with its inviting old world charm, you’ll see a luscious display of Mille-Feuilles, Paris-Brest, Bombe Chocolat, Chou Chan- tilly, Saint-Honoré, and an array of gâteaux, preserves and macarons. Don’t be surprised if you find it a struggle to depart. As a second generation pâtissier born in Lorraine, Gaudard has the unique ability to both respect the traditions of the past while embracing innovation, and the results draw devotees from around the world. Ever the intrepid traveler, Gaudard is perpetually on the move, whether on expedition in Peru to seek out the world’s finest chocolate, or closer to home, concocting delicacies for his grand new tea shop near the Louvre. Before the day draws to a close Gaudard will explore the famed Marché aux Puces in search of antiques (Hot Dog in tow) and settle in for a show at the Opéra Garnier with friends.
