introductionThere are some great pubs and bars in Scotland, and I’ve been fortunate enough to visitmost of them in my job as Editor, for the past 17 years, of the pub industry’s trademagazine, DRAM. This book highlights 100 of my favourite bars and pubs, which areamong the very best that Scotland has to offer, that’s not to say there are not many morethat deserve inclusion.

This pictorial guide highlights pubs and bars that excel in keeping and attracting customers.Whether it’s their stylish surroundings, traditional charm, excellent service or greatambience, they are all great examples of Scottish hospitality at its best.

This members club opened four yearsago and is still a major draw in thecity. Indeed it has never been sopopular. That’s no doubt due to theexcellent service, quality food, andgeneral relaxed ambience that theclub offers. Situated at the very heartof the city centre, at Royal ExchangeSquare, it has a modest entrance, buta very plush interior. From its livelyOyster bar, to its fabulous outsideterrace, private dining rooms, andNetwork bar, whether you are using itfor business or pleasure, you won’t bedisappointed. It’s most recent awardwas for The Grill which recentlypicked up an Eat Scotland SilverAward.

Its outdoor terrace, probablythe best in Scotland.

The Admiral is one of Glasgow’s mosticonic traditional bars, but it also hasa modern twist. Original featuresincluding ornate tiling, cornicing andwood panelling, marry together with amodern basement club and musicvenue. In the past the likes ofentertainers including Billy Connollyfrequented the pub. Today thecustomers include the after workcrowd, and people who like a laid-back chilled club atmosphere and, ofcourse, live music. It’s open until3am, and during the day it serves upa popular menu, which includes thelikes of pies and pizza.

It doesn’t matter what time of day youvisit this bar, there are always folk init. From young professionals to musictypes, in fact all types. It’s got ashabby chic feel, that is bothwelcoming and comfortable. In thesummer its doors open up to allowyou to catch the suns rays, while inthe winter you can sit at the bar andenjoy the banter. It was one of the firstbars in Glasgow to offer WEST beer,and staff are always happy to tell youof the latest addition to its drinksrepertoire. Its food is tasty too, and itsburgers are among the best in thewest. The bar has got staying power...once you are in, you don’t want toventure back out!

Small, but beautifully formed, springsto mind when you visit this bar. It’ssituated above Café Gandolfi, and it’samazing the number of folk that don’tknow it’s there, which is surprisingbecause it’s a great bar. It has anexcellent range of wines and spirits,and staff make some super cocktailstoo. It’s very light and airy during theday, and cosy and intimate at night.It’s not a place to go with a large partyof folk, but it’s ideal for a crowd of twoor four, with small tables, crafted byPaul Hodgkiss, and stools at the bar.The menu is not large, but the food isexcellent. It offers traditional dishessuch dishes as mince and tatties butalso caters for more adventurouspalates too.

The secretative nature of thisbar, a hidden gem.

Bar Ten, opposite the Lighthouse inMitchell Lane, claims the titleGlasgow’s original “style bar”.Designed by Ben Kelly, creator ofManchester’s legendary HaciendaClub, this bar captures the essence ofa busy, metropolitan Euro-bar. It stillappeals to an early 20’s crowd, andhas an energy and vibe which sets itapart. The staff too are laid back, butefficient with it, friendly and on-theball. Entertainment comes in theform of DJ’s at the weekend and pubquizzes and suchlike during theweek. Bar Ten is a good place to stopfor lunch, with a hearty home-cookedmenu providing something for everytaste.

This truly is one of my favouriteScottish pubs. It’s definitely not big,but it is a great wee pub, situated inan area that is up and coming. A greatselection of whisky, after all this is arenowned and award winning whiskybar, super staff, particularly mine hostElaine, and a motley selection ofcustomers all help create a real buzz.Whether you are wearing a suit, ordungarees, 80 or 18, you arewelcome at the Ben. Dogs too havetheir place, and a few treats are keptfor them behind the bar. There’s livemusic, mainly of the spontaneousvariety, and there’s always somethinggoing on.

One of the original Merchant Cityestablishments, and one of the mostpopular, Blackfriars remainsdedicated to serving up quality beer.It’s also got one of the best selectionsof beer around, from the up andcoming Brewdog brews to DeucharsIPA, and a raft of guest ales. It reallyappeals to beer enthusiasts. Howeverit has mass appeal too because of itsrelaxed ambience. Wooden floors, acouple of giant barrels, and bric-a-brac creates a slightly bohemian feel,and it attracts everyone from studentsto professionals. Live music is aregular feature and it also offersreasonably priced and tasty food.

This bar and restaurant only openedin 2010, and is a welcome additionto the Kelvingrove area. It must haveone of the best views in Glasgow,overlooking Kelvingrove Art Galleryand the park. It’s stylish with nods toits Butchershop name in the shape ofwhite tiles, and some artwork, and ofcourse when it comes to the food. Itoffers great steaks and burgers andfresh seafood too. The bar haspolished wooden floors, tall posingtables, and booths, and there is anoutside decked area as well. In winterit’s cosy, and in the summer you canhang out on the deck. It’s vibe is laidback, but comfortably stylish.

What’s special?

Its food, from its steaks to itscalamari.

This bar was doing eclectic, justabout before any bar in the country.From its mismatched furniture to itsteacups and cutlery, you’ll recogniseitems from your granny’s parlour inthis city centre bar. In the bar itselfthere are armchairs and sofas, but ona busy night the chances of getting aseat are just about nil. The restaurantarea is immediately adjacent to thebar, and serves up great food. Fromtraditional steak pies to pizza, it’s allcooked on the premises, and it’scertainly not average. Also worthchecking out is the tea room upstairswhich serves a great selection ofmouth-watering cakes.

Its décor, straight from a daygone by.

This is one of the Merchant City’shidden gems. Situated on the lowerfloor of the St Andrews in the Squarechurch, this stylish enclave offerssuperb Scottish cuisine, and anexcellent choice of drinks. Despitebeing a basement bar it is bright andairy, with plenty of tables, modernisedpews and comfortable booths. Largealuminium encased pillars offer asuper exhibition space for black andwhite photography of musicians, andthe daily specials board, whichincludes Scottish contemporary fare.This cafe bar also has very efficientand friendly staff and hosts plenty ofevents too.

This stylish art-deco bar is a newaddition to the Glasgow bar scene,and already it is proving immenselypopular. That could be because it isimmediately above Central Station,but it could also be because it is afabulous looking bar. Grand modernchandeliers, combined with anauthentic black and white tiled floor,and mirrored, art deco bar, sets off thechampagne buckets beautifully. If youprefer to have a seat though, you’d bebetter in the adjacent lounge which isfull of stylish comfy sofas and bucketchairs, there’s even a piano in thelobby to keep you entertained.

This bar is enjoyed by those in theknow. Situated just at Charing Crossand nearly obscured by a buildingthat stretches across the M8, it’s awee haven for a good pint of beer, andgreat bar food. In the summer its beergarden is a hidden oasis, west facing,and perfect on a balmy night. WhileBourbon aficionado’s can revel in itsextensive list. It’s got a stylishappearance, but its not too polished,in fact it’s the sort of place that thewriter Charles Bukowski, who createdthe character Chinaski, wouldprobably have at felt at home in. Hedidn’t think you had to ‘try’ too hard,and Chinaskis get this balance justright.

Its extensive bourbon range.

This stylish bar is located in theRadisson BLU Hotel Glasgow, but hasits own entrance, just round thecorner. It has floor to ceiling windows,which give the bar a nice airy feelingduring the day, but at night it turnsinto an intimate and cosy bar. It offersthe usual range of premium drinks,including lovely cocktails, as well asfood. It’s built over two levels whichmakes it a great venue for peoplewatching. Artwork by Sir Peter Blakehelp make this the most stylish bar inthis part of the city.

Criterion is an all-day cafe-bar-restaurant which takes its name froma fondly remembered Partickinstitution from an earlier era. Thisbar definitely belongs to the 21stcentury. It takes all the elements of aclassic Bistro café – from the outsideit looks like an Art Deco cafe, whileinside, a black and white floor, cosybooths, snazzy coffee machine, woodpanelling and a marble soda fountainadd to the illusion. It also has animpressive range of draught beers, anenticing cocktail list and a freshMediterranean menu. This is ameeting place for eating, drinking,gossiping, meeting old friends andmaking new ones.

This is one of Glasgow’s classictraditional bars, which has been inthe same family for generations. It’sgot a great convivial atmosphere withlots of characters, and that’s just thebar staff! Not only does the bar offer agood range of beers, continental andScottish, but the range of gins andwhisky is unusually comprehensivefor such a small bar. Since thesmoking ban it’s also become morefemale friendly with good coffee and apiece of shortbread on offer during theday, and there’s a small outdoordrinking area at the front which,when sunny, is great, while thelounge upstairs can be used for smallprivate functions.

What’s special?

Some great beer, a good well-served G&T and some realcharacters too.

The Drake only opened last year, andit already has its regulars, lots ofthem. You can’t fault this pub, fromthe food to the beer, the wine to thebar snacks. It’s one of these placesthat you want to come back to andbring your friends. A log fire, candles,a cosy rug, and welcoming staff makeyou feel as if this could be your livingroom, but with good service on hand.And while this basement bar is cosy,if you want to sit outside you can,there’s an area at the rear, which is asuntrap, and outside seating at thefront too.

Its ambience. It’s a class act.

Wooden floors, exposed stonewalls, a small mezzanine and somecomfortable sofas give the bar a cosy,but relaxed, air while it’s windows,open out to its popular beer garden,one of the best suntraps in the westend. Its large windows ensure that thebar is light and airy. It offers a rangeof good beer on draught, includingsome from the WEST brewery.

The Griffin is an institution inGlasgow and so are its A-boards!They are worth looking out for, if youhaven’t already seen them, topicaland amusing. The bar itself has avery traditional look with highceilings, cornicing and its originaltiled floor but its bar staff belong tothe “let’s amuse the customersbrigade.” As a result you never knowquite what to expect. It’s a favouritewith the pre-theatre crowd, situatedas it is right across from the Kings,but it also has its fair share of regularswho come for the beer and the chat.Expect to see suits and beaniesdrinking side by side. It’s that sort ofplace. It does food too, either throughthe back or in the bar, and it’s veryreasonably priced and tasty.

This is a real neighbourhood bar,which attracts customers from allover. Its homage to the Coen Brosextends to its range of WhiteRussians, but this bar is proving morepopular than a cult film. It boasts oneof the best burgers in the city, and itsselection of spirits and world beers,keeps drinkers interested. Its relaxedand informal interior, combined witha reasonably sized outside area,means this bar is popular in winterand in the summer too. Liveentertainment, pub quizzes andcocktail competitions are part andparcel of its offering - Lebowskisdefinitely doesn’t rest on its Russians.
