B. Suggested teaching procedures

Stage I

Step 1: Briefly introduce the situation of ‘childhood obesity in Hong Kong’; suggest students to further understand the issue by browsing the websites or books provided.

Step 2: Suggest that students associate the related knowledge and concepts with the aid of a mind map based on what was learned from the Module of ‘Public Health’, so as to learn how to set the questions and ponder on the study approach.

Step 3: Ask students to answer the questions in ‘2. Understanding the background information about childhood obesity in Hong Kong’ based on the reference materials provided.

Step 4: Ask students to draft a ‘Project Proposal Form’ based on the knowledge and concepts developed.

Stage II

Step 5: Ask students to collect data in the approach stated in the ‘Project Proposal Form’. Complete Worksheet 1 and design a questionnaire about the concerned problem of childhood obesity and learn to collect data through conducting questionnaire surveys.

Step 6: Suggest that students document their investigations in a ‘Learning Portfolio Folder’. Check the progress regularly and record the course of data collection by means of the ‘Data Collection Process Record Form’.

Stage III

Step 7: Complete Worksheet 2 and analyze the result of the questionnaire survey.

Step 8: Learn to analyze data using Worksheet 3 ‘Can the government’s health measures improve the situation of childhood obesity? (Data-response worksheet)’ for practice.

Step 9: Complete Worksheet 4 and learn to use a concept map to link up the concepts from the data as the framework of the report.

Step 10: Ask students to analyze the collected data, evaluate different viewpoints and add their own opinions about ‘the situation of childhood obesity in Hong Kong’ before they deliver an oral report on the enquiry. Suggest students that they may report with the aid of PowerPoint.

Step 11: Finally, students should hand in a written report on the enquiry study. The report may also be submitted in other formats (such as documentary, radio play, websites, etc). Students with their weight exceeding 20% of the median of ‘Weight for Height’.

Macroscopically, the proportion of obese children in Hong Kong increases from 11.7% in 1993 to 21.7% in 2006, which is almost a double. It is expected that in 2013, every one of four students aged between 6 and 18 would be obese in Hong Kong.

Regarding eating habits, students usually eat foods with high level of sugar and fat but low level of fibre. They always have their meal in places like fast food shops or Chinese restaurants. They like eating snacks and seldom eat fruit and vegetable.Regarding lifestyles, they usually sit and watch TV, play TV games or use the computer. They have heavy homework and have to spend their leisure time on study, thus reducing their time for exercise.

Obesity adds burden to the organs of the body, causing many diseases and shortening people’s lifespan. Obese people are prone to diseases like hypertension, heart diseases, stroke, diabetes, backache, gall stone, hernia, arthritis, sleep apnea, etc.

Modern aesthetics regard being slim as beautiful, while obesity is usually labelled as ugly. Obese people are always thought to be clumsy, slow and lazy.

This is because there is a phenomenon of students getting more and more obese in recent years in Hong

Kong. Almost one out of four students is obese. The situation is getting more and more serious and this

arouses my concern about the problem of childhood obesity in Hong Kong.

1. There are more and more obese students in primary and secondary schools in Hong Kong from 1993 to 2006, regardless of gender. However, there is a higher proportion of obesity among male students in general.

2. Studentsusuallyfollowtheirparentsʼeatinghabits.Forexample,ifparentsareusedtoeatingsnacks,theirchildren would not see any problem in doing so. If parents usually go out for meals but seldom eat at home, their children would usually follow their parents to eat outside. Moreover, students may not like eating foods with higher nutrition value, such as vegetable, fruit, etc. If parents are used to eating such food or encourage their children to do so, it can help them get into the habit of a balanced diet.

3. Regarding eating habit, the government launched the ‘[email protected] Campaign’ in the 06/07 academic year to arouse the awareness and enhance the knowledge of the public about healthy eating habits of children. Regarding physical education lessons, the Education Bureau has recommended that no less than 5% of the lesson time be allocated for physical education in all primary and secondary schools. It has also provided support to schools for developing sports activities through provision of grants for acquiring sports equipment and hiring coaches. Moreover, the government also has a service plan to assess the weight index of school children regularly.

4. (Students can answer freely with reasons.) Relying solely on government policies is not enough. Although the policies can tackle the causes of childhood obesity (such as bad eating habits and insufficient exercise), the efforts of the students themselves and their parents are also required in order to solve the problem of childhood obesity. The government should put more resources into educating the public to adopt healthy eating habits and healthy lifestyles since they are young.

The causes of childhood obesity in Hong Kong

The major cause of obesity is that there is more calorie intake than energy consumption, leading to an imbalance. Many Hong Kong students absorb more energy than consuming it mainly because:

• Binge eating; frequent intake of sugary and fatty foods, fast food and food from Chinese restaurants; bulimia or other abnormal eating patterns due to emotional problems, causing over-absorption of high energy food; sedentary lifestyle such as sitting all day watching TV, playing TV games and computer games; heavy homework and the use of leisure time for study; without parent’s encouragement to or arrangement for exercise, etc. All these lead to students’ lack of exercise and decreased energy consumption.

• The material life of Hong Kong society is rich. High-energy food can be bought everywhere, such as snacks and fast food. Moreover, as the quality of life has improved, students seldom need to walk and can use vehicles and lifts instead when they go outdoors.

• People may eat only for pleasure under the influence of the snacks culture, leading them to overeat.

• Advertisements of the eating culture prevail in commercialized society, neutralizing the publicity effect of health education.

How obesity affects students’ physical health

• Obesity adds burden to the organs of the body, causing many diseases and shortening people’s lifespan. Obese people are prone to diseases like hypertension, heart diseases, stroke, diabetes, backache, gall stone, hernia, arthritis, sleep apnea, etc.

• Obese students have much higher risk for coronary diseases than students with normal body weight.

How obesity affects students’ self-value

• Regarding the social impact of obesity, since obese students are relatively clumsy and slow and have poor exercise tolerance, they are not enthusiastic about social activities or sports programmes. Moreover, they may be teased or rejected by classmates and friends.

• Regarding the psychological impact of obesity, obese students may lack confidence in their appearance, resulting in a poor self-image. Students may prefer making friends with ‘slim’ people. Obese people are more often labelled as ‘lazy and slow-witted’ and therefore they are not likely to be chosen as friends.

• People generally have prejudice about the body shape. They have negative impression about obese people. For example, they would label obese people as lazy, dirty, dishonest, etc.

• Obese students get tired more easily than others. They drowse more easily during lessons, which reinforces the labels on them.

• Some obese students would label and examine themselves after being discriminated against. Some of them would even isolate themselves, turning themselves into introverts.

• Obese students would be dissatisfied about their own bodies, causing eating disorder and prejudice against society.

• The Hong Kong government is aware of the childhood obesity problem in Hong Kong.• The Hong Kong government improves the situation of childhood obesity mainly by changing the eating and

• Students: Be determined to kick the habit of binge eating and cultivate the will to control their appetite; check weight and height regularly to raise their awareness and confidence in controlling weight.

• Parents: Acquire the common knowledge about food; understand that being fat might not be a sign of health and fortune; teach children to get into healthy eating habit; be a role model; do not pamper and tempt children and teach them the correct ways to express emotions to avoid binge eating due to bad mood.

• Schools: The food stalls should sell less food and drink of high energy level, such as fried chicken wings, soft drinks, etc.; choose healthy lunch sets and avoid selling too much meat and oily food.
