Food AllergiesFood allergies affect an estimated six to

seven million persons in the United States.Some of these sensitized consumers candevelop serious or life-threatening allergicreactions if exposed to the causative pro-teins. Currently, there is no cure for foodallergies. The only successful method tomanage food allergies is to avoid foodscontaining the causative proteins.

The Food Allergen Labeling & Consumer Protec-tion Act (FALCPA)

The FALCPA has been introduced into bothhouses of Congress (H.R. 3684 & S. 741).The proposed bill states that for food manu-factured on or after January 1, 2006, thepresence of a major food allergen (see listabove) must be declared in its ingredient listor via a statement at the end of the ingredi-ent statement that says “Contains” followedby the name of the major food allergen (e.g.,Milk, Wheat, Eggs) or a parenthetical state-ment in the list of ingredients (e.g., “albumin[egg]).” Flavorings, colorings, and incidentaladditives that contain a major food allergenmust be declared.

White wine and root beer are often washed with egg whites.

Egg washes are often used on bakery goods to make themlook shiny. Egg whites are often used in glazes and icing.

Look for kosher foods that display the word “pareve” or “parve”which means these foods are milk-free. If you see a “D,” it doeshave an ingredient derived from milk. “DE” means that it wasprocessed in equipment for foods with dairy ingredients.

Additional common sources: Alcohol (frangelico, amaretto),Asian foods, baked goods & mixes, battered or fried foods,candy cereals, crackers, ice cream, nut butter, sauces,gravies, and soups.

Peanut butter may be used to keep egg rolls from falling apart,or in chili as a thickener.

Artificial nuts can be peanuts with another nut flavor such aspecan or walnut.

Additional common sources: Chinese, Vietnamese, Japanese,Indian, Indonesian, and Thai Foods; Worcestershire sauce.

Imitation crab or “Surimi,” though not made of real crus-taceans, is made from white fish and not safe for people withseafood allergies.

Any fried food can be fried in the same oil as fish/shellfish.

Additional common sources: Asian cuisine, baby food, bakedgoods, canned fish, chocolates (cream centers), cooking oils,ice cream, margarine, mayonnaise, meat products, sauces(Asian, Worcestershire), seasonings, shortenings and pow-dered meat replacers

Kellogg Company isentering the fruit snackcategory for the firsttime with a newproduct line tar-geted for kids—Fruit Twistables.This snack is madewith real fruit juiceand is an excellentsource of vitamin C(25% DV).

Fruit Twistablesfeature three fla-vors in one. Forinstance, the WildBerry Twistableshows pictures ofstrawberries, blue-berries, and rasp-berries on the front.The IngredientStatement does notlist any of these berries, but “apple andpear juice from concentrate.” The berriesmust be included in the “natural and artifi-cial flavor.” The second ingredient listed iscorn syrup with sugar and fructose a littlefurther down on the list. The calories (80),carbohydrates (18 g) and sugar (11 g) areapproximately equal to 1 cup of pureedstrawberries. The difference is that you get5 g of fiber in the pureed strawberries and0 g in Twistables.

Although the colors are different, wecould barely taste any difference betweenthe three strands.

A food allergy is an immune system responseto a food protein that the body mistakenly

believes is harmful. When the individual eats foodcontaining that protein, the immune systemreleases massive amounts of chemicals, triggeringsymptoms that can affect a person’s breathing,gastrointestinal tract, skin, and/or heart.

Symptoms of food allergy can include hives;swelling of the lips, tongue, and face; shortness ofbreath; wheezing; abdominal pain; vomiting; and

even cause heart failure. If left untreated, thesesymptoms can be deadly.

Eight foods account for 90% of all food-allergicreactions:
