Deep in Italy’s Piedmont region lays a small mountain village that now revolves around cheese. Once in decline, Beppino Occelli began reviving the town of Valcasotto in 1976 by restoring the village’s buildings and turning them into af� nage facilities. The resulting af� nage rooms are beautiful rock cellars where humidity is controlled by gravity-fed, pure spring water brought in by wooden troughs. Beppino Occelli is so committed to saving food traditions that a Slow Foods classroom, certi� ed by the Institute of Gastronomy, has also been set up in Valcasotto, making this town a true culinary destination. Today about 40 people live and work in Valcasotto, tending to the cheeses as well as maintaining a lovely inn and restaurant, and continuing the restoration of the village buildings.

Occelli cheeses are a beautiful expression of the area’s terroir, and we are proud to offer three extraordinary options. The cheeses are crafted using old world techniques, and as they mature the master cheesemakers will determine what treatment will be utilized to bring these special cheeses to their full potential.
