    SAMBAR POWDER VARIETIES

    Saravana Bhavan Sambar powder

    Corriander Seeds/ Dhaniya - 1/2 KgChanna Dhal/ Kadalai paruppu/ senaga pappu - 1/4 kg

    Thoor Dhal/ Thuvaram paruppu/ Kandhi pappu - 1/4 kg

    Fenugreek seeds/ Vendhiyam/ Menhalu - !" gm

    Tamil Style Sambar Masala Powder Recipe

    Ingredients:

    1 3/4 cups Coriander Seeds

    30 Dried Red Chillies ad!ust accordin" to your spice le#el$

    1 tbsp Chana Dal

    1 tbsp %rad Dal

    1 tbsp Toor Dal

    & tsp 'lac( Peppercorns

    1 tbsp Cumin Seeds

    1 tbsp )enu"ree( Seeds

    & tsp Turmeric Powder

    & tsp Mustard Seeds

    1/& tsp *in"

    3 + 4 Spri"s Curry ,ea#es

    Instructions:

    1- .n a hea#y bottomed pan dry roast the coriander seeds on a low lame until ra"rant

    or li"ht brown color- dd the hin" to the coriander seeds and continue roastin" or a ew

    seconds or until ra"rant-

    &- Transer it to a plate- dd the turmeric powder to the roasted coriander seeds and let

    it cool-

    3- Dry roast the curry lea#es until crisp- 2eep them aside-

    4- Then roast the red chillies or a ew seconds and (eep them aside-

    - Dry roast all the in"redients one by one until they are li"ht "olden brown color and

    ra"rant-

    - ,et them cool completely-

    5- 6rind the roasted in"redients into a ine powder-
