The Saint & Scholar vineyard makes for a beautiful, spectacular backdrop for our makers. North facing and particularly hilly, you’ll see the fluffiest of fluffy clouds float above as the sun sinks across the valley, making you want to stay long after the day is done.
The hilly terrain means in an area of high rainfall, like the Adelaide Hills, water drains rather well. Together with the beautiful sunlight and naturally cool climate, this makes for a perfect, harmonious environment to ripen quality, consistent vines; soon to be quality, consistent wines.
So even if you can’t stand in the Adelaide Hills and see the beautiful harmony, thanks to the Saint & Scholar and their work together, you can pour a glass and taste it.

2017 Pete’s Pure Prosecco 8 35 Sunraysia, NSW
Pete’s Pure is meant to be consumed fresh and young – drinkability and simplicity. But the real star here is sunshine; hailing from Euston in New South Wales, from an area known for volume, the clear skies and red earth produce clean, bright flavours. This abundance of sun makes growing grapes stress-free. Picked early with minimal winemaking artefact to keep things crisp, this wine is relaxed, clean and charming.

DAOSA Natural Réserve is a classic example of Australian sparkling wine made following the traditional method developed in Champagne. Being mostly Pinot Noir, the wine shows nice strawberry flavours and great texture. The Réserve wine component adds depth and complexity.

Another exciting wine from one of the hotel's favourite regulars. Orginally planted in the Adelaide Hills under the belief it was Spanish Albarino, this Frence grape has found a home in the cooler parts of the Adelaide Hills. Expect a crisp white wine with a broad mouth feel and rich texture. Perfect for this time of year!!
2017 Ceretto Langhe DOC Arneis Blangé 14 62 Piedmont, Italy
This Arneis is the product of a highly distinctive region, the Roero, and a desire to improve varietal recognition, as well as drinking pleasure. Blangè combines sustainable practices in the vineyard with a modern take. Fruit and minerality, aromatics and balanced freshness, coexist in this white wine that has made enjoyment and versatility its trademark.

Sangiovese is a grape variety that isn't grown a lot in the Adelaide Hills. However this site just down the road in Piccadilly, has been on Pablo Theodoros' (Stanley Bridge Hotel), Kennedy Simpson' (Shaw + Smith) and Phillip LeMessurier's (Corduroy Wines) radars for sometime. This Rose is exactly what Aussie Rose should be all about: Delicious and Smashable. This Rose is best enjoyed in our outside dining area, accompanied by a Charcuterie plate and good friends.

Charlotte Dalton is the alias of Adelaide Hills local (until recently), Charlotte Hardy. Orignally from New Zealand, Charlotte produces wines which are expressive of site but also show a delicate freshness and a gentle touch. This wine recently won #1 spot in the Adelaide Review Hot 100. The second wine from Chateau Clos de Bouard, Dame de Bouard, is a wine that is easy to drink but not lacking subtlety. The blend is 60% Merlot, 30% Cabernet Franc and 10% Cabernet Sauvignon. The nose emits refreshing bouquets of ripe fruit, sweet spices and roasted herbs. In the mouth, the tannins are well-balanced with dominant fruit flavours. A very well-made wine.

2017 G.D Vajra Dolcetto D' Alba DOC 65 Piedmont, Italy
In 2002 Steve Pannell left Hardys and took his young family to Piedmont, An introduction to the Vajra family lead to a vintage as a cellar hand. The family having no idea who Steve was nor his accolades. Steve was soon fast friends with Aldo Vajra and quickly promoted. Dolcetto produces soft and fruity wines They are characterized particularly by their low acidity, which is the source of the variety's name, Dolcetto, which means "little sweet one".

Zibibbo is an ancient, aromatic white grape from the Muscat family grown in the warmth of the Mediterranean and South Australia.
2018 Guthrie 'Mondo Project', Sauvignon BlancAdelaide Hills, SA 70 The latest release from this Adelaide Hills brand. Hugh and his wife Sarah produce small batch wines from their property here in the Adelaide Hills. Refreshing and crisp. 2003 Leeuwin Estate Art Series Chardonnay, Margaret River, WA 165 An Aussie classic, Leewin Estate Art Series Chardonnay is still considered the prototype for Australian Chardonnay. The vines were planted in 1972 when Napa Valley legend Robert Mondavi, visited property owners Denis and Tricia Horgan. 2003 Rockford Rod and Spur, Barossa Valley, SA 150 The classic Australian blend, by one the Barossa's finest, Shiraz and Cabernet Sauvignon. The name Rod and Spur refers to two different pruning techniques. 2016 Gramenon 'Sierra Du Sud', Rhone Valley, France 99 Domaine Gramenon has reached cult status in recent years. This is due to their reliance on minimal intevention farming and minimal winemaking style.

Moulin Rouge 24 Henessy VSOP Cognac stirred with Seppeltsfield 10 yo Para Tawny and Carpano Antica Formula sweet vermouth with a drop of orange bitters, strained into a coupe, garnished with a flamed orange peel. A provoking burlesque drink.
Adelaide Hills Negroni 18 Who doesn't love a Negroni? The perfect balance between gin, vermouth and amaro. We believe in celebrating our local community and the producers around us. This drink highlights the delicious spirits that are being produced by our friends at Adelaide Hills Distillery.
Mint Julep 20 Juleps are often associated with Derby day where gallons of Bourbon are sipped; luckily you don't have to travel to Churchill Downs to enjoy one. Here, we make you the classiest of Mint Juleps; two shots of Maker's Mark, mint, sugar and crushed iced, served in a proper Julep Cup. It's mint.
Elderflower Collins 20 Our take on a modern classic. A blend of London Dry Gin and St Germain Elderflower Liqueur. This is then finished off with fresh lemon juice and sugar syrup to taste.
The Exec Somm Martini 20 The martini that comes on the rocks! A mix of Melbourne gin,Animus with the Escubac aperitif, which is an interesting concoction of botanicals without the juniper. The two together makes for an easy drinking martini, offering a fleshy drink with a citrus tang. Cleansing. Sommelier's choice!
