23Project Summary (Max 200 words):The project on processing and production of sindoori was started in 20114-15 at different substations in Chhattisgarh Plains, Plateau and Hills. The project is divided in three different phases cultivation, processing and marketing. Cultivation phase is under progress, sindoori processing is done in Jagdalpur, some research work is taking place in Bilaspur but lack of technical man power (PA/SRF) limits its progress further. Also the release of fund was not adequate and not on time.Physical parameters of aril was evaluated, drying study was also conducted using hot air oven. Further validation of drying study is needed using different dryers. During extraction crystal formation was took place which are very hard and need fine grinding. for fine grinding of extracted sindoor or whole seed requires hammer mill type grinder with fine mesh sieve which is not available at site.

Technical Details

1Background : Annatto (Bixa orellana L.) is a shrub or small tree. originating from the tropical region of America and has spread in popularity to many parts of the world. It is also grown in the other tropical or subtropical region of the world including India. The inedible fruit is harvested for its seeds, which contain annatto, also called Bixin. The heart shaped fruit are brown or reddish brown at maturity and are covered with short, stiff hairs. When fully mature, the fruit splits open exposing the numerous dark red seeds. In commercial processing, annatto is extracted from the reddish pericarp which surrounds the seed of annatto (Bixa orellana L.)

Nearly 44 per cent area of Chhattisgarh state occupies with forest. Chhattisgarh is rich in plant bio-diversity and a large number of natural flora and fauna exists in all the three agro-climatic zones i.e. Chhattisgarh plains, Bastar plateau and Northern hill region. In this state since time immemorial a huge and diversified medicinally important plants are naturally occurring and are in use by forest dwellers for the various uses such as food, food ingredients, medicinal and to generate income for their livelihood. The survey reports indicated the natural population of Annatto Sindoori plants (Bixa orellana L.) in different parts of Chhattisgarh forest as well as outside forest area of the state exists. The plant seeds are used for various uses but the estimate of its production (area and quantum) is not known. However, the natural population is not sufficient to explore the possibility of commercialization of Sindoori plants. Growing behavior studies indicated the prospects for commercial cultivation and plantation of Sindoori plants in Chhattisgarh (Ann. 2008).

A project is being proposed to with following objectives

1. To study the growing behavior and yield potential of sindoori plant in upland and on bunds.

2. To develop proper standard techniques for harvesting and processing of seeds.3. Popularization of sindoori for wide scale adoption by training, demonstration and marketing.

Tribal farmer will get additional source of income from the technology.

Annatto food colour is a natural carotenoid colourant derived from the seeds of the tropical annatto tree (Bixa orellana L). The surface of the seed contains a highly coloured resin consisting primarily the carotenoid, bixin. Bixin is an oil soluble, highly stable colouring ingredient. A safe and convenient food colourant, annatto is one of the oldest colours known to man. Annatto colour is extensively used to colour cheese and butter and other dairy products. It can also be used in different types of foods where light yellow, yellow orange and red tinge (hue) is imparted. Different methods like solvent extraction, oil extraction and alkali extraction are adapted to extract the dye. Different formulations are also made to suit the requirements of various oil and water based foods. Normally bixin based formulations are used to impart the colour to oil based foods. Similarly norbixin based formulations are used in water based foods. Norbixin formulations when used to impart the colour to acidic products like jams, fruit juices and beverages etc., will deteriorate the colour very rapidly due to precipitation of the norbixin during the storage period.

Reference may be made to a patent for production of superior colour - stabilized annatto, tomato, carrot, marigold or synthetic carotenoid compositions (Tood. PH Jr. US Patent, US5079016, US525342, 19900516, Kalamazoo Holdings, Kalamazoo, Ml, USA) wherein a natural antioxidant and an edible oil - soluble ascorbic acid ester was added. The method by which carotenoid pigments are stabilised and a method for colouring foods are described. The pigments increase resistance to colour fading in foods containing the pigments and exposed to oxidative stress.

Reference may be made to a patent - literature for production of stable natural colouring agent annatto for use in fruit squashes (Ford, M.M., Draisey, A.H., UK Patent application, Britric Corona Ltd., Chelms ford, Essex, UK, GB2188823A, 1987) wherein a clouding agent containing beeswax stabilized with natural gum was used. In addition, 3-7% by wt. Of disintegrated solid fruit residue (e.g. comminuted citrus peels) also reduced the degradation of bixin.

Reference may be made to a patent - literature for the production of acid stable annatto colourant in a powder form (Schmidt, T.R., US Patent, US4548822, Miles Laboratories Inc., 1985) wherein the method of preparation involves mixing an alkaline aqueous extract of annatto from Bixa orellana seeds with an aqueous dispersion of a dextrinised starch derivatives, and vacuum drying the mixture.

Reference may be made to the literature for the stability of water soluble annatto dye (Krishnamurthy, G.V. and Giridhar, N., Proceedings of the first Indian Convention of Food Scientists and Technologists, Association of Food Scientists and Technologists, India, P.78, No.7.8, 1979) wherein the water soluble annatto dye slowly separated out in orange squash and synthetic syrup, but was stable for 2 months in Totapuri mango pulp and tomato ketchup. The colour was stable when added to the solutions or suspensions with pH >5.0. The main object of the present invention was to provide a process for the preparation of spray dried norbixin powder, to use in low pH products in general and in particular in acidic fruits and vegetable processed products. Another object of present invention was to produce acid stable water soluble annatto dye formulation from crystalline dye obtained (as per the process known how of CFTRI, Mysore) to make the preparation more simple, economical and viable.
