Louise is in thefinal phase of becoming a master of wine, and Campbell is currently doing theWSET level 4 diploma in wines. What would yachting be without champagne? This

fantastic wine is probably the most famous in the world

and though not all champagnes are great, the best

sparkling wines in the world are from the region of

Champagne. The wine is made of three different grape

varieties; Chardonnay, Pinot Meunier and Pinot Noir.

If it says Blanc de Blanc on the bottle it means it is made

purely of Chardonnay and if it says Blanc de Noir it is

made of black grapes.

Since Champagne has a marginal climate and the

vintages can vary in quality, most Champagne is a blend

of different vintages and villages to create a consistent

house style. Vintage Champagne, however, is made only

from grapes harvested during a specific year. They only

make vintage Champagne in years where the grapes

had exceptional growing conditions and it has aged

longer than non-vintage Champagne.

Prices are without Tax and are correct at the time of going to press, and for 75 cl bottles unless otherwisestated. Due to market fluctuations, prices and availability may change during the validity of this list.

The making of Champagne is a complex

and elaborated method; at first there is

a base wine which is appropriately

blended so as to maintain the house style.

Then a dose of sugar solution and yeast,

known as liqueur de triage is added and

the bottle is sealed with a crown capsule.

Thanks to the yeast and the sugar a

second fermentation will take place

which will create some alcohol but more

importantly the bubbles. The CO2

produced during this second fermentation

is captured within the wine.

The dead yeast cells formed by the

fermentation provide a source for

aromas and complexity for the wine, the

longer you will leave the wine on the

yeast bed the more complex the wine.

For Non Vintage Champagne the

minimum is 15 months and for Vintage

Champagne the minimum is 36 months.

The wine is then separated from this

sediment and closed with a champagne

cork before being sold.

If one were to crown a wine region as king it would have to

be Bordeaux. No other region has influenced the rest of

the world in terms of wine making and style of wines as

Bordeaux has and the grape varieties here are some of

the most popular on the planet. Cabernet Sauvignon and

Merlot above all but also Cabernet Franc, Petit Verdot

and Malbec. Not to forget the white wines in the region

made of Semillon and Sauvignon Blanc.

There are different communes in Bordeaux which offer

slightly different styles; to start with, one divides

Bordeaux by the left bank and the right bank of the river

Gironde. On the right bank Pomerol and Saint Emilion

are the two main communes, both based on the variety

Merlot. On the left bank St Estephe, Pauillac,

St-Julien and Margaux are the names to retain, all

based on Cabernet Sauvignon. St Estephe and Pauillac

tend to have firmer tannins and structure than the

slightly softer Saint Julien and the fragrant and elegant

Margaux.

For the 1855 World Exhibition in Paris

the Emperor Napoleon III requested a

classification system for the best

Bordeaux wines to be created which

were to be on display for visitors from

around the world. Brokers from the wine

industry ranked the wines according to a

château's reputation and trading price,

which at that time was directly related to

price. The wines which at the time

fetched the highest price got the highest

classification, of course this had

everything to do with quality as well. The

result was the Bordeaux Wine Official

Classification of 1855.

The wines were ranked in importance

from first to fifth growths (crus). All of

the red wines that made it on the list

came from the Médoc region except for

one: Château Haut-Brion from Graves.

The white wines, then of much less

importance than red wine, were limited

to the sweet varieties of Sauternes and

Barsac and were ranked only from

first great growth to second growth.

Since 1855 there has only been one

change to the classification and that is

Chateau Mouton Rothschild, whom was

promoted to 1st growth in 1971. It might

be interesting to note that the owner of

this Chateau was a very wealthy and

influential man in the region.

Regardless of politics and the age of the

classification the first and second

growths are indeed some of the best

wines in the world.

Burgundy is one of the most complicated regions to

really understand. On top of the five main regions of

Burgundy; Chablis, Côte de Nuits, Côte de Beaune,

Chalonnaise and Maconnais, there are around 550 premiere

cru vineyards and 30 Grand Cru vineyards. Luckily

complication is not all you get from here. Some would

argue that the most profound and complex wines of the

world come from this region, both for red and white.

If that was not enough, Chardonnay, the world's most

famous white grape originated in Burgundy, where there

is a village called Chardonnay (near Mâcon).

The heartland of white burgundy

is the Côte de Beaune with its

three great villages, Meursault,

Puligny-Montrachet and Chassagne-

Montrachet. Here the vineyard classi-

fication system really comes into its

own. On the flattest land, the wines

will be classed only as generic

Bourgogne Blanc; as the slopes begin

to rise the wines are classified by their

village appellation. At mid-slope the

finest vineyards, are classified as

premier cru (eg Meursault Charmes)

or grand cru (Le Montrachet).

The white wines from Côte dÓr are

quite different from the ones from

Chablis. Here the Kimeridgian clay

soil full of mineral fossils gives the

wines a crisp acidity and the wine

makers here use much less oak than

in Cote Dór. The wines tend to be less

creamy and lighter textured and have

a leaner style with aromas of citrus

green apples and minerals.

Though very nice wines can be

found in the Chalonnais (Mercurey,

Givry), the great red wines of

Burgundy are found in the Côte

d'Or. The most famous villages

are Gevrey-Chambertin, Morey

St- Denis, Chambolle-Musigny,

Vougeot, Vosne-Romanée and Nuits-

St Georges. In the Côte de Beaune

names to retain are Volnay and

Pommard, both lovely but quite

different, Volnay is perfumed, elegant

with soft strawberry fruit and tannins

while Pommard is the Pomerol of

Burgundy more structured and sturdy.

Pinot Noir is the only permitted grape

for red wines here.

When selectingwood for a barrel the cooper is not onlyconsidering the provenance but also thegrain, if it is tight or loose. The tight grai-ned types (less porous) are consideredthe best for wine ageing given the factthey are more water tight and less likelyto leak. The flavours coming from thetight grained oak is also giving more ele-gant flavours to the wine. AlthoughFrench oak is considered being the bestand certainly the most expensive, around600-700€ per new barrel, American oakis also widely used. Spain and Australiaare the two countries that have had mostsuccess with this oak. In the US however,mostly French oak is used for top wines.Stylistically the American oak is richer intannins and offers more exotic, spicyvanilla aromas.

COOPERAGE

Once the staves have been formed, eitherby splitting or sawing, there is a long wayto go until the barrel is finished. Firstly,the wood is dried; this can be done inopen air exposed to the seasons of theyear, why it is called seasoning. It can

also be done inside with big fans and thisis far quicker but results in lesser qualitybarrels. Once the staves are dry they arereassembled to a barrel and it is time fortoasting. Light, medium or strong toast.Light toasting for white wines andmedium to strong for the red wines.

BALANCE BETWEEN WINE AND OAK

The balance of oak aromas and flavoursin a wine is very important. Lately therehas been a move, and still is in someregions, to over oak the wines. The oak ismerely a complement to a good wine andshould not be the primary flavour.Depending on the concentration and styleof a wine a producer will choose to useonly new oak which gives full on toastyoak flavours to perhaps 50% new and50% one year old to soften the impact.

ALTERNATIVES

Given the high cost of oak barrels therehas been much development of lessexpensive alternatives. These include forexample oak chips and staves. These canbe soaked into a stainless steel tank ofwine and this way give oak flavour to thewine. Or oven put in a sort of “large teabag” and submerged into the wine. In anycase this is a far less expensive way ofbringing oak flavour to a wine and is sui-table for mid range quality levels.

FACTS ON OAK AND WINE

At first, oak barrels was used purely as a recipient of wine in order to ship it aroundthe world (prior to this animal skins were used for transport) before someone dis-covered that having the wine in oak actually improved the wine and gave it addedcomplexity. Centuries later, the science behind oak and wine has become a key ele-ment in winemaking. One do no longer just talk about oak but also about provenan-ce of the oak, type, toasting levels and even which cooperage made the barrels.New oak barrels are very costly so the past decade there has been a developmentof alternatives to the real thing, such as oak staves or oak chips.

Despite the fact that the Rhône valley produces some of

the absolute best wines in the world, this region tends to

be forgotten in the yachting industry. This lovely and

beautiful region offers a

vast selection of top

quality wines in different

styles.

The Northern Rhône is a land of steepslopes carved into granite hillsides andplanted with the grape variety Syrah(Shiraz in Australia). The wines are dark,firm, tight with black fruit and spicynotes. They are long-lived and the topvillages are Côte Rotie and Hermitage.There is also some great white winebeing made in the northern Rhône, inthe regions of Condrieu and ChateauGrillet where the grape variety Viogniergives wines full of lovely floral peachyfruit and a creamy texture. In Hermitageone can also find some stunning white

wines with long ageing potential madeof Marsanne and Rousanne. Towards the south, the steep slopes giveway to a broad valley floor which isbaking hot in the summer. Loire is a very exciting region where both white,

red, dry, sweet and sparkling wines are produced.

Some of the wines from Loire are world famous

and others are fairly unknown. The latter are some

of the best kept secrets in the world of wine.

Sancerre and Pouilly Fume are familiar names to

most wine lovers. The white wines are crisp, fresh

and have aromas of gooseberries, lime and minerals.

They are made of the grape variety Sauvignon

Blanc and as most Sauvignon Blancs the wines are

generally not made for ageing. Though Pouilly

Fume can only produce white wine Sancerre also

produces red and rosé of Pinot Noir. Further west,

in Touraine there is another white wine producing

appellation called Vovray, here the grape Chenin

Blanc is king and one can find fantastic wines with

great ageing potential for great value.

Although Alsace is far north in France it has a very

favourable climate because of the protection of the

Vosges mountains. It recieves almost as many sun

hours as Saint Tropez, which allows for a long ripening

period and the grapes can reach their full aromatic

potential.

The wines are mainly white, aromatic and often variety

labelled. The so called noble varieties are Riesling, Pinot

Gris, Gewürztraminer and Muscat. What sometimes can

be difficult with Alsace wines is to know the sweetness

level of the wine. Many of them are slightly off dry with a

purity of fruit that makes them a very good match for

Asian food. There is also something called Vendange

Tardive which means late harvest and the wines will be

medium sweet. Then there is SGN Selection de Grain

Noble, Noble Rotted grapes which will be fully sweet

with a refreshing acidity. Both Vendange Tardive and

SGN are excellent matches with Foie Gras.

Italy is the largest producer of wines in the world.

Around 1000 different grape varieties are used to

produce a vastly diverse range of wines. 5 billion litres

are produced annualy, of which around 30% is exported.

What differenciates Italy from other main wine

producing countries is that instead of relying on classic

varieties such as Chardonnay, Cabernet Sauvignon and

AUSTRIAAustria is a slightly forgotten wine country. Absolutely stunning winesare produced here. Mostly white wine is produced, and the best onesfrom the Grüner Veltliner and Riesling. The wines are much more fullbodied than the German wines due to the warmer climate. In fact,some wines are so good as to rival the Montrachets of Burgundy. Afew years ago there was a blind tasting organized for some famouswine critics and Ried Lamm from Bründelmayer in Kamptal receivedbetter marks than all the Montrachets entered in the competition.So, why not go ahead and surprise your guests with something different?

GERMANYSome of the worlds´ best white wines come from Germany and thetop ones are made from the variety Riesling. This is a variety thatfinally is getting the recognition it deserves, some say it is the noblestof all white grapes. Germany is the seventh largest wine producer inthe world and the vineyards are centered around the main rivers ofRhine and Mosel. The climate is continental with hot summers, coldwinters and long, warm autumns which makes it perfect for late-harvest wines with good concentration. The steep terraces close tothe rivers offers south facing slopes with perfect exposure anddrainage for the best wines of the country. White grapes make up85% of plantings, but reds are increasing especially now when theclimate is getting warmer. The white wines from Germany areunoaked and often offer a touch of sweetness balanced by a crispclean acidity and a pure fruit intensity.

PORTUGALPortugal’s entry into the EuropeanUnion has released much-neededfunds for the modernisation of thewine industry, and this investment haspaid off in a distinct, noticeable increase in quality. Along with the production of Port, the country isbecoming increasingly known for ahost of dry red wines made from arange of indigenous grape varieties aswell as some blended with plantings ofFrench varieties.

SPAINSpain is the 3rd largest producer andexporter of wines in the world, and hasthe largest area under vine planted atlow densities. Rapid and recent moder-nisation means that wines that did noteven exist at the start of the 1990’s suchas Ermita and Pingus, now rankamongst the worlds best and commandthe respect and the prices that follow.The finest wines are produced in theRibera Del Duero, Rioja and Prioratregions, and other regions such as Toro,Navarra or Rias Baixas are rapidly gaining international notoriety. Themain grape varieties found areTempanillo, Garnacha (Grenache),Mazuelo or Cariñena (Carignan) andMourvèdre.

UNITED STATES Although wine is made in all the 50 states, the main areas for wineproduction are California (90%), the Washington State, Oregon,Idaho, and New York State. Some of the world’s greatest CabernetSauvignon, Merlot, Zinfandel (called primitivo in Italy), Pinot Noir, andChardonnay are produced here and this was confirmed in 1976 whena very famous blind tasting of California’s best beat the cream ofFrench wines. The exercise was repeated in London in 2006 with theCalifornians, again, beating the French.

ARGENTINAArgentina is the 5th largest producer of wine in the world. Theprincipal areas of production are Mendoza (around 70%), San Juan,La Rioja, Rio Negro and Salta. The majority of the vineyards are foundon the slopes of the Andes between 600 and 1500 metres of altitude,and benefit from the protection of the Andes, warm sunny days andcool nights. This large range in temperature draws out a full andinteresting range of aromas and flavours of the grapes. The mainvarieties are Malbec and Cabernet Sauvignon for the reds,andChardonnay and Torrontés for the whites.

CHILEIn the mid 19th Century considerable wealth was invested in thecreation of Bordeaux style chateaux and hence the production wasconcentrated on Cabernet Sauvignon, Merlot, Semillon andSauvignon Blanc. The recent return to democracy following the fall ofthe dictator Pinochet in the late 1980s has boosted the wineindustry, and Chile now ranks as the 9th largest producer of wine inthe world. Due to the near perfect growing conditions and inexpensiveland there has been much foreign investment; Torres from Penedesand Lurton and Rothchild from Bordeaux are but a few.

NEW ZELANDOnly just scraping into 30 top wine countries in terms of production volume, with a tiny domestic market, New Zealand’s winemakers have torely largely on the export market. Benefitting from a maritime climate, theproduction of fine wine is very recent and centred on the classic Frenchnoble varieties. Some of the Sauvignon Blanc produced is now consideredamongst the finest in the world and Pinot Noir have recently had greatsuccess. Marlborough is the main region for a very pungent crisp goose-berry style of Sauvignon Blanc and Otago is the claim to fame for Pinot Noir.

AUSTRALIAAlthough vines were brought with the very first cargos to the new world, itwas not until the Scot James Busby started producing wines in the Huntervalley around 1830 that we can talk about serious wine production inAustralia. In a country where beer is the choice of the masses, wine wasuntil recently thought of as the reserve for the rich and for women. Thedomestic market has remained mainly small and static whilst the exportmarket, driven by competitive pricing, consistent quality, inventive andattractive packaging, and successful marketing has lead to a massiveincrease in export sales.The most important grape varieties are Shiraz, Cabernet Sauvignon,Grenach for red wines and Chardonnay and Semillon for whites. When talking about Australia it is important to realize that there are many different climates and regions producing very different wines. The mostsuccessful regions are Barossa Valley for Shiraz, Coonawarra forCabernet, Clare and Eden Valley for Riesling and Margret River forBordeaux blends- to name but a few.

SOUTH AFRICAThe production area of South Africa is similar in size to Bordeaux’s totalvineyard area and they produce around 3% of the wines in the world.Although wine has been made in South Africa for 350 years, it belongs inthe New World of wine-producing countries. Since the fall of apartheid in1994, the wine industry has been transformed. Much of the productionused to be in the hands of a state cooperative but nowdays there are moreand more eager and ambitous and innovative producers determined toshow the world that South Africa can make wine of the finest quality. Themost planted varieties are Cabernet Sauvignon and Shiraz, Then comesMerlot – used as a varietal and for Bordeaux blends with CabernetSauvignon – and Pinotage. A cross between Pinot Noir and Cinsaut (spelt“Cinsault” in the Southern Rhône), Pinotage is a South African speciality.It has spicy red berry flavours and shows interesting potential. For the whitewines Chenin Blanc, Chardonnay and Sauvignon Blanc are the main ones.

Growing grapes organically meansusing no pesticides, herbicides,fungicides or chemical fertilizers of anykind on the vines or in the soil of thevineyards. One can often see a deepercommitment to quality and true passionfor wine when meeting producerswhom work this close to nature with agreater respect for our environment.Biodynamic growing take it one stepfurther; in addition to applying thesame principles as for organic growingit will consider the soil as a livingorganism in its own right. In addition,biodynamic growers will schedule thework done in the vineyard in accordancewith the lunar and cosmic rhythms ofthe universe. It is also a form of homeo-pathic philosophy for agriculture basedon a series of speeches done by Rudolf

Steiner in 1924 in Austria and instead ofusing chemicals to treat problems inthe vineyard biodynamic growers willspray herbal infusions on the vines.Perhaps it comes as no surprise thatbiodynamic farming is viewed by manyas some sort of “witch craft” and that itcan have no real effect on the quality ofwine but when speaking to some of thetop producers in the world, listening totheir experience and tasting the winesthere is, in my mind, no doubt about thefundamental effect biodynamic growinghas on wine quality. Of course it is alsoa romantic side to it all and that it might feel nicer to drink a wine made with great passion and respect of nature rather than a mass-producedinternational brand.

There are several wine courses available that are both educative and entertaining but if youwish to have records of your knowledge in wine and have an internationally recognized qualification the WSET courses is the only option.

The Wine and Spirit Education trust (WSET) was founded in the UK in 1969 to provide highquality education and training in wines and spirits. Since then, WSET has grown into theforemost international body in the field of wines and spirits education, with a suite ofsought-after qualifications. Although based in London, there are over 400 centers in 50 countries that provide the qualifications and Riviera Yacht Support was the first one onthe Riviera to become an Approved Program Provider.

WSET Level 2 - Award in wines and spirits

The Level 2 qualification is intended for those aspiring a ChiefSteward/ess position or anyone who wishes to deepen their knowledge of wine and other alcoholic beverages. It is an intense courselasting 3 days. The syllabus includes topics such as the key wine-producing areas of the world, grape varieties, label terminology, professional tasting of a large selection of international quality wines andfood and wine matching.

WSET Level 3 - Award in wines and spirits

This is an in depth 5 day wine course which gives comprehensive coverageof all main wines and spirits. The course has an increased focus on tasting technique and on the application of the knowledge gained. We willtaste around 100 wines from around the world and cover the wine regionsin greater depth than for the Intermediate Certificate. Viticulture and vinification are also subjects dealt with in more depth. Candidates areadvised to hold the WSET Level 2 before studying for the WSET Level 3.

For some reason many wine lists on yachts are fairlysimilar one to another. I doubt there are many stewards,stewardesses, or captains for that matter, whom havenever heard of Domaine Ott, Baron de L, Tignanello orLouis Latour. These are all great producers but there isplenty more out there to choose from and an experiencedcharter guest might be pretty bored to find similar selec-tions on offer time after time. To create a different, moreindividual and interesting wine list is an opportunity toshow commitment and engagement to your clients.

A new creative wine list should, for theyachting industry, of course includeclassic regions and producers withhistoric reputation such as certaingrand or premiere crus fromBurgundy and classed growths fromBordeaux*. However this should notexclude other regions and countriesor small interesting producers with astory to tell. It can be a pleasant sur-prise for a guest to discovera list of carefully selected wines not only focused on large scaleproducers but a small family runbiodynamic or organic producer withuncompromised vision for quality andauthenticity. An unknown wine thatjust has received high scores fromRobert Parker or Wine Spectator* isanother excellent addition to theselection.

Trends can be another topic to thinkabout when creating a wine list, for

example the consumption of rosé isincreasing every year and it would berecommendable to offer at least a fewof different ones. The selection canconsist of one oaked version and onenon oaked or from two or three diffe-rent regions or countries. There is litt-le point in having them all the samestyle from the same region. The rosétrend has also spread to Champagneand the sparkling wine section wouldinclude a Brut non vintage, a roséChampagne and a PrestigeChampagne for special occasions,such as Dom Perignon, Cristal orKrug. Pinot Grigio is another wineincreasing in popularity and there isan unlimited choice (given some time)of Pinot Grigios other than SantaMargaritha.

*Bordeaux & Burgundy In 1855, the government requested a classification system for France's best Bordeaux wines which wereto be on display in the world exhibition in Paris. Brokers from the wine industry ranked the wines accor-ding trading price at the time, which at that time was directly related to quality. The result was theBordeaux Wine Official Classification of 1855. The wines were classified into 5 different categories, fromfirst to fifth growth (first growth being the best). Famous names such as Chateau Lafite and ChateauLatour are examples of first growths.The classification system in Burgundy is different from the one in Bordeaux; the classification does notbelong to the producer but is a geographical rating. In other words, there are many producers makingwine from any given Premiere or Grand Cru (Grand cru being the top and most expensive).

This is the classic wayto organize a wine list, it is very clearand makes it easy for the client tonavigate. Depending on the size ofthe wine list one can either have allwines grouped under such a headingor add sub-headings in each catego-ry for different countries; Frenchreds, Italian whites and so on. It isvery important to state vintage, pro-ducer and area, to just put PulignyMontrachet or Brunello diMontalchino and no producer namereally tells the guest that no care hasbeen taken while choosing the wines.Additional information that can bevery helpful for a guest and also tothe crew includes grape varietiesused and even short tasting notes.

Although wine might seem like a com-plex subject including classifica-tionsystems, different wine making tech-

niques, vintage variations, differentgrape varieties and much more, it isimportant to remember that wine isessentially made to be enjoyed withfood. In other words, food and winepairing is something that should beconsidered when creating a wine list.If the list is for a charter boat then it isdifficult to foresee food preferencesand the wine list should be fairly clas-sic but if it is for an owner whom forexample prefers Asian inspired food itwould be a good idea to have some offdry, rich and ripe wines at offer (forexample from Alsace or Austria). Thisis due to the fact that hot and spicyfood needs to be matched with a slightsweetness to create a balanced com-bination. Other guide lines to keep inmind is to serve high acidic wines withhigh acid food, full flavoured food withfull flavoured wines, avoid fish and redwine (although there are exceptions)and always serve sweet wines withdessert.The dessert wine is a category oftenomitted by many yet it has so much

pleasure to offer. Far too often dinnersare served with great attention spenton wine for entree and main coursebut dessert is often left with what everis left over from the main course. Andif you think about it, a lemon cake witha full bodied red wine is far from anenjoyable combination. There is noneed to spend a fortune on dessertwines (though top wines fromSauternes are indeed pricy), there areregions in the world offering worldclass dessert wines at great value.Tokaij from eastern Hungary is such aplace, the wines are made in prettymuch the same way as in Sauternesand they can be intensely sweet yetfresh and elegant. Muscato dÁsti isanother sparkling dessert wine whichoften comes under 10,00¤ a bottle andis an absolutely fabulous match withany fruit dessert.

So, how can one go about to improveones wine list? When it comes toyachts, storage is of course a mainissue and it is not really possible tocompare a boats´ wine list to, let’s saya top class restaurant. Given the shor-tage of space the selection of winesbecomes even more crucial and ayacht should aim to have vintagesready for consumption, not stock toomuch of the same wine but enough tocover a couple of meals and combineclassic traditional wines with some

inventive and different ideas. Anotherissue for many yachts is left overbottles from past owners or charterguests, creating a very vast selectionof one or two bottles of each wine; thisis very confusing and hard to workwith. If this is the case it can be a goodidea to propose a sort of “wine tastingdinner”; ask the chef to create seve-ral smaller dishes and serve a dif-ferent wine with each course.To decide what wine goesbest with what dish asmall tasting with thechef in the galley canbe a good idea. A pre dinner infor-mative wine tas-ting can also bea solution toget rid ofwines youhave one ortwo bottlesof. Advice canindeed beneeded whenplanning awine list and weare here to helpyou.

The “raison d’être” of food and wine pairing is to enhan-ce the gastronomic experience of a meal, be it a lunch onthe beach or an exclusive dinner on the aft deck. The most important factor when pairing wine and food ispersonal preference. Most people prefer a powerful redwine with steak and white wine with smoked salmon, butthere is nothing wrong with drinking a powerful redBarolo with salmon if that is what you enjoy. Besidespersonal preference there are a number of guidelines tofollow to find the best pairings and to avoid some badmatches. A few years ago, when asking a sommelier or anothertrade professional for recommendations in terms of foodand wine these would mostly be based on classic com-binations considering aspects such as weight of the foodand wine, acidity, sweetness, flavor intensity and fat.Lately however, there is a slightly different and moremodern view focusing on four key components, sweet-ness, umami (a savory taste and distinct from the otherprimary tastes), acid and salt to achieve the bestparings. As you might understand there is much to besaid about this topic but I will do my best to give a shortoverview. Initially the more classic guidelines will beexplained followed by the more modern viewpoint.

STAY LOCAL

Many wines, especially in the old world,have been made to suit local cuisine. Ifin doubt about what to serve, a localwine can be a good place to start forlocal cuisine. For example, muchItalian food is based on tomato andgarlic; both very high in acid and themajority of Italian wines are also highin acid and are therefore often a goodmatch. Another example is goat chee-se and Sauvignon Blanc, Sancerre andPouilly Fumé (both made of SauvignonBlanc) are perfect matches for goatcheese which is produced in thisregion. Other examples are boeufbourginon and red Burgundy, oystersand Muscadet and truffles and Barolo.

WEIGHT

An important consideration is weight;a light bodied wine is suitable for a lightweight food. If for example, if one wereto serve a full bodied creamyChardonnay to accompany a lightsalad, the wine would be overpoweringand the salad tasteless. The goal offood and wine pairing is to have thewine and food co-exist and allow eachto express its character without beingdominated by the other. A better sug-gestion for a light salad would be a fre-sher and crisper wine such as a PinotGrigio or a Sauvignon Blanc. On theother hand a heavy weight food, suchas a mushroom risotto would overpo-wer a light bodied wine and then theoaky creamy Chardonnay would be agood choice.

FLAVOUR INTENSITY

Flavour is another important aspect. Afull flavoured wine will overpower a

very mild dish and vice versa. The rea-son why a Barossa Shiraz (full in bothflavour and body) is a great match forBBQ meat is that both wine and foodare full flavoured and spicy. A lighterred wine like Beaujoulais on the otherhand would not be able to competewith the intense spiciness of the BBQflavours. A classic rule that also wouldfit under this heading is white meatwith white wine (or light red) and redmeat with red wine.

ACIDITY

To pair acidic food with wine, the wineneeds equal or higher acidity thanfound in the food to create balance.Gambas with a lime dressing forexample would go well with crispwines such as Chablis, SauvignonBlancs, Chenin Blancs or Rieslingswhich are naturally high in acidity. Alow acid wine would taste very neutraland flat due to the high acid of the limedressing.

SWEETNESS

How nice is it to eat a lemon tart fordessert together with the red wine leftover from the main course? Both thedessert and the wine goes to waste inmy opinion. Sweet food needs sweetwine, otherwise the wine will tastesour and the dessert will not show itsfull potential. The wine should be atleast as sweet if not sweeter than thedessert. Great combinations are forexample, Chocolate desserts and redPort (or the French dessert wines fromBanuls and Maury). Fruit dessertsbenefit from a fruiter white wine such aMuscats. Muscat de Beaume de Veniseis a nice fresh suggestion.

FAT

Although I mentioned that weighty foodshould have full bodied wines, fat foodscan be different. Sometimes it is betterto have a counter balancing high acidwine to create the best match. Smokedsalmon for example, is heavy and fairlyfat and yet a perfect combination isChampagne or Chablis. The naturallyhigh acid in these wines will cutthrough the fat and make the mealseem lighter and more refreshing.

RED WINE WITH FISH

Generally speaking is NOT recommen-ded, and if you don´t know what youare doing or have not tried the combi-nation before, I recommend choosing awhite wine. Red wines contain tannins,and these tannins, in combination withcertain fish (rich in umami) create ametallic and bitter taste which can bequite unpleasant. As always though,with wine there are of course excep-tions; reds that do work well with mea-tier fish are low in tannins and fairlylight on body such as Beaujolais or redSancerre.

HOT SPICE

In my opinion this is the most tricky foodto match with wine but sensitivity forchilli heat varies greatly from one personto another so this guideline is verydependent on personal preference. Forme, the best matches are with off-dry tomedium sweet white wines from Alsace(Pinot Gris and Gewurztraminer). Thismakes a lovely match with the exotic spi-ciness and can even soften a hot dish.High acidity should be avoided as shouldtannins since this can make the heateven more intense and hard.

One would think that the above would beenough when it comes to food and wineparing and it indeed goes a long way infinding a good match. However, a pieceon this topic without the latest view-points would be incomplete so here fol-lows an introduction.

The key person and the driving forcebehind this later development is TimHannai, chef and Master of Wine. Hehas conducted extensive research onthe topic the past 20 years and come tothe conclusion that most of what isgenerally considered as a guidelinesuch as red meat with red wine or sea-food with white wine are only myths.According to Tim, any wine with any foodis fine as long as the seasoning is adap-ted accordingly, so called flavour balan-cing. Many chefs around the world arenow adopting this way of thinking andwine education programs have changedtheir syllabus to incorporate the newfindings.

Simply put, there are two components infood that makes the wine taste morebitter and less fruity and these aresweetness and umami and two othercomponents in the food, salt and acid,that will render the wine more fruity,less acid and smoother. To experiencethe first effect you can pair a sweet des-sert with a dry wine and see how thewine changes and loses its fruit androundness, becoming hard and bitter. Ortry some asparagus or smoked salmon(both high in umami) with a dry tannicred wine and you will have similareffect. In other words, umami and sugarin food diminishes the enjoyment of thewine. To experience an enhancing effectof a wine, put lemon or salt on any typeof food and see how the wine becomesmore fruity and round. It is quite surpri-sing to see how smoked salmon and

asparagus is a terrible combination withdry red wine but when lemon and salt isadded the combination actually worksfine.

However, although I agree with theconcept of flavor balancing I can´t helpwondering if past traditions and deeplyrooted guidelines haven´t already for-med our taste. In tasting classes wehave experimented with different dishesand wines and despite the fact that aMargaux (red wine from Bordeaux)tastes fine with perch in a white winesauce as long as the acid and salt levelsare correct it is never a combination Iwould choose in a restaurant. I am alsounder the impression that most peoplereally prefer a crisp white wine whenthey eat fish and a fuller red wine with asteak (even if it is just a programmedconcept by tradition). My guess is thatthe classic guidelines will stay for manyyears to come and the flavor balancingwill serve as a very interesting comple-ment and as a topic to play with in tas-ting classes and experimental restau-rants with experienced chefs and som-meliers.

Finally, pairing wine with people- asmentioned above is perhaps the mostimportant aspect. Wine is made for ourenjoyment and whoever is drinking thewine is of course the ultimate judge of ifa match is good or not. When I startedmy wine drinking career in my lateteens I thought sweet Asti Spumantewas a great match with pasta and ket-chup, which I must say I do not think anylonger! Another example came from aclient of mine whom had served Petrus(a legendary super expensive Bordeauxwine) with Hamburgers to her charterguests and although a highly extrava-gant paring that is a match I wouldn´tsay no to!

Wine is a fragile and delicate drink and if planning to keep it longer than a few months some considera-tion in terms of storage is recommended. This doesn’t need to be an expensive wine fridge or a full tem-perature controlled dark wine cellar, but it does require some thought.The greatest enemies of wine are heat and light. This is why many wine bottles are made of dark glass soas to minimize U.V. exposure. Heavier red wines are less sensitive to heat and light than lighter whites androsé wines. The ideal storage temperature of a wine is between 10-15°c and in a constant manner. Minorchanges due to different seasons are of less importance than regular changes. If not, the wine will matu-re faster and loose some of its complexity and finesse. A wine should also be stored away from vibrations,which is almost impossible on a yacht but perhaps can one avoid putting it near the engine room at least.Wine bottles should always be stored on the side so the cork is in contact with the wine. If leaving a bott-le standing up for too long the cork will harden and fail leading to oxidation of the wine. For yachts, thebest solution to make sure the quality of the wine is intact is to either invest in wine fridges or aiming tobuy ready to drink vintages and to try to plan what is needed for the season as much as possible.

TAX FREE DELIVERIES OF CONSUMABLEGOODS ON YACHTS

Tax free goods destined for consumption during the period of a validcharter contract, are available to commercially registered yachts,employing a permanent crew, providing the yacht leaves the port withinthe 48 hours following delivery of the tax free goods.

n The Order – The contents of the order (as precisely as possibly) and yourdesired delivery date and time, along with at least 2 contact numbers.

n A copy of the Ships’ Papers clearly stating the vessel is commerciallyregistered.

n A copy of the Charter Contract

n A copy of the Crew List

n A “demande d’Avitaillement” or tax free application form, filled out andstamped by the captain of the yacht. (We will provide you with this form)

n TIME! – Please allow at least 48 hours before the delivery of thegoods. Our customs agent will present this information to theCustoms Authorities who will prepare the necessary customs docu-ments at their own speed. The customs may insist on being presentdelivery and have been known to board yachts at this time.

Tax free deliveries can only be done Monday-Friday, 9-12 and 14-17.

There will be a surcharge to cover the cost of our customs agent’s time.

It is forbidden to consume goods bought under tax free conditions along-side, and we cannot deliver tax free goods to static charters. It is also for-bidden to disembark goods purchased under tax free conditions unlesspayment of the local taxes has been paid to the local authorities.

Tax on deliveries cannot be reclaimed retrospectively.

Ulf came to the south of France in 1988. Enjoying the yachting scene he spent 12years on boats before setting up Riviera Yacht Support in 2000. During his years at seahe felt there was a big gap when it came to shore support and high quality service foryachts, hence the business idea. The yachting years gave Ulf an extensive contactnetwork that today make it possible to supply and organize anything a demandingcharter client or owner might wish for. His dedication to service is second to none.

Louise has been working in the wine industry for over 15 years. After a sommelier program in Sweden shemoved to France and obtained a position as restaurant manager and guide at one of Provence bestvineyards. In 1998 she entered a wine university for a year to then start her own company organising winetours and tutored tastings. In 2000 she started working for Riviera Yacht Support as wine consultant todevelop the wine sales department. Her passion for wine and her wish to pass on her interest made her peruse her wine education with the WSET in London (The Wine and Spirit Education Trust) where she nowholds the Diploma. In 2006 she also became Approved Program Provider for the WSET which means thatwe now deliver some of the internationally recognized sought after qualifications. She has also passed the4 days notoriously difficult Master of Wine exam and is now working on her dissertation (final part of theexamination) and look forward to become a member of the Master of Wine institute in the near future.

After graduating university in Scotland he moved to France to enter the yachtingindustry. He spent several years at sea on large motor yachts before he felt that a shorebased position was more suitable for him. In 2001 he joined Riviera Yacht Support teamto head up the sales division. It would seem Riviera Yacht Support’s passion for wine isinfectious, as he has now moved into the ever expanding wine supply division. Here, heis involved with the sales and the teaching of the WSET wine courses. All this whilestudying for the WSET Diploma in wine and spirits.

Frederique has a long experience in the service industry. For over ten years she ran,together with her husband, a very successful hotel and restaurant in the FrenchAlps. In 2002 she swapped the snow for the yachting industry in Antibes when shestarted working for Agence Combet, a yacht agency dealing with French adminis-tration regarding yachts. In 2006 she was recruited by Riviera Yacht Support for herexpertise in French administration and organisation skills.

Angus is from South Africa and came to the south of France to start working on boats.After a few years at sea he decided to settle down for a while and since early 2009 Angushas been a very valued member of Riviera Yacht Support.
