RED VELVED CUPCAKE Ingredients 110 gm Butter 120 gm Castor sugar 1 ½ tbsp Corn Oil (Mazola) 1 Egg (60g) 1 tbsp Honey 80 gm Self Raising Flour 80 gm Plain Flour 1 tbsp Cocoa powder ¼ tsp Double Action Baking powder 1/8 tsp Salt 1 tsp Vanilla ess ½ tsp Red Colour 12 paper cups *Sour Cream -60 gm Milk Liquid -60 gm Whipping Cream -3/4 tsp Distilled vinegar *mixed together METHOD -Beat butter and sugar little at time, add in oil, egg,salt and honey. -Fold in flour and sour cream alternated.** -Add in vanilla and colour. -Pour in paper cups and bake at 145-150⁰c for 30-40 min -Pipe cheese frosting on cooled cupcakes. 1

-60 gm Milk Liquid-60 gm Whipping Cream-3/4 tsp Distilled vinegar*mixed togetherMETHOD-Beat butter and sugar little at time, add in oil, egg,salt and honey.-Fold in flour and sour cream alternated.** -Add in vanilla and colour.-Pour in paper cups and bake at 145-150⁰c for 30-40 min-Pipe cheese frosting on cooled cupcakes.

**FOLDING -plain flr+SRF+cocoa+DAB+salt-----sieve 3x -first add flour and alternated sour cream at last finished up with flour. -add vanilla and add red colour.

ORANGE POPPY SEED CHEESE CAKE

Ingredients

70 gm Milk liquid50 gm Poppy Seed 220 gm Butter230 gm Castor sugar2 tbsp Orange Rind (20-22gm)3 Eggs160 gm Self Raising Flr120 gm Plain Flour80 gm Orange juice (40g orange juice + 40 water)

Method

-Soak poppy seed in milk and leave it aside-Beat butter and add sugar gratually, eggs one at time.-Beat in flour and alternately together with the orange juice.*- Pour in a 9”round tin and bake at 155 c for 40-45 min.**-Allowed to cool and cut into 3 layers, sandwich and cover the cake with the frosting.

Beating*- sieve srf+plain flr once. -Beat with handmixer start with flr at last finish with flour.

**Line baking paper and greased it

Frosting

500 gm Phidhalphia Cheese2 tbsp Orange Rind (20-22g)100 gm Icing sugar120 gm Whipping Cream (must cool than can become thicker when beat)

*Sour cream70 gm Whipping cream70 gm Milk liquid¾ tsp Vinegar-mixed together -must prepare first

Method- Beat cheese, sour cream, Orange rind, sugar and whipping cream..Mixed well

CHOCOLATE CHIPS CUP CAKE

Ingredients

135 gm Butter120 gm Castor Sugar1 tsp Vanilla Essence1/8 tsp Salt2 Eggs175 gm Self Raising Flour20 gm Milk Powder¼ tsp Double Action baking pwr (DAB)3 ½ tbsp. Full Cream Milk50 gm Grated Chocolate-chill in freege70 gm Chocolate Chip

Method

-Beat butter, add sugar gratually, and vanilla ess. Add in salt and eggs one at time.

*-Fold in -sieved flour alternately with the milk. -Last fold in grated chocolate and chips. -Spoon into paper cup and bake at 145⁰C for 20-25 min
