Apple Cup Cakes

Ingredients

½ cup /110 g superfine (caster) sugar1 cup / 110g self-rising flour1 stick /110g butter, melted1 apple , peeled and dicedConfectioners’ (icing ) sugar, to decorate

Method

Prep and Cook time : 25 min

1. Heat the oven to 350 degree F . Grease a 12-hole bun tin.

2. Whisk the eggs and sugar together in a bowl until light and fluffy.

3. Gently fold in the flour and butter, followed by the apple.

4. Pour the mixture into the bun tin and bake for 8-10 minutes, until golden brown and a

skewer inserted into one of the cakes comes out clean. Leave in the tins for 10 minutes,

and then place on a wire rack to cool.

5. Sift over a little confectioners (icing) sugar just before serving.
