Recipe for Bacon, Mozzarella and Mushroom Pizza

For the Tomato Sauce
• 1 Tin plum tomatoes
• 3 tbsp olive oil
• 1 garlic clove, finely chopped
• 25g parsley chopped
• 25g basil chopped
• Salt and freshly ground black pepper

1. Preheat the oven to 200C/400F/Gas 6.2. To make the base, in a large bowl mix the flour, water, oil and salt to form a dough.3. Dust your hands with flour and shape the dough into a ball. Roll out on a floured surface into a 20cm round.4. Heat a small frying pan and cook for two minutes on each side.5. To make the tomato sauce, place the tomatoes, olive oil and garlic in a saucepan. 6. Simmer until thick and then stir in the herbs. Season with salt and freshly ground black pepper.7. Spread some of the tomato sauce on the pizza. Sprinkle over the bacon, mushrooms and cheese, and season with salt and freshly ground black pepper.
