If you ever find yourself near exit 109 on Interstate I-95 between the hours of 11:00am-10:00pm on any day of the week, we encourage you to head over to Western Avenue in Augusta and indulge in what we consider to be the epicenter of Maines pizza revolution. Its fun, its fast, its simple, and theyre just getting started!
It all started as an idea in June 2015. Not new to business, but completely new to pizza. Entrepreneur Spenser Ouellette decided to take the industry by the horns, adding a fast casual flare to the way Maine creates pizza. We pressed it, then cheesed it, topped it and perfected it, fusing it all together in our revolutionary 900 degree brick oven. Under three minutes later, Pizza Degree was born!
The fast-casual pizza concept was first introduced to Ouellette while attending a restaurant conference in Las Vegas last fall. After seeing several quick service pizza restaurants on the strip, he soon realized that this was exactly the kind of innovation Maine was missing out on. With his knowledge of the restaurant business as owner of Burger Boy in Caribou, along with family ties to the Augusta area, came Ouellettes decision to bring his own concept to life. He purchased 265 Western Avenue in Augusta and opened franchise-ready Pizza Degree in December of 2015.
Our concept is simple: fast casual pizza, brewed-in-Maine beer, and legendary customer service. Thats it! At Pizza Degree, we recognize that our most important assets are our customers. Knowing this, we put our customers in the drivers seat to a create your own pizza experience. Customers have the freedom to choose from one of our eight signatures pizzas, or work their way down our line of Pizza PIEoneers to create a one-of-a kind concoction that will leave you begging for another to take home!
Although you cant go wrong with pizza and draft beer, we also offer smaller and lighter scale menu items where customers have the choice to create their own salads, pick from one of our signature salads, or choose from our delicious side and dessert options. All of our dough and sauces are made in house daily and from scratch. We also offer gluten friendly crust as an option for those with dietary sensitivities and restrictions.
We are asked daily, What makes you different than the guys down the street? The answer is a simple one. If you go to other pizza establishments, you are going to end up waiting at least 15 minutes for mediocre service and frozen pizza. offering our customers fresh quality products, but doing it quickly, consistently, and on budget. That is the Pizza Degree difference.
At Pizza Degree we do things a bit differently. We focus all of our time interacting with customers and ensuring they receive a unique experience and a quality product. So instead of wasting time counting change and unrolling coins, we decided to change the way Maine pays and remain a cash-free business. Thats right! Pizza Degree only accepts debit and credit cards. Not only does it make for a smoother transaction, its no longer a sanitary issue, and we can ensure the safety of our employees and each one of our guests.
With the reward of operating a successful business comes certain challenges one must overcome to maintain daily operations. One of our biggest challenges we have faced in opening is having our customers better understand the reasons behind the idea of Pizza Degree not accepting cash. We want them know it is not done to inconvenience them. At the end of the day, not accepting cash cuts back on labor costs, improves speed of service, works as a precautionary measure for sanitation, ensures safety and security of our employees and customers and helps protect our investment as a company.
Throughout the entire process from construction to our grand opening everyone in the area has been extremely helpful and supportive. It has been great getting to know the people in the community, and we look forward to getting to know more people every day. The challenges for the most part have been eliminated because of the great staff and support team we have set up behind us.
Jamie Cyr at Performance Foodservice - NorthCenter has been great to work with and has been there every step of the way. Not only does he understand the area, he understands our needs and shares with us a commitment to quality. It is nice to work with a local distributor, one thats knowledgeable and goal oriented for the businesses that support them.
With our first location thriving, we can now set our sights on our second location. As with any new business it is important for us to always look forward. As of now, we are looking to have our second location started as early as July 2016 and start franchising by the fall. Once we make our concept easy to replicate there will be no stopping us. As long as we stay true to our commitment to quality and put our customers first, theres no doubt we will eventually be able to branch outside of Maine and tackle all of New England.

Sizing Up Your Shrimp
Versatile in both size and variety, Empires Treasure Shrimp offer something for everyone. Understanding the size of shrimp is as easy as knowing the count.
The count refers to the number of shrimp per pound. For example, a 13/15 count provides 13 to 15 shrimp per pound. The smaller the number, the larger the shrimp. This means a 13/15 count yields larger individual shrimp than does a 16/20 count.

ROMA LOLIGO PEALEII SQUIDThis product is caught in Rhode Island and then fully cleaned (no fins.) It is
packed to 100% net deglazed weight, which means there is no water added to bring product up to net weight. It consistently outperforms other calamari brands on taste and tenderness. Chefs consistently pick this item in side by side taste tests. This product is popular among operators due to its domestic origin. This particular feature proves to increase sales volume as more of the population chooses to buy American.
ROMA ASIAN LOLIGO SQUID This product is fully cleaned (no fins) and packed to 100% net
deglazed weight, which means there is no water added to bring product up to net weight. It consistently outperforms other calamari brands on taste and tenderness. The quality rivals the Domestic Calamari without the higher cost. It is a great alternative when the chef wants to upgrade quality without paying a much higher price.
LUIGIThe Luigi product is Todarodes squid, (also known as Japanese Flying Squid.) The Luigi label is fully cleaned
with the fins removed. It is also packed to 100% net
deglazed weight, which means no water added to bring product up to net weight. Todarodes squid is slightly wider and thicker than loligo squid, which gives the operator a wide ring for great plate coverage. It is a very tender calamari that out-cuts most of the other Todarodes squid on the market. It is a great value-priced item that can often save the restaurant money without sacrificing quality.
ASSOLUTIAssoluti branded squid is traditionally cleaned calamari with the fins on.
It is priced to compete against the other brands of imported loligo squid found throughout the country. This brand is 100% net weight, with no water or fillers added to bring
product up to net weight. Comparisons often show that using the Assoluti brand will be a much better value than a similar imported Loligo squid.

Roasted Brussels SproutsYield 6 servings1 lb. Brussels Sprouts, halved Vidalia Onion, julienne 4 pieces of thick cut bacon, cut in strips.1 tbsp. Cider vinegar2 tbsp. Course mustard1tbsp olive oil Tbsp. Fresh ThymeSalt / Pepper
Render bacon way. Add Vidalia onion. Cook until onion is translucent and bacon is rendered. Toss Brussels in vinegar, mustard, olive oil, salt and pepper. Place cut side down on a baking sheet and put in a 400 degree oven. Bake for 20-15 min. In a separate sautee pan. Combine roasted Brussels , onion, bacon and fresh thyme in a bowl and toss. Adjust with salt and pepper. Serve.
Whiskey BBQ SauceYield 16 oz2 c ketchup1 c whiskey (your choice) c apple cider vinegar5 tbl brown sugar tbl gr black pepper2 tbl olive oil1 white onion (diced)2 tbl garlic (minced) tbl mustard powder2 tbl lea and perrinsMethod: In a sauce pan over medium high heat add oil, onion and garlic cook for 2-3 minutes. Add vinegar, whiskey, mustard powder, pepper, lea and perrins, ketchup and sugar. Cook for 10-15 minutes over medium heat. Transfer sauce to blender and puree then strain and serve.
Tabasco Smoked Pork Butt
Yield 6-7 lbs1 8-10 lb Allegiance Boston Butt 2 lb tabasco wood chips1 c brown sugar c onion powder c garlic powder3 tbl dry oregano leaves1 c paprika2 tbl chili flakes
Mix all herbs and spices to-gether. Coat the outside of the Pork butt with spice mixture. Refrigerate pork overnight to allow spices to penetrate. Set up smoker with tobasco chips at temp of 200 degrees. Smoke meat for 12-14 hours until a fork can pull pieces of pork off easily( internal temp of 160 degrees).
Broccoli SlawYield 4 c5 broccoli stalks (peeled and julienned 1 carrot (julienne) head red cabbage (julienne)1 tsp kosher salt1 tsp gr black pepper3 tbl raspberry vinegar c extra virgin olive oil1 tbl sugarMethod: heat up a sauce pan with water bring to a boil. Place the broccoli stalks in to the water and boil for 2-3 minutes. Remove broccoli and place in to ice water to cool. Peel then julienne the broccoli stalks. In a large mixing bowl combine, broccoli, cabbage, carrot, salt, pepper, vinegar, sugar and olive oil. Refrigerate overnight then serve.

Mix all spices, sugar and dry herbs together then coat the top of the butt with mixture and refrigerate overnight. Set smoker up using the pecan wood chips for flavor. Set to a temp of 200 degrees. Smoke butt for 12-14 hours until internal temp of 160 degrees. Remove from smoker and shred.
Chipotle Bbq sauceYiled 1 qt3 c orange juice3 c brown sugar1 c pureed chipotle peppers2 c ketchup3 tbl cilantro (minced)2 garlic cloves whole1 white onion (diced) c balsamic vinegar2 tbl olive oil
In a sauce pan over medium high heat add olive oil, garlic and onions cook for 2-3 minutes. Now add vinegar, ketchup, chipotle peppers, orange juice, cilantro and brown sugar. Allow to simmer for 20-30 minutes. Remove from heat and puree in blender then strain and serve.
Pickled Sweet PeppersYield 3c 1 c mini sweet red bell peppers (sliced into rings)1 c mini sweet yellow bell peppers (sliced into rings)1 c mini sweet orange bell peppers (sliced into rings)2 tbl sugar4 tbl rice wine vinegar1 tsp garlic (minced) tsp red chili flakes tsp kosher salt
In a bowl mix all ingredients together and refrigerate over-night then serve.
Allegiance Pork tenderloin sliced and beaten Salt and pepperPineapple salsaBacio cheese - slicedEnchilada sauce
Season the pork and saut. Place a tablespoon of salsa on top of the pork, top with a slice of Bacio. Place the pork under a salamander to melt the cheese. Serve with the Enchilada sauce.
Enchilada Sauce3 cups chicken stock4 Tbs. Hot Chili Powder1 tsp. ground cumin2 heaping tsp. garlic powder 3/4 tsp. salt 1 pinch ground cinnamon1/3 tsp. sugar 5 Tbs. cold water 5 Tbs. white flour
Pineapple salsa1 lb. of fresh pineapple small dice3 jalapeos small diced red onion small dice red peppers small dice2 tbl. Chopped fresh cilantro2 tbl. Lime juiceKosher salt and pepper
Combine all ingredients and let sit for at least 1 hour.
Three 2 oz. portions per serving
Bring the chicken stock to a boil. Whisk in the spices, salt and sugar. Boil for 2-3 minutes. In a bowl whisk together the flour and water. Turn the pot to a simmer and whisk in flour and water mix in a steady stream. Bring back to a boil for 1-2 minutes. Set aside.
3 slabs Allegiance St. Louis style pork ribs 12 oz. ginger, peeled and chopped 3 cloves garlic, peeled 2 tbsp white sugar 2 tbsp peanut or olive oil 4 oz. light soy sauce
Puree the ginger and garlic together in a food processor. Combine with the sugar, oil, soy sauce, vinegar, Thai chili sauce and sesame oil. Marinate the ribs in this mixture for three hours. Roast the ribs in a 375 F. oven with the sauce in a covered pan for about two hours or until tender, making sure to turn and baste them once in awhile.Sprinkle finished ribs with green onion and cilantro.
