elderly may not be able to meet their daily nutritional requirements with a usual diet.

The recipes in this book have been designed to scale up or down, from as few as 10

people to over 100, depending on the capacity of your kitchen. These recipes have been

specifically selected and designed because they are ‘familiar’ tastes. They are favourites

that your residents would have grown up and older with.

These recipes use Australian Standard metric measures: 1 cup = 250mL,

1 tablespoon = 20mL, 1 teaspoon = 5mL. All measurements are level.

These recipes have been carefully designed to be scaled up in 20, 30, 40 lots etc as required.

For a richer, sweetly intense flavour, roast the pumpkin in a hot 170ºC oven for 1 hour to caramalise, before blending.

MEthod

Pre-heat oven to 180°C.

Place pumpkin and garlic cloves on a baking tray and drizzle with oil.

Roast pumpkin and garlic for 25 minutes or until pumpkin is cooked all the way through.

Cook onions until slightly soft with nutmeg, cumin, salt and pepper in a large soup pot.

Add pumpkin and vegetable stock and bring to boil.

Lower to simmer and cook for 20 minutes.

Peel garlic and add to soup.

Add Ensure® Vanilla powder and stir through.

Use stick blender to puree.

Serve with cream and fresh herbs.

Makes 2.5L – Serves 10.

MEthod

Melt butter in soup pot. Add onions and mushrooms and cook until softened.

Add stock and bring to boil. Cover and simmer for 15 minutes.

MEthod

Place bacon into a large soup pot with vegetable oil and cook on medium heat until golden brown. Add onions and celery and stir until softened.

Add carrots, potatoes, corn, bay leaves and stock and simmer gently for 5 minutes, or until vegetables are tender.

Remove from heat and add Ensure® powder, flour and milk together and stir until smooth.

Return to heat and simmer gently for a further 2-3 minutes and remove bay leaves.

Serve sprinkled with parsley.

MEthod

Preheat oven to 200°C.

Heat oil in frying pan over medium-high heat. Add onion and caramelise. Add mince and stir until browned.

Add carrot, celery and capsicum and cook for 3 minutes. Add passata and worcestershire sauce and combine. Reduce heat to medium-low. Cover and simmer for 10 minutes or until vegetables are tender.

Add peas and corn and combine. Set aside.

Cook potato in a pot of water until cooked. Drain and add Ensure® powder, butter, milk and sour cream and mash until smooth.

Spoon mince-mixture into large baking dish and top with mash. Bake for 20 minutes, or until golden brown.

MEthod

Preheat oven to 200°C.

Thoroughly drain spinach, pressing down to extract moisture. Stir in Ensure® powder and nutmeg. Place into base of 10 individual ovenproof dishes.

Using a spoon, make a slight hollow well in the centre of the spinach.

Lightly poach eggs and place onto spinach.

Place milk into a small saucepan with butter and flour. Whisk over a medium heat until smooth and until sauce boils. Simmer for a further 1 minute. Remove from heat and whisk in cheese.

Spoon mixture over eggs and spinach. Sprinkle with combined parmesan cheese and breadcrumbs.

Bake for 12 minutes or until heated through and lightly browned.

Serves 10.

MEthod

Preheat oven to 200°C.

Bake pumpkin for 15 minutes or until soft.

Cook macaroni in boiling water according to pack directions and drain well.

Place milk, butter and flour in a small saucepan. Whisk over a medium heat until smooth, and until sauce boils. Simmer on low heat for a further 1 minute.

Remove from heat and whisk in ⅔ grated tasty cheese (leave remaining cheese for topping) and Ensure® powder. Combine with macaroni and pumpkin and pour into ovenproof dish. Sprinkle with remaining grated cheese and parmesan cheese.

Bake for 20 minutes, or until lightly browned.

Serve with salad.

MEthod

Preheat oven to 180°C.

Bake pumpkin for 15 minutes or until tender.

Heat oil in a large saucepan over medium heat. Cook onion until lightly golden. Add garlic and cook for 1 minute. Add lentils and tinned tomatoes and stir. Cover and bring to boil and cook for 1 minute. Remove from heat and set aside.

Add Ensure® powder to tomato and lentil mix.

Add ricotta, parsley and nutmeg and stir until well combined.

Line base of ovenproof dish with layer of lasagne sheets. Spread tomato and lentil mix and top with fresh spinach and pumpkin. Top with another layer of lasagne sheets.

Add ricotta mix and top with a layer of lasagne sheets.

Spread over remaining tomato and lentil mix and top with remaining spinach and pumpkin and lasagne sheets. Sprinkle with grated cheese and parmesan cheese.

Bake for 45 minutes (20 minutes covered and 25 minutes uncovered).

Serve with garden salad.

MEthodLine base of cake tin with non-stick baking paper. Secure the base back into the pan.

Place biscuits in food processor and process until finely crushed. Add the butter and process until well combined. Transfer to the lined pan. Spread the mixture firmly over the base of the tin. Cover with plastic wrap and place in the fridge for 30 minutes to chill.

Preheat oven to 160°C.

Place the cream cheese, sour cream, sugar and Ensure® powder in food processor (clean after crushing biscuits) and process until smooth. Add the eggs and vanilla essence, and process until well combined.

Finally, add the cream cheese mixture into the cake tin. Bake in oven for 1 hour or until just set in the centre. Turn oven off. Leave the cheesecake in the oven, with the door slightly ajar, until cooled completely (to prevent the cake from cracking). Place in the fridge for 4 hours to chill.

To serve cut into slices and add cream/Greek yoghurt/ice cream and fresh berries.

MEthod

Preheat oven to 150°C.

Place 10 ramekins in a large roasting pan.

Place cream in a medium saucepan. Use a small, sharp knife to scrape the seeds from the vanilla bean into the cream. Add the vanilla pod and Ensure® powder to the cream mixture. Place over medium heat and bring to a simmer (be careful not to boil).

Whisk the egg yolks and caster sugar together in a medium bowl until well combined. Gradually whisk the cream into the egg-yolk mixture until smooth. Remove and discard vanilla pod. Pour evenly among the prepared dishes. Add boiling water into the roasting pan to reach halfway up the sides of the dishes.

Bake in oven for 25-30 minutes or until just set. Remove from oven. Transfer the dishes onto an oven tray and set aside for 30 minutes to cool. Cover with plastic wrap and place in fridge for 4 hours to chill.

Sprinkle the Brûlées evenly with brown sugar. Caramelise with Brûlée gun until golden brown.

Lightly fry bacon in a small pan.

Combine bacon, butter, eggs and milk in a mixing bowl.

MEthod

Preheat oven to 200°C.

Sift flour and Ensure® powder into a bowl. Rub in butter with fingertips. Make a well in the centre of the mixture and pour milk into well. Gently stir until well formed.

Add Greek yoghurt and mix well.

Remove dough onto a lightly floured surface and knead gently until smooth.

Press dough into a 2cm-thick mound. Use a 5cm cookie cutter to cut out scones. Repeat until all dough has been cut. Place scones on baking tray lightly dusted with flour.

Bake for 15 minutes or until lightly golden-brown.

Serve with jam and whipped cream.

Makes 16 scones.
