4 lbs. pork shoulder 1 onion, sliced 4 garlic cloves 1/2 cup canola or olive oil 1/2 cup beer 2 tbsp mustard 2 tsp paprika 2 tsp oregano 1/2 tsp cayenne 1/2 tsp black pepper Combine all ingredients except pork shoulder. Marinate pork shoulder in mixture for 8-24 hours in refrigerator. Remove from fridge 1/2 hour before cooking and salt pork lightly. Grill 3-5 minutes per side and then grill slow and low in foil (with onions from marinade) OR Brown all sides in Dutch oven, deglaze with beer, add marinade (including onions from marinade), and cook slow and low in dutch oven or crock pot
