A S the city enters its second round of stage-three restrictions, the team at FairFeed is more committed than ever to its three-pronged

purpose – to provide well-priced, restaurant-quality and nutritious take-home meals to Melburnians spanning from Yarraville and Essendon through to Box Hill and Frankston; to continue supporting local producers; and to ensure as many displaced hospitality staff as possible are able to find gainful employment through this pandemic.

At the helm of this new community endeavour that has seen orders flying out the doors of its Ripponlea kitchen since March is Tom Jacobson, co-founder and owner of famed burger joint Smoke & Pickles and hot sauce brand Changz Hot Sauce. Joining him is head chef Tori Bicknell, whose impressive CV includes being head chef at Melbourne icon St Ali and executive chef at Rustica Sourdough. The FairFeed crew is also made up of former employees of renowned institutions including Stokehouse, Revolver Upstairs and Bistro Garcon, while the ever-rotating menu includes creations by chefs behind Tulum, Pretty Little and Jungle Boy.

q: Tom, when lockdown restrictions were announced the first time around, why not just

focus on keeping Smoke & Pickles afloat? What sparked the idea of FairFeed?

TOM: My priority was certainly to keep Smoke & Pickles up and running and ensuring that my staff stayed employed. However, within the span of just a few days, hundreds of hospitality workers – ranging from famed head chefs to some of the best front-of-house staff – lost their jobs. Growers, producers and suppliers to food businesses also found themselves without orders. All of a sudden, the industry that I have spent almost half my life in was going up in smoke, and I knew something more could be done here.

We have a very large kitchen here at Smoke & Pickles, and while we produced Changz Hot Sauces as well, there was certainly opportunity to better utilise this space. I had always wanted to be part of a community initiative that would bring more fairness to the hospitality industry, as well as to encourage customers to support local businesses. This was the perfect chance.

q: FairFeed seemed to have popped up almost immediately when the pandemic hit. How easy

was it rallying the troops and finding support to get started?

TOM: The writing was on the wall. The second I heard cities like London, New York and Los Angeles were shutting down, I knew it was just a matter of days before that became a reality here in Melbourne, and so the planning began.

It took us three days to build our website, and with so many employees of the hospitality industry finding

themselves stood down, we banded together so quickly and a team of chefs, drivers and operational staff was created. Tori, our head chef, worked on creating a diverse menu together with our expert team in the kitchen, and we were also incredibly fortunate to have some of Melbourne’s leading food suppliers, such as Premium Food and Hansa Butchery, donate essential components of our recipes to keep costs low.

q: Averaging just $5 to $9 a serve, and with an online menu featuring close to 20 meal options

on any given day, how did you strike that balance between variety, price and quality?

TORI: With the support of so many of Melbourne’s amazing culinary talents who contributed their recipes and expertise, coming up with delicious top-quality dishes was the easy part. That said, we had to bear in mind that each dish had to be easy to transport, suitable for reheating, and kept to our priority of zero waste as much as possible.

FairFeed is all about support and inclusivity, and we reflect that in our menu as well, where we ensure people across all dietary requirements have options to choose from. There are plenty of vegetarian and vegan options, where possible we will create dishes that are free from gluten and/or dairy, and feature a range of cuisines as well. Whether you’re craving a warm and comforting lasagna or mac & cheese, or want to spice things up with a Thai curry or Malaysian rendang, I promise you will be impressed with our menu.

We’ve certainly focused on ensuring prices remain affordable and accessible to everyone, because we know very well how hard the pandemic has affected so many people economically. Our customers also know that their money spent is directly supporting members of our team, including our delivery drivers who receive $10 per delivery.

q: What are some highlights of the FairFeed menu that

keep people coming back?

TORI: Daniel Dobra’s beef goulash is an instant sell-out, as is Dylan Forte’s pine

mushrooms with artichoke and truffled polenta that features mushrooms foraged locally. With the cold weather, our soups, curries and pastas have also become quite the staple for a hugely satisfying feed. And of course, our desserts like Dobra’s blackberry pie and a vegan strawberry and apple crumble for a delicious evening treat.

All our dishes come with easy-to-follow reheating instructions and are suitable for freezing, so we often see people making large orders and keeping their fridges and freezers well-stocked with quick and nutritious meals.

q: What’s next for the FairFeed team?

TOM: We will be launching a new range of hot sauces, called Fairly Hot Sauce, that will help create more work opportunities for the struggling hospitality industry. From bottling and labelling to distributing, the range of hot sauces will specifically help visa-holders who do not qualify for any of the government assistance schemes find employment. We will also be continuing to offer our menu for functions and events once this second round of restrictions is lifted, where signature dishes from our menu can be tailored and adjusted for cocktail-style dining.
